3 Hass avocadoes
8 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup finely chopped onion
1/4 cup finely chopped tomatoes
1/2 cup chopped fresh cilantro
1/2 teaspoon rosemary
1 teaspoon garlic powder
1/4 teaspoon cumin
1 tablespoon lime juice
1/4 teaspoon sugar
1/4-1/2 teaspoon salt

Steps:

  • Peel and pit the avocadoes. Place in a mixing bowl and mash w/ the cream cheese.
  • Stir in all remaining ingredients; mix well.
  • For best results, cover and chill at least 4 hours before serving.

This is one of my dad's favorite recipes that he's handed down to my sisters and myself. It's a little different from traditional guacamole dip cause of the cottage cheese, but very delicious! Serve with chips or vegetables.

2 avocados, halved with pits removed
2 tomatoes, diced
1 jalapeno pepper, seeded and minced
½ cup diced sweet onion
1 lemon, juiced
2 cups cottage cheese
½ teaspoon garlic powder
salt and pepper to taste

Steps:

  • Scoop flesh out of the avocado and place it in a medium size mixing bowl. Mash the avocado well. Add lemon juice to the avocado and mix well. Place tomatoes, jalapeno pepper, onion, cottage cheese, garlic powder, salt and pepper into the mixing bowl; stir until the ingredient are combined. Chill for at least one hour before serving.

1 (16 ounce) can refried beans
3 avocados
3 tablespoons fresh lime juice
2 (8 ounce) containers nondairy sour cream
2 tablespoons taco seasoning
1/2 cup diced mild green chili, drained
1/2 cup sliced black olives (or more)
5 tomatoes, chopped
2 cups shredded vegan cheddar cheese

Steps:

  • Preheat the oven to 350 degrees.
  • Spread a layer of refried beans in the bottom of an 8 inch by 8 inch quart glass baking dish.
  • Pit and peel the avocados, and place in a bowl.
  • Mash the avocados together with the lime juice, and spread on top of the refried beans.
  • Stir together the sour cream and taco seasoning, and spread over the avocado.
  • Sprinkle the chiles over the sour cream, and top with a layer of black olives.
  • Add the tomatoes, and sprinkle with the cheese.
  • Heat the dip for 15-30 minutes or until heated through and the cheese is a bit melted.
  • Serve warm or at room temperature.
