3 cups bite-sized cauliflower florets
1 egg
½ tablespoon all-purpose flour
½ cup milk
salt and ground black pepper to taste
2 cups shredded sharp Cheddar cheese
1 pinch ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  • Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
  • Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
  • Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.

1 cup cubed fully cooked lean ham

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Steps:

  • Chop the head of cauliflower into florets.
  • Bring a medium pot of water to boil over medium-high heat. Add a pinch of salt and the cauliflower and boil for 15 minutes, or until the cauliflower is soft.
  • Drain the cauliflower, then return to the pot.
  • Add the butter, salt, and milk to the cauliflower.
  • Mash the ingredients together until most of the milk is absorbed and the texture is creamy.

1 (10 ounce) can low-sodium cream of mushroom soup
2 skinless, boneless chicken breasts, cubed
2 (10 ounce) packages frozen cauliflower and broccoli mix
2 tablespoons butter
1 ½ cups milk
¾ teaspoon salt
3 tablespoons all-purpose flour
1 ½ cups shredded Cheddar cheese, or more to taste
1 pinch garlic powder, or to taste
½ cup seasoned bread crumbs, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine 1/2 the mushroom soup and an equal amount of water in a saucepan over medium heat. Add chicken. Bring to a simmer and cook until chicken is no longer pink in the center, 3 to 5 minutes.
  • Heat 1 frozen, unopened bag of cauliflower and broccoli mix in the microwave until hot, 4 to 6 minutes. Let stand about 2 minutes; open bag and transfer vegetables to a bowl. Repeat with remaining bag.

4 thin slices bacon, cut into small bits
1 white onion, finely diced
1 head cauliflower, broken into small florets
1/2 teaspoon Cajun spice, or more to taste
Kosher salt and freshly ground black pepper
8 cups (2 quarts) low-sodium chicken broth
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
2 cups whole milk
1 cup half-and-half
3 cups grated Monterey Jack cheese, plus more for serving
1/4 cup sour cream
2 tablespoons minced fresh parsley, plus more for serving

Steps:

  • In a large pot, fry the bacon pieces over medium-high heat until crisp. Drain the bacon on a paper towel and set aside. Pour off the grease and return the pot to the stove.
  • Add the onions to the pot and cook over medium-high heat for 3 to 4 minutes. Add the cauliflower, sprinkle with the Cajun spice and 1/2 teaspoon black pepper and cook, stirring, until the cauliflower starts turning golden brown, another 3 to 4 minutes. Stir in the chicken broth, bring to a boil, reduce the heat to a simmer and cook for 15 minutes.
  • Use an immersion blender to puree the mixture slightly, or all the way if you prefer. (Or use a regular blender; just don't fill too full.)
  • In a separate saucepan or skillet, melt the butter. Sprinkle in the flour and whisk to form a paste. Pour in the milk, then continue cooking until it thickens. Remove from the heat and stir in the half-and-half.
  • Pour the white sauce into the soup. Turn the heat to medium high and bring back to a boil for 3 to 5 minutes. Reduce the heat to low, stirring in the cheese and sour cream until the cheese is fully melted. Stir in the parsley.
  • Taste and adjust the seasoning. Serve with a little extra cheese, a sprinkle of bacon and a sprinkle of parsley.

  • Preheat the oven to 425 degrees F (220 degrees C).

3 slices bacon
nonstick cooking spray
1 medium head cauliflower, cut into florets
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground turmeric
1 (10.75 ounce) can cream of chicken soup (such as Campbell's®)
½ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese
1 scallion, green part only, thinly sliced

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Once cool enough to touch, crumble and divide into thirds.
  • Spray the inside of a slow cooker with cooking spray.
  • Place cauliflower into the slow cooker and pour chicken broth on top. Season with salt, pepper, and turmeric.
  • Combine cream of chicken soup, mozzarella cheese, and Cheddar cheese in a bowl. Pour over cauliflower mixture.

2 large head broccoli (about 3 to 3 1/2 pounds total)
1 medium head cauliflower (about 2 pounds)
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 3/4 cups milk
2 cups shredded sharp cheddar cheese
1 tablespoon Dijon mustard
1 (4 1/4 ounce) can diced green chilies, drained (to taste, I use 1/3 can)
1/4 teaspoon hot pepper sauce
1/8 teaspoon salt
additional milk, if needed, to thin sauce

Steps:

  • Cut broccoli and cauliflower into florets, discarding outer leaves and stems.
  • You should have about 8 cups broccoli florets and 4 cups cauliflower.
  • In a large pot, bring 8 cups of lightly salted water to a boil.
  • Add cauliflower; cook 2 minutes.
  • Add broccoli; cook an additional 6 minutes or until vegetables are crisp tender. Drain.
  • While vegetables are cooking, make Cheese Sauce:.
  • In a medium-size saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
  • Gradually whisk in the milk; continue to whisk until smooth. Bring to a boil.
  • Remove from heat and stir in cheese, mustard, chiles, hot-pepper sauce and salt.
  • Stir until smooth. If a thinner sauce is desired, stir in a few more tablespoons of milk.
  • To serve, place vegetables in large serving dish and pour cheese sauce over the top. Serve immediately.
  • Do Ahead: Cook vegetables, rinse under cold water to stop cooking. Drain and refrigerate. Prepare sauce; let cool, then cover and refrigerate up to a day ahead.

3 cups fresh broccoli florets
3 cups fresh cauliflower florets
3 celery ribs, sliced
1 small vidalia onion, chopped fine
2 cups water (or vegetable stock is fine too)
3 tablespoons butter
3 tablespoons flour
2 1/3 cups milk
1 lb process cheese, cubed (Velveeta)

Steps:

  • In a large saucepan, combine the broccoli, cauliflower, celery, onion, and water (or veggie) stock.
  • Bring to a boil then reduce heat and cover to simmer for 10-12 minutes or until vegetables are tender.
  • While vegetables are simmering, in a small saucepan, melt butter.
  • Stir the flour into the butter until smooth.
  • Gradually stir in milk to the flour mixture and bring this to a boil then cook and stir for 2 minutes or until thickened.
  • Reduce heat to the milk mixture and add the cheese then cook and stir until cheese is melted.
  • Drain vegetables and place back into their saucepan.
  • Add cheese sauce to the vegetables and heat through.

Add ham, broccoli, and cauliflower sauce; toss to combine. Transfer to a ovenproof 3 1/2-quart baking dish. Sprinkle with remaining pecorino, and bake until bubbling in center, about 30 minutes. Heat broiler, and broil until golden brown on top, 1 to 2 minutes. Let cool for 5 minutes. Divide among dishes, top with breadcrumbs, and serve immediately.

1 medium head cauliflower, cut into 1-inch florets (about 6 cups)
1/2 cup shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
1 large egg
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon pepper
Marinara sauce, optional

Steps:

  • Preheat oven to 425°. Process cauliflower in batches in a food processor until finely ground. Microwave, covered, in a microwave-safe bowl on high until tender, about 8 minutes. When cauliflower is cool enough to handle, wrap in a clean kitchen towel and squeeze dry. Return to bowl., Meanwhile, in another bowl, mix cheeses together. Stir half of cheese mixture into cauliflower, reserving remainder. Combine next 6 ingredients; stir into cauliflower., On a baking sheet lined with parchment, shape cauliflower mixture into an 11x9-in. rectangle. Bake until edges are golden brown, 20-25 minutes. Top with reserved cheese; bake until melted and bubbly, 10-12 minutes. Cut into 12 breadsticks. If desired, serve with marinara sauce.

1 head cauliflower, separated into florets
1 cup sour cream
1 cup shredded Cheddar cheese
½ cup crushed corn flakes
¼ cup finely chopped green bell pepper
¼ cup finely chopped red bell pepper
1 teaspoon salt
¼ cup grated Parmesan cheese
1 pinch paprika

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish.
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, and steam until crisp-tender, about 5 minutes. Drain, and set aside.
  • Combine sour cream, Cheddar cheese, corn flakes, bell peppers, and salt in a medium bowl. Stir in the cauliflower, and transfer to the prepared baking dish. Sprinkle Parmesan cheese and paprika over the top of the dish.
  • Bake uncovered until heated through, 30 to 35 minutes.

1 cup frozen sliced carrots
3 tablespoons dried minced onion
1 tablespoon chicken bouillon granules
2-1/4 cups water, divided
2 cups 2% milk
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1/2 teaspoon garlic powder
1/8 teaspoon ground nutmeg
4 teaspoons cornstarch
1 cup shredded cheddar cheese

Steps:

  • In a large saucepan, combine the vegetables, onion, bouillon and 2 cups water. Bring to a boil. Reduce heat; cover and simmer for 4-6 minutes or until vegetables are tender., Stir in the milk, soup, garlic powder and nutmeg. 4 tablespoons salted butter
1 large onion, diced
2 stalks celery, diced
2 cloves garlic, minced
3 medium potatoes, peeled and cubed
3 tablespoons minced fresh parsley
8 cups chicken broth
1 large head cauliflower, cored and cut into small florets
1 tablespoon chopped fresh thyme
2 cups 2% milk
½ cup half-and-half
¼ cup sour cream
1 ½ cups shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Melt butter in a large soup pot over medium heat. Add onion, celery, and garlic; saute until soft, about 3 minutes. Add potatoes and parsley, then pour in chicken broth. Add cauliflower and thyme; bring to a boil.
  • Reduce heat to low, cover, and simmer until cauliflower and potatoes are tender, about 45 minutes. Remove from the stove and let cool for 15 minutes.
