My Chicken Mac and Cheese is perfectly saucy, made with both stretchy mozzarella and sharp cheddar. It's the comfort meal you've been craving! Try is straight out of the pot, or follow my easy additional instructions to bake it.

Number Of Ingredients 13

8 ounce elbow macaroni (or penne, rigatoni, ziti)
2 tablespoon olive oil
1 pound chicken breasts (skinless and boneless, cut in small pieces)
1 medium onion (chopped)
2 cloves garlic (minced)
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
3 tablespoon all-purpose flour
2 cups milk
1 teaspoon dried mustard
1 cup mozzarella cheese (shredded)
2 cups cheddar cheese (shredded)
1/4 cup Parmesan cheese (grated)

Steps:

  • Cook pasta according to package instructions. Drain and rinse with cold water to keep the pasta from sticking together. Set aside.
  • Heat the olive oil in a large skillet. Add the chicken and cook for 5 to 7 minutes until no longer pink and cooked through. Transfer the chicken to a plate.
  • In the same skillet add the onions and cook for 3 to 5 minutes until softened and translucent. Add the garlic and cook for 30 seconds until aromatic. Season with salt and pepper to taste.
  • Sprinkle the flour over the onion mixture and stir. Cook for another minute. Whisk in the milk and dried mustard. Add the mozzarella, cheddar cheese and stir it in. Continue to cook until the cheese has melted.
  • Add the chicken and pasta to the skillet and stir everything together. Taste for seasoning and adjust as necessary with salt and pepper if needed.
  • Serve garnished with freshly grated Parmesan cheese.

1½ cups elbow macaroni
1 tablespoon butter
1/4 cup finely chopped onions
10.5 ounces cream of chicken soup
1/2 cup milk
Generous dash of pepper
1½ cups shredded cheddar cheese (divided)
12.5 ounces canned chunk chicken (drained)

Steps:

  • Preheat your oven to 350 degrees.
  • Cook macaroni according to package directions. Drain once done.
  • In a 2-quart saucepan, melt margarine and cook onion until soft.
  • Stir in soup, milk, and pepper until smooth.
  • Add drained macaroni, 1 cup cheese, and chicken and mix well.
  • Pour mixture into a 7x11 quart casserole dish.
  • Bake at 350 degrees for 20-30 minutes.
  • Remove the casserole from the oven and top with 1/2 cup shredded cheese.
  • Bake for 2-3 minutes more until the cheese melts.

1/2 sweet onion, chopped

3 cups shell noodles (uncooked )
3 tablespoons butter
⅓ cup red bell pepper (diced)
1 onion (finely diced)
½ teaspoon seasoning salt
1 teaspoon chili powder
10 ¾ ounces cream of chicken soup (condensed)
1 ⅓ cups milk
3 cups sharp cheddar cheese (shredded, divided)
⅓ cup parmesan cheese (shredded)
4 ounces mild green chiles
3 cups cooked chicken

Steps:

  • Heat oven to 375°F.
  • Cook shells al dente according to package directions.
  • Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.

2 (10 3/4 ounce) cans cream of chicken soup

1/4 cup all-purpose flour
2 cups half-and-half cream
1-1/2 to 2 cups chicken broth, divided
3/4 pound Velveeta, cubed
2 packages (7 ounces each) uncooked elbow macaroni, cooked and drained
3 cups cubed cooked chicken
1 jar (2 ounces) diced pimientos, drained
1 teaspoon salt

Snipped fresh parsley, optional
