After making way too much homemade chili, I came up with this recipe to use up the leftovers. I haven't seen this one anywhere else, but it is delicious, easy, cheap, and filling.

2 medium potatoes, peeled and sliced 1/8 ",thick
3 cups of your favorite chili
1 (8 ounce) package cream cheese, cubed
1 can cream of mushroom soup
3 cups sharp cheddar cheese
salt and pepper

Steps:

  • Layer sliced potatoes, chili, cubed cream cheese, cream of mushroom soup, and cheddar cheese in a greased casserole dish.
  • Repeat layers (like lasagna).
  • Bake covered in a 350 degree oven for 1 1/2 hours.
  • Top with additional cheddar cheese and bake uncovered for 10 minutes.
  • Allow casserole to set for 20 minutes and serve.

1 (1 lb) package frozen hash brown potatoes (can be patties)
12 -14 eggs
1/2 cup water
4 ounces diced green chilies
1 1/2 cups mild cheddar cheese, shredded
salt and pepper
salsa
tortilla

Steps:

  • Preheat oven to 350º.
  • Lightly spray a 9 x 13 baking dish with cooking spray.
  • Add hash browns to bottom of dish and sprinkle with salt and pepper. (If the hashbrowns are preseasoned, you can skip this step.).
  • (If you are going to add cooked sausage or bacon, place it on top of the potatoes.).
  • Add 1/2 of the cheese and half of the Chiles on top.
  • In a separate bowl mix the eggs, water and the remaining 1/2 of the Chiles with a wire whisk. Pour over the potatoes and top with the rest of the cheese.
  • Bake at 350 degrees for 45 - 55 minutes. Check the center for doneness by inserting a knife.
  • Serve with salsa and tortillas.
  • Another option would be to heat flour tortillas on a skillet and add a spoonful or two to a tortilla and roll it up for a breakfast burrito.

1 (8 ounce) can tomato sauce
1/4 teaspoon chili powder
1/4 teaspoon cumin

  • Preheat oven to 400°.
  • Cut three 1/2-inch diagonal slits into each hot dog.
  • Cut cheese into 36 strips.
  • Insert a cheese strip in each slit of hot dogs.
  • In a ungreased 11-1/2 x 7 1/2 baking dish mix beans, tomato sauce and seasonings.
  • Place the hot dogs over the bean mixture.

2 lb lean ground beef
1/2 c chopped red onion
2 (8 ounce) cans tomato sauce
1 (14 ounce) whole kernel corn,drained
1 (1.25 ounce) package taco seasoning mix
1 (1.25 ounce) package chili seasoning
1 (10.75 ounce) can condensed cheddar cheese soup
3/4 c milk
2 c shredded cheddar cheese,divided
1/2 c sour cream
1 1/2 tsp garlic powder
1/2 tsp sodium-free salt
1/2 tsp black pepper
1 c crushed tortilla chips
1/2 c sour cream (optional)

Steps:

  • 1. Preheat oven to 350 degrees F. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.Once the water is boiling,stir in the macaroni,and return to a boil.Cook the pasta uncovered,stirring occasionally,until the pasta has cooked through,but is still firm to the bite,about 8 minutes.Drain well in a colander set in the sink.
  • 2.   • Lightly spray a 1 1/2 quart casserole dish with no-stick spray; set aside.
  • Wearing disposable gloves, slit the chili pepers in half lengthwise. Remove and discard the seeds; rinse and drain the pepers on several paper towels. Salt the chili peppers.
  • In a medium mixing bowl, beat together the milk, egg whites, Tabasco sauce, and flour until smooth. Set aside.

2 1/2 cups water
1 lb lean (at least 80%) ground beef
1/2 cup chopped onion
1 small green bell pepper, seeded and diced
2 cloves garlic, finely chopped
1/2 cup water
1 can (28 oz) diced tomatoes
1 can (15 oz) Progresso™ dark red kidney beans, drained, rinsed
1 cup (4 oz) cubed Mexican prepared cheese product with jalapeño peppers (from a loaf)
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
3 tablespoons chopped fresh cilantro
Tortilla chips, as desired

Steps:

  • Cook rice as directed on package, using 2 1/2 cups water.
  • In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain.
