CHEESY BBQ MEATLOAF
My kids aren't a fan of regular meatloaf, it tasted bland they say. Soo I turned it up a notch and added BBQ sauce and cheddar cheese! No more complaints!

Steps:
- 1. Preheat the oven to 350°F
- 2. In a skillet, saute the onion until lightly browned, about 5 minutes.
- 3. In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, cheese, eggs, sauteed onion, 1/2 cup of the barbeque sauce, worcestershire sauce, salt, and pepper
- 4. Shape the mixture into a loaf and place in a large 2" deep baking pan. Spread the top of the loaf with the remaining 1/2 cup of barbeque sauce.
- 5. Bake until the loaf is firm, 60 to 75 minutes, or until done. Let the meatloaf stand in the baking dish for 10 minutes, then cut into slices to serve.

- Heat oven to 375ºF.
- Mix ground beef, cracker crumbs, eggs, onions, garlic, pepper and 1/4 cup barbecue sauce just until blended.
- Place meat mixture into 11x8-1/2-inch rectangle on sheet of waxed pepper; top with cheese, ham and bacon, spreading ingredients to within 1-1/2 inches of edges. Roll up tightly, starting at one short side and pulling away waxed paper as meat is rolled. Place, seam side down, on foil-covered rimmed baking sheet.
- Bake 48 to 50 min. or until done (160ºF), brushing with remaining barbecue sauce after 40 min. Remove from oven. Let stand 5 min. before slicing to serve.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
- Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

- Heat oven to 350°F. In large bowl, mix all ingredients except topping. Line ungreased 13x9-inch pan with foil. Shape meatloaf mixture into 9x5-inch loaf on foil in pan. In small bowl, mix all topping ingredients; spread over top and sides of loaf.
- Insert ovenproof meat thermometer so tip is in center of loaf. Bake uncovered 45 to 50 minutes or until meat is no longer pink in center and thermometer reads 165°F. Let stand 5 minutes; remove from pan.

- In a large skillet, saute mushrooms and onion in butter until tender; set aside., In a large bowl, combine the egg, milk, oats, salt and pepper. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 12x8-in. rectangle; spoon mushroom mixture to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seam and ends. Discard foil., Prepare grill for indirect heat, using a drip pan. Form a double thickness of heavy-duty foil (about 14 in. square); cut three slits in foil. Place meat loaf on foil; place on the grill rack over drip pan., Grill, covered, over indirect medium heat for 35 minutes. Combine sauce ingredients; brush over loaf.
