Savory cheese and bacon and a pinch of cayenne pepper give these slightly sweet goodies a flavorful punch. They're versatile- you can serve them for breakfast or brunch...or with soup for lunch or supper.

Yield 8 muffins.

Number Of Ingredients 10

1-3/4 cups all-purpose flour
1/2 cup shredded sharp cheddar cheese
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper
1 egg
3/4 cup milk
1/3 cup vegetable oil
6 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the first six ingredients. In another bowl; combine the egg, milk and oil; stir into dry ingredients just until moistened. Fold in bacon. Fill greased muffin cups two-thirds full. Bake at 375° for 20-25 minutes or until muffins test done.

2 cups all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1 cup milk
1/3 cup melted butter
1 egg, beaten
1/2 cup chopped unpeeled apple (Granny Smith)
3/4 cup shredded sharp cheddar cheese (or extra-sharp)
2/3 cup crumbled crisp cooked bacon

Steps:

  • Preheat oven to 400° and grease muffin pan.
  • In a mixing bowl, combine the flour, sugar, baking powder, and salt; stir to blend.
  • In another mixing bowl, combine the milk, butter, and egg; mix well.
  • Add egg mixture to flour mixture; stir just until blended.
  • Gently fold in apples, cheese, and bacon.
  • Spoon batter into prepared muffin tin, dividing evenly.
  • Bake for 15-20 minutes or until browned.

2 large eggs
3 Tbsp melted butter
pinch of salt and pepper
1/3 c milk
1 c self rising flour
1 c shredded zucchini
1 c shredded cheddar cheese

  • 1. Whisk together the eggs, butter, milk, salt and pepper. Stir in the flour and mix well. Stir in the bacon, zucchini and cheese. Scoop the mixture into 8 well greased muffin cups. Bake in a 350 degree oven for 20-25 minutes.

5 oz cheese whiz or any spreadable cheese
2 green onions, sliced
8 slice bacon, cooked and crumbled
4 Tbsp softened, butter
4 english muffins

Steps:

  • 1. Preheat oven to 325 degree F. Mix all ingredients except for the muffins in a small bowl.
  • 2. Spread an even amount of cheese mix onto muffin halves. Place on sheet pan.
  • 3. Bake for 10 - 12 minutes, then broil for another 4 - 5 minutes or until beginning to golden and bubble.
  • 4. Serve immediately. Yummy good!

Steps:

  • In a frying pan (skillet) fry bacon over a medium-high heat until light and golden stirring often, about 4 minutes.
  • Remove to a kitchen paper covered plate.
  • Increase heat to high, add oil and mushrooms to the frying pan and cook for 5 minutes till tender and then set aside to cool.
  • Put the Frozen blocks of spinach in the pan and allow to defrost with a drop of water on a low heat. Drain the spinach of any excess water and set aside to cool
  • Preheat oven to 200 degree celsius
  • Grease a 12 hole muffin tin (regular size)
  • Sift flour, baking powder and pepper into a bowl, add cheese and mix together.
  • Whisk butter, egg and milk in a jug and pour into dry ingredients, stirring gently until almost combined.
  • Fold through the bacon, mushrooms and spinach
  • Spoon mixture into prepared muffin tin.
  • Sprinkle with pumpkin seeds
  • Bake for about 15 to 18 minutes. Poke with a wooden toothpick and when removed there should be no crumbs on the toothpick - this will be an indication that the muffins are cooked through.
