This easy to make casserole is packed with potatoes and Cheddar cheese. It's a perfect side dish for any Thanksgiving table.

1 pound frozen Southern-style hash brown potatoes
1 (10.75 ounce) can condensed cream of potato soup
1 (16 ounce) container sour cream
1 (16 ounce) package shredded Cheddar cheese
½ cup butter, melted
1 cup crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large baking dish, mix together potatoes, soup and sour cream. Mix in cheese and butter. Salt and pepper to taste, if desired. Top the mixture with potato chips.
  • Bake 60 minutes in the preheated oven, or until the mixture is bubbly and lightly brown.
  • Remove from oven and let stand 15 minutes before serving.

Give baked potatoes a bit of oomph with this easily reheated side dish - great with sausages and salad

6 large baking potatoes
85g butter
1 tbsp English mustard
6 large spring onions , finely chopped
175g mature cheddar , grated, plus 85g for sprinkling
2x 300g cans red kidney beans , drained

Steps:

  • Heat oven to 200C/fan 220C/gas 7. Oil and season the potatoes, then bake for 1 hr until a knife slides in easily and the skins are crispy. Cool for 10 mins.
  • Halve the potatoes lengthways and scoop out the cooked potato into a bowl, leaving a thin layer behind so that the skins still hold their shape. Mash the potato with the butter, mustard and seasoning, then stir in the spring onions, 175g cheese and kidney beans. Pile the mixture into the potato skins and scatter with the remaining cheese. Can be made to this stage a day ahead and chilled. Bake for 30-40 mins until golden. Serve with the sausages and salad (see 'Goes well with').

These flakes of nutritious goodness might look bland, but they most certainly aren't. They're full of nutrition and flavour and when added to your favourite recipes provide a yummy nutty, cheesy flavour.

1 medium sweet potato
1 (400 g) can baked beans
2 medium tomatoes
8 white mushrooms
3 tablespoons nutritional yeast
1 teaspoon coconut oil
1 teaspoon black pepper
1 fresh coriander, garnish

Steps:

  • Place the baked beans in a saucepan and cook over a medium heat for 4-5 minutes.
  • Heat the coconut oil in a frying pan, slice the tomatoes and mushrooms, then fry until softened.
  • Slice the sweet potato and toast in the toaster or under the grill until cooked through.
  • When the sweet potato is ready, plate up and serve with the beans, tomato, mushrooms, nutritional yeast, black pepper and coriander on top.
