EASY CHEESEBURGER TACOS



Easy Cheeseburger Tacos image

My 7-year-old daughter requested cheeseburger tacos for dinner one night, so I created this and all the kids loved it! The adults also raved after tweaking their tacos by adding onions, peppers, hot sauce, etc. to the meat mixture. Serve with hamburger toppings on the side. This is a very kid friendly recipe!

1 pound lean ground beef
¼ teaspoon ground black pepper
¼ teaspoon salt
½ teaspoon garlic powder
½ cup ketchup
6 (8 inch) flour tortillas
1 (8 ounce) package shredded Mexican cheese blend
½ cup sour cream
⅓ cup ketchup

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir beef with black pepper, salt, and garlic powder in the hot skillet until meat is browned and crumbly, 5 to 7 minutes; drain and discard grease. Reduce heat to low and mix 1/2 cup ketchup into beef.
  • Lay a tortilla onto a work surface and place about 1/3 cup beef mixture and 1/4 cup shredded cheese onto tortilla in a line down the center. Roll tortilla over meat and cheese, fold in top and bottom to enclose filling, and finish rolling into a burrito shape. Repeat with remaining tortillas and filling. Place filled tortillas into prepared baking sheet and sprinkle remaining Mexican cheese blend on top. Cover dish with aluminum foil.
  • Bake in the preheated oven until dish is heated through and cheese topping has melted, 20 to 25 minutes. Stir sour cream with 1/3 cup ketchup in a bowl and top each serving with the sour cream sauce.

I like the fact that by air frying my burgers I avoid grease splattering all over my stove top. I make 1/2-pound burger patties but you can easily make them into four 1/4-pound patties. Serve with all the fixings on the side.

1 slice white sandwich bread
1 ½ tablespoons low-fat milk
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
1 pound ground beef
2 slices Cheddar cheese
2 brioche buns, halved

Steps:

  • Preheat the air fryer to 350 degrees F (175 degrees C).
  • Cut crust off sandwich bread and tear bread into small pieces. Mix with milk, garlic powder, salt, and pepper in a bowl until well incorporated. Add ground beef and mix well. Shape into 2 equal patties. Make an indentation in the center of each patty with your thumb; this prevents them from puffing up.
  • Place in the air fryer basket and cook for 8 to 10 minutes. Flip patties over and continue cooking on the second side, 8 to 10 minutes more. Top each patty with cheese and place back in the air fryer until cheese has started to melt, 20 to 30 seconds. Place on buns.

1 teaspoon vegetable oil, plus more for brushing
6 ounces breakfast sausage, casings removed
5 large eggs, beaten
Kosher salt and freshly ground pepper
4 ounces cheddar, shredded (1 cup)
1/3 cup homemade or store-bought salsa
6 flour tortillas (each 8 inches)

Steps:

  • Preheat oven to 425°F. Heat oil and sausage in a medium nonstick skillet over medium-high; cook, breaking up meat into bite-size pieces with the back of a spoon, until cooked through, 5 to 6 minutes.

Like tacos, only neater to eat. In Mexico, they're often deep-fried, but baking them works well too. It's easier and healthier, and the tortillas still turn golden brown and crispy around the edges. Serve with salsa and sour cream.

1 tablespoon vegetable oil, plus more
vegetable oil, for brushing on the taquitos
1 medium onion, finely chopped
1 garlic clove, minced
3/4 lb lean ground beef
1/2 cup salsa, plus more salsa, for dipping
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
10 (6 inch) flour tortillas
1/2 cup cheddar cheese or 1/2 cup monterey jack cheese, shredded
sour cream

Steps:

  • Heat the oven to 400°. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook them for 3 minutes, stirring often. Add the beef and use a wooden spoon or a spatula to break it up while it cooks, until it is no longer red, about 3 minutes. Stir in 1/2 cup of the salsa, the chili powder, and the salt and pepper. Cook the mixture over low heat, stirring occasionally, for 10 minutes.
  • Place the tortillas on a plate and cover them with damp paper towels. Microwave them until warm and pliable, about 45 seconds. Top each tortilla with 2 tablespoons of the beef mixture, spreading it to an inch from the edges. Sprinkle cheese evenly over the beef.
