Time 1h35m

Yield 25

Number Of Ingredients 10

2 pounds processed cheese food (such as Velveeta®), cubed
1 teaspoon condensed cream of mushroom soup
½ cup butter, divided
2 onions, chopped
1 green bell pepper, chopped
1 tablespoon minced garlic
3 pounds peeled crawfish tails
1 teaspoon cayenne pepper, or to taste
salt and ground black pepper to taste
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)

Steps:

  • Place the processed cheese and 1 teaspoon of cream of mushroom soup into a slow cooker. Turn the slow cooker to High and set aside.
  • Melt half of the butter in a large skillet over medium heat. Stir in the onion and green pepper; cook and stir until the onion has softened and turned translucent, about 10 minutes. Scrape the onion mixture into a bowl and set aside. Melt the remaining butter in the skillet along with the garlic. Once the garlic begins to sizzle and is aromatic, add the crawfish tails, and season with cayenne pepper, salt and pepper. Cook and stir until the crawfish is hot, then stir into the onion and pepper mixture.
  • Place the crawfish mixture into a food processor, and process until the mixture is finely ground, or to your desired consistency. Stir the crawfish mixture into the slow cooker along with the can of diced tomatoes. Cover, and continue to cook 45 minutes, stirring occasionally. Once hot, set the slow cooker to Low until ready to serve.

CHEESY CRAWFISH DIP

Cheesy Crawfish Dip image

This dip is so full of flavor. Even people who don't like seafood love this dip. It is a favorite in my house for sure! I don't have easy access to fresh crawfish so I just use the frozen ones.

Number Of Ingredients 10

1 c butter (2 sticks)
4 bunches of green onions, chopped
1/4 c fresh parsley, chopped
2 lb peeled crawfish tails (if using frozen crawfish then thaw and rinse before adding)
2 Tbsp all purpose flour
2 egg yolks, beaten
1 12 oz can of evaporated milk
2 lb velveta cheese, cubed
salt and pepper to taste
tabasco sauce to taste

Steps:

  • 1. Melt butter in a large pot over medium heat. Stir in green onions, and cook briefly. Add parsley and crawfish, and simmer about 7 minutes, stirring frequently. Stir in flour.
  • 2. In a small bowl, mix together egg yolks and evaporated milk. Stir into crawfish, and reduce heat to medium-low.
  • 3. Gradually add cheese cubes, stirring continuously until the cheese has melted.
  • 4. Season with salt, pepper, and Tabasco sauce. Remove from heat. Let it stand a little before serving that way it has time to thicken just a bit.
  • 5. You can serve this in a small crock pot or in a nice bowl. I like to use the scoop chips with this dip.
