This is one of those old-timey recipes that's been handed down and adapted from my grandma, to my mom, to me. It's a simple hamburger-type casserole dish that's easy and satisfying.

1 pound extra-lean ground beef
1 (15 ounce) can cut green beans, drained
⅓ cup diced white onion
¼ cup chopped green bell pepper
1 (8 ounce) can tomato sauce
½ pinch garlic salt
1 (8 ounce) package refrigerated crescent rolls
1 (8 ounce) package shredded Monterey Jack cheese
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add green beans, onion, and bell pepper. Cook until onion is tender, about 5 minutes; drain well and return to the skillet. Pour in tomato sauce and garlic powder and mix until well combined. Set aside.
  • Press the crescent roll dough into the bottom and sides of an 8-inch pie plate to form an even crust.
  • Combine Monterey Jack cheese and egg in a bowl. Spread 1/2 of the cheese mixture into the bottom of the crust. Top with all of the beef mixture. Finish with remaining cheese mixture.
  • Bake in the preheated oven until egg is set and cheese is melted, 20 to 25 minutes. Serve hot.

In this taco pie, a crescent roll crust is topped with a mixture of crushed tortilla chips, ground beef, tomatoes, sour cream, and loads of glorious cheese! It's the ultimate Mexican comfort food!

1 pound lean ground beef (I used 85% lean)
one 1-ounce packet taco seasoning*
one 14.5-ounce can petite diced tomatoes*
one 8-ounce tube crescent rolls
3/4 cup crushed corn tortilla chips + 1/2 cup crushed corn tortilla chips
12 ounces (1 1/2 cups) sour cream (I used lite)
about 6 ounces shredded Mexican cheese blend, or your favorite cheese
2 tablespoons fresh cilantro, finely chopped for garnishing

Steps:

  • Preheat oven to 350F. Spray a 9-inch pie dish with cooking spray, set aside.
  • To a large skillet, add the ground beef and cook over medium-high heat until browned, about 5 minutes. Break up the beef and stir intermittently so it cooks evenly.
  • Add the taco seasoning (do not add water like the packet calls for), tomatoes and the juice, turn the heat to low, stir to combine, and allow the mixture to simmer for about 5 minutes.
  • While mixture simmers, unroll the crescent rolls, and add them to the pie dish in an even flat layer so there's complete coverage at the base and up the sides. As necessary, stretch and smoosh the dough together to patch in holes. It will expand and bake togteher in the oven so it's okay if it's not perfect.
  • Evenly sprinkle 3/4 cup tortilla chips over the base of the pie dish.
  • Turn out the beef mixture into the pie dish.
  • Add the sour cream and spread evenly with a spatula, leaving a 1/2-inch bare margin at the perimeter.
  • Evenly sprinkle 1/2 cup tortilla chips.
  • Evenly sprinkle the cheese.
  • Place pie dish on a baking sheet (insurance against cheesy overflow in oven) and bake for about 35 to 40 minutes, or until cheese has melted and is as lightly golden browned as desired. Start checking at 25 to 30 minutes because all ovens and ingredients vary.
  • Evenly sprinkle with cilantro and serve immediately. Dish is best warm and fresh but will keep airtight in the fridge for up to 5 days or in the freezer for up to 2 months.

MEAT MIXTURE
2 lb lean ground beef
1 medium onion, chopped
1 clove garlic, finely chopped
1 jar(s) spaghetti sauce (I like Hunt's Zesty & Spicy), 24 oz.
CHEESE LAYER
1 c ricotta cheese
2 c mozzarella cheese, shredded
1 c Parmesan cheese, freshly grated
1/2 c cheddar cheese, shredded
TOPPING
2 can(s) refrigerated crescent rolls
3 Tbsp butter
1 clove garlic, finely chopped
1/2 c Parmesan cheese, freshly grated

Steps:

  • 1. Preheat oven to 375.
  • 2. In a large skillet, add ground beef, chopped onion and 1 clove of garlic, finely chopped. Brown ground beef on medium heat. Drain grease. Return browned ground beef to large skillet.
  • 3. Add jar of spaghetti sauce, stir well.
  • 4. Simmer on low for 2-3 minutes.
  • 5. Grease a 13x9 pan, add ground beef and spaghetti sauce mixture to bottom of pan. Spread evenly.
  • 6. In a separate bowl, combine ricotta cheese, shredded mozzarella, and grated Parmesan. Mix well.
  • 7. Spread evenly on top of ground beef mixture.
  • 8. Sprinkle cheddar cheese on top.
  • 9. Align evenly 1.5 - 2 cans of crescent rolls (depending on your preference) on top of cheese mixture. Crescent triangles will rise evenly to create a crust on top while baking.
  • 10. In a small saucepan, melt butter and garlic. Saute on medium heat for 3-4 minutes.
  • 11. Brush butter and garlic mixture on top of crescent rolls.
  • 12. Sprinkle with 1/2 cup of freshly grated Parmesan cheese.
  • 13. Bake uncovered in oven for 35 minutes at 375 degrees, until crust is golden brown.
  • 14. Let stand for 10 minutes to cool. Serve and enjoy!

1/2 cup chopped onion
1 can (8 ounces) tomato sauce
1 can (4 ounces) mushroom stems and pieces, drained
1/4 cup minced fresh parsley

1/4 teaspoon dried oregano
1/8 teaspoon pepper
2 tubes (8 ounces each) refrigerated crescent rolls
2 large eggs
1 large egg, separated
6 slices process American cheese
1 tablespoon water

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat until the meat is no longer pink; drain. Stir in tomato sauce, mushrooms, parsley, salt, oregano and pepper; set aside., Unroll 1 tube of crescent dough and separate dough into eight triangles. Arrange in a single layer in a lightly greased 9-in. pie plate. Press into dish to form a crust and seal seams. In a small bowl, whisk eggs and 1 egg white. , Pour half of beaten egg mixture over pie shell. Spoon meat mixture into shell; arrange cheese slices on top. Spread with remaining beaten egg. Mix water and remaining egg yolk; set aside., Unroll second tube of crescent dough; place four sections of dough together to form a 12-in. x 6-in. rectangle. 3/4 cup sour cream (fat free if desired)
3 tablespoons ketchup
1 tablespoon Dijon mustard
1 tablespoon flour, with pepper added to taste
1 teaspoon dried dill weed
1 (4 ounce) can mushroom stems and pieces, drained
1 cup frozen peas
1 (8 ounce) can refrigerated crescent dinner rolls

Steps:

  • Brown beef and onion in frypan and drain off fat.
  • Add all ingredients except crescent rolls.
  • Stir and simmer gently for 5 minutes, do not boil.
  • In an ungreased 9 inch pie pan arrange the eight crescent triangles in pan with narrow tips extending over pan about 2 inches.
