This is a great casserole, it tastes similar to lasagna. You can also top with grated cheese the last 15 minutes of baking if desired, I also like to add in some green bell pepper and dried chili flakes for heat but that is optional.

2 1/2 lbs ground beef
1 medium onion, chopped
1 -2 jalapeno pepper (optional)
2 tablespoons minced fresh garlic (or to taste)
fresh sliced mushrooms, any amount (or use canned, drained)
1 cup grated parmesan cheese, divided (or to taste)
3 (8 ounce) cans tomato sauce
salt and pepper
2 cups grated mozzarella cheese (or to taste)
4 cups medium noodles (use any kind of pasta you desire, 4 cups measured after cooking)
1 cup cottage cheese or 1 cup ricotta cheese
1/2 cup sour cream
2 cups grated mozzarella cheese (optional or to taste) or 2 cups cheddar cheese (optional or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a large lasagna dish.
  • Cook the pasta until only firm-tender; drain (it does not have to measure exactly 4 cups cooked, careful not to overcook the pasta as it will cook more in the oven) drain and transfer to a bowl, toss with a couple tablespoons oil to prevent sticking; set aside.
  • In a skillet, cook ground beef, onion, jalapenos (if using) mushrooms and minced garlic until meat is brown and cooked stir in 1/2 cup Parmesan cheese, tomato sauce salt and pepper, stir until heated through (you can the sauce for up to 45 minutes on low heat).
  • Spread 1/2 meat sauce on bottom of pan.
  • Spread 1/2 noodles on top of sauce.
  • Top noodles with 1 cup mozza cheese.
  • Mix 1 cup cottage cheese with 1/2 cup sour cream and 1/2 cup Parmesan cheese.
  • Spread over mozzeralla cheese.
  • Top with remaining tomato sauce, noodles,and remaining mozza cheese.
  • Sprinkle with remaining 1/2 cup Parmesan cheese.
  • Bake, covered for 20 mins, uncover casserole (at this point you can sprinkle with grated mozzeralla or cheddar cheese if desired).
  • Return to oven to bake for another 10-15 mins, or until bubbly.

3 tablespoons Gold Medal™ all-purpose flour
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
2 cups Progresso™ chicken broth (from 32-oz carton)
4 oz (half of 8-oz package) cream cheese, softened
1 cup shredded sharp Cheddar cheese (4 oz)
4 1/2 cups uncooked bow-tie (farfalle) pasta (12 oz)
2 cups shredded deli rotisserie chicken
1 cup Cascadian Farm™ organic frozen corn (from 10-oz bag)
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (10 oz) Old El Paso™ mild red enchilada sauce
1 1/2 cups crushed tortilla chips (about 6 oz)
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped red onion

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 4-quart saucepan, melt butter over medium heat. Stir in onion, bell pepper, poblano and jalapeño chiles; cook about 6 minutes or until vegetables are softened. Stir in flour and taco seasoning mix; cook and stir 1 minute. Gradually beat in broth with whisk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; stir in cream cheese and Cheddar cheese.
  • Meanwhile, cook pasta as directed on package for minimum cook time. Drain; stir pasta into sauce with chicken, frozen corn and black beans. Pour pasta mixture into baking dish, and pour enchilada sauce over top.
  • Bake 15 minutes. Remove from oven, and sprinkle with tortilla chips. Bake 15 to 20 minutes or until heated through and sauce is bubbling around edges. Let stand 15 minutes before serving. Garnish with cilantro and red onion just before serving.
  • To freeze: Line 13x9-inch (3-quart) glass baking dish with foil, making sure foil is as smooth as possible, as wrinkled foil may get stuck in sauce during freezing process. Leave enough overhang to lift casserole out of dish. Spray foil with cooking spray. Cover and refrigerate sauce 30 to 40 minutes before assembling casserole. Mix sauce with cooked pasta, chicken, frozen corn and beans; spread in lined baking dish (do not add enchilada sauce); cover tightly with another layer of foil. Freeze unbaked casserole about 8 hours or until completely frozen. Transfer frozen casserole to labeled 2-gallon resealable freezer plastic bag. Remove air; seal and freeze up to three months. To bake: Remove foil, and transfer to 13x9-inch (3-quart) glass baking dish sprayed with cooking spray. Cover and thaw in refrigerator until completely thawed, at least 48 hours. Heat oven to 350°F. Remove cover, and top with enchilada sauce. Bake 20 minutes; top with crushed tortilla chips. Bake 25 to 30 minutes or until heated through and bubbly around edges (165°F in center). Let stand 15 minutes. Top with cilantro and red onion just before serving.

1 (12 ounce) package medium seashell pasta
1 (10 ounce) package frozen chopped spinach, thawed
2 eggs
¼ cup olive oil
½ cup bread crumbs
1 ½ (26 ounce) jars tomato basil pasta sauce
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Bring 1/2 cup water to a boil in a saucepan, and cook the spinach 4 to 6 minutes, until tender.
  • Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and bread crumbs.
  • Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. Layer with remaining pasta mixture, and top with remaining sauce. Sprinkle with the rest of the Cheddar and mozzarella cheeses.
  • Bake 45 minutes in the preheated oven, or until bubbly and lightly browned.

I just had to share it! For a healthier casserole, I use whole wheat pasta, turkey smoked sausage, 98% fat free soup and low fat cheese.

1/2 cup mozzarella cheese, shredded, divided
1/2 cup cheddar cheese, shredded, divided

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, brown sausage in a skillet and drain. (I skipped this step since I was using fully cooked turkey smoked sausage and wouldn't have any fat to render).
  • In a large bowl, combine milk and soup.
  • Stir in 1/2 cup onions, 1/4 cup of each cheese, and sausage.
  • Drain pasta and stir into sausage mixture.
  • Transfer to a greased 13 x 9 baking dish.

Steps:

1 (2 lb) box rotini pasta
1 (10 1/2 ounce) can fat-free cream of chicken soup
1 lb Velveeta reduced fat cheese product, cubed
1/4 cup skim milk
1 (10 ounce) package california-blend frozen vegetables (broccoli or cauliflower or carrot mix) or 1 (10 ounce) package your favorite vegetables

Steps:

  • Cook chicken breast (I use my George Foreman Grill cooks them fast and without any added fat).
  • Chop chicken up into small bite-size pieces.
  • Cook Rotini as directed on box.
  • Cook vegetables until tender then drain.
  • In large sauce pan blend together soup, milk and cheese stir until melted.
  • Add in the chicken pasta and vegetables.
  • Pour into Pam sprayed 9x13-inch baking pan.
  • Cover with foil.
  • Bake 35-45 minutes at 350°F.

Steps:

  • Preheat oven to 350°F. Lightly spray a baking dish - I like to use my 7" x 11" rectangle.
  • Fill a large pot with water and bring to a boil. Drop in the bow tie pasta and cook until just barely al dente. Once is it cooked, drain well and give it a quick rinse then set aside.
  • Cut the broccoli florets into smallish bite size pieces. Steam until crisp tender then drain well and set aside.
  • While the pasta and broccoli are cooking, cut the ham or smoked sausage into bite size pieces and set aside.
  • Melt butter in large saucepan over low heat until melted. Whisk in the flour and stirring constantly, cook for about 3 minutes. Whisk the milk in about half at a time. Bring to a high simmer over medium low heat. Stir constantly for about 3 or 4 minutes until it is thickened.
  • Add cheeses slowly and continue to cook over low heat while whisking until all of the cheese has melted and you have a smooth sauce.
  • Add the pasta and meat. Stir gently to coat. Add the steamed broccoli and gently stir to coat.
  • Spoon the pasta mixture into your prepared baking dish. Top with salt and pepper to taste then a thin layer of crushed butter crackers topped with canned onion rings.
  • Bake - uncovered - for about 20 or 25 minutes or until bubbly. Allow it to sit for about 5 minutes before serving.

16 ounces pasta (Rigatoni or Penne or any tube shaped pasta)
52 ounces of your favorite canned tomato sauce (2 x 26 oz cans)
1/8 cup water
1/8 cup half-and-half or 1/8 cup milk
1/4 cup onion, diced
6 hot dogs, sliced or 6 equal amount kielbasa, cut in half and sliced
1/4 cup shredded cheese (e.g cheddar, mixed)
1 tablespoon olive oil
butter
4 slices bread
salt
pepper
basil
oregano
instant broth

Steps:

  • Dice onion and saute in 1 tbs olive oil in a pot, large enough to also boil the pasta inches.
  • Ad uncooked pasta, tomato sauce, water and half and half.
  • Season with salt, pepper, basil, oregano and some instant broth to taste.
  • Cover and bring to a boil. Reduce heat and stir frequently.
  • While pasta and tomato sauce cook, slice hot dogs into 1/4 inch slices and saute in some butter until browned on both sides and ad too the pasta/sauce mix, continue to cook until pasta reaches preferred consistency. If necessary, ad some more liquid (e.g. water, half and half) should pasta absorbs too much sauce.
  • Right before serving, stir in shredded cheese.
  • Serve with buttered slices of bread.
  • The dish should have the overall texture of a baked casserole: thick, the sauce will be mostly absorbed by the pasta. Leftovers heat up great in the micro wave the next day.

1 Tbsp. butter
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1 (2 lb.) chicken breast steamed in steamer bags until cooked through
1 can (10-3/4 oz.) condensed cream of chicken soup
1 can (10-3/4 oz.) condensed cream of mushroom soup
1 cup chicken broth
1 can (10 oz.) diced petite tomatoes, undrained
1 lb. (16 oz.) VELVEETA, cut into 1-inch cubes, divided
12 no boil lasagna noodles

Steps:

  • HEAT oven to 350°F.
  • MELT butter in large skillet on medium heat. Add peppers and onions; cook and stir 5 min. or until crisp-tender. Add chicken, soups, tomatoes and half the VELVEETA; mix well.
  • SPREAD 2 cups chicken mixture onto bottom of 13x9-inch baking dish; cover with 6 lasagna noodles.
  • REPEAT layers ending with chicken mixture. Top with remaining VELVEETA; cover with aluminum foil.Bake for 30 minutes or until heated through. Then remove foil and bake uncovered for the last 8 minutes.

4 cups cooked rotini pasta
1 pkg. (1 lb.) frozen Italian-style vegetable blend, thawed, drained
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
3/4 lb. (12 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

8 ounces dry medium pasta shells, uncooked
PAM® Original No-Stick Cooking Spray
1 pound boneless skinless chicken breasts, cut into bite-size pieces
1/4 teaspoon garlic powder
3/4 cup chopped green bell pepper (3/4 cup = 1 medium bell pepper)
1 can (14.5 oz each) Hunt's® Diced Tomatoes, undrained
1 can (15 oz each) OR 1 carton (14.8 oz) Hunt's® Tomato Sauce
1-1/2 cups shredded Italian blend or mozzarella cheese, divided

Steps:

  • Preheat oven to 375°F. Cook pasta according to package directions, omitting salt. Meanwhile, spray 8x8-inch baking dish with cooking spray; set aside. Spray large skillet with cooking spray; heat over medium-high heat. Add chicken; sprinkle with garlic powder. Cook 2 to 3 minutes; add bell pepper. Cook until pepper is tender and chicken is no longer pink in centers. Stir in undrained tomatoes, tomato sauce, 3/4 cup cheese and cooked pasta. Transfer mixture to prepared dish. Sprinkle with remaining 3/4 cup cheese. Bake 15 minutes or until cheese melts and mixture is bubbly.
