My aunt originally made this hearty casserole for family gatherings, and now I enjoy fixing it for my family any night of the week. What a perfect way to sneak in some garden veggies. -Kate Beckman, Hemet, California

12 ounces uncooked elbow macaroni
2 pounds kielbasa or Polish sausage, halved lengthwise and sliced
1 tablespoon olive oil
2 medium onions, chopped
2 medium zucchini, quartered and sliced
2 medium carrots, grated
1/2 teaspoon minced garlic
1 jar (26 ounces) spaghetti sauce
1 can (14-1/2 ounces) stewed tomatoes
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese
2 cups shredded cheddar cheese
2 cups shredded part-skim mozzarella cheese
2 green onions, chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir until crisp-tender, 5-6 minutes. , Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni., In a small bowl, combine egg and ricotta cheese. In each of 2 greased 13x9-in. baking dishes, layer a fourth of each of the following: macaroni, meat sauce, ricotta mixture, cheddar and mozzarella. Repeat layers. Top with green onions. , Cool 1 casserole; cover and freeze it for up to 2 months. Cover and bake the remaining casserole at 350° for 15 minutes. Uncover; bake until cheese is melted, 15 minutes longer. , Freeze option: Thaw in the refrigerator for 24 hours. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° until heated through, 35-40 minutes.

A quick and easy comfort food dinner. This is not a recipe to serve guests, but on a cold evening when you just want something easy, warm, and filling. Also, the leftovers reheat really well.

1 lb rotini pasta
10 ounces frozen peas, thawed
1 lb kielbasa, cut into 1/2 inch thick slices
2 (10 3/4 ounce) cans condensed cheddar cheese soup
2 3/4 cups whole milk
1 teaspoon hot pepper sauce
1/4 teaspoon black pepper

Steps:

  • Heat oven to 350°F.
  • Cook pasta in a large pot of lightly salted boiling water until al dente, firm but tender. Drain well. Place in a 13x9x2 inch baking dish. Add peas, sprinkling evenly over pasta.
  • Meanwhile, brown kielbasa in a medium size nonstick skillet over medium-high heat 5 to 7 minutes. Add to pasta in baking dish.
  • Whisk together soup, milk, hot pepper sauce, and black pepper in a medium size bowl. Add to baking dish and toss to coat pasta.
  • Bake in heated 350°F oven about 30 minutes or until heated through.

1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
1/2 cup chopped green pepper
1/4 cup chopped onion
1/2 teaspoon minced garlic
2 tablespoons vegetable oil
2 cans (14-1/2 ounces each) stewed tomatoes
1 package (9 ounces) refrigerated angel hair pasta
1/2 cup grated Parmesan cheese
2 tablespoons butter, melted

Steps:

  • In a large skillet, saute the kielbasa, green pepper, onion and garlic in oil until sausage is lightly browned. Stir in tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Meanwhile, cook pasta according to package directions; drain. Stir in Parmesan cheese and butter. Serve with kielbasa mixture.
