1 lb ground beef
1 large onion, chopped
1/2 tsp seasoned salt
1/2 tsp garlic powder
1 dash(es) worcestershire sauce
1 c shredded cheese
1 c milk
1/2 c bisquick mix
2 eggs

Steps:

  • 1. Heat oven to 400°F.
  • 2. Spray a 9 inch pie plate with non-stick cooking spray
  • 3. Cook beef and chopped onion in a skillet over medium about 10 minutes or until beef is brown. Drain excess fat.
  • 4. Stir in salt, garlic powder and Worcestershire sauce and then spread in pie plate. Sprinkle cheese on top of meat.
  • 5. In a small bowl, whisk together the milk, eggs and Bisquick. Make sure you try to get as many lumps out as you can. Pour over meat mixture.
  • 6. Bake in oven for 25 minutes or until a knife comes out clean

28 ounces fresh USDA choice beef chuck, diced
2 tablespoons kosher salt
1 tablespoon ground black pepper
1/2 tablespoon garlic salt
1/2 tablespoon onion salt
1 teaspoon celery salt
8 slices American cheese - 1 slice if any other kind of cheese
4 sesame hamburger buns, toasted
8 leaves iceberg lettuce
4 slices tomato, 1/4-inch thick
4 slices red onion, 1/4-inch thick
4 toothpicks
4 pickle spears
2 pounds Idaho potatoes, peeled, cut into fries and fried until golden brown

Steps:

  • Using a meat grinder with a 3/8-inch plate, grind the meat. Change to a 1/8-inch plate, and grind a second time. Shape the ground meat into 4 (7-ounce) patties. In a mixing bowl, combine the kosher salt, pepper, garlic salt, onion salt and celery salt. Mix well. Place burger on a hot grill and season with the seasoning salt. Cook the burgers halfway to desired temperature and flip over and finish cooking. Place cheese on the burger when it is 3/4 of the way cooked and melt. Place bottom bun on plate. Place burger on bottom bun. Place lettuce, tomato and onion on top of the burger. Cover with top bun and secure with a toothpick. Place pickle next to the burger. Place fries on the plate.

Dough for single-crust deep-dish pie
1 pound ground beef
1 medium onion, finely chopped
1 garlic clove, minced
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups shredded process cheese (Velveeta)
1/2 cup chopped dill pickles
1/3 cup dill pickle juice
1/3 cup 2% milk
Optional: chopped avocado, tomato, lettuce, and bacon

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. I came up with this burger because I wanted to use Grains of Paradise (if can't get Grains of Paradise mix black pepper and cardamom or just black pepper) then followed with paprika, garlic, chili, peanut butter, cabbage and tomato. For more authentic west African meal serve with fried sweet potatoes, cassava known as yucca. 2 lbs lean ground beef
1 tablespoon peanut oil
1 tablespoon Worcestershire sauce
1/2 cup diced onion
1/2 teaspoon smoked paprika
1 -2 small hot chili, minced
1 -2 garlic clove, minced
1/2 teaspoon grated ginger
1/2 teaspoon grains of paradise, grounded
1 -2 tablespoon peanut butter
1 tablespoon finely chopped dry unsalted peanuts (optional)
1 teaspoon tomato paste
6 hamburger buns
1 tomatoes, sliced
shredded cabbage or lettuce
6 slices cheese

Steps:

  • Place meat in a large bowl.
  • Pour oil and Worcestershire sauce over onions in a microwave proof bowl.
  • Place in Microwave oven for 1-2 minutes to soften onions. Cool.
  • Place all the rest of the burger ingredients in the bowl with the beef. Add the cooked onion mixture. Mix just to blend ingredients.
  • Make 6 patties not handling too much and indent the center or make a hole through the center of the burger. The hole will close as cooks. This stops the burger from puffing to much in the center.
  • Preheat grill on HIGH for 10 minute.
  • Coat grill lightly with vegetable oil.
  • Grill rolls, cut side down 30 seconds; remove and set aside.
  • Sear meat on grill, about 2 min, until meat has changed color about one-quarter way up from bottom. Turn over. Sear 1 to 3 minute.
  • Reduce heat to MEDIUM (for most burgers) or LOW (for burgers thicker than 1 inch); close lid.
  • Cook burgers to 160 degrees internal temperature. Check by inserting digital thermometer halfway into thickest part of burger.
  • Top with cheese; close lid. Grill until cheese starts to melt, 1 minute. Place each burger on rolls topped with cabbage and tomato. Go ahead and add some ketchup. ENJOY!

1 1/4 pounds ground chuck
1 1/4 pounds ground sirloin
Coarse salt (kosher or sea) and freshly ground black pepper
N/A freshly ground black pepper
1/2 medium-size onion, cut into 8 thin wedges
16 slices sandwich bread
3 tablespoons butter, melted (optional)
1 large or 2 medium-size gorgeous, luscious, ripe red tomatoes, thinly sliced
8 Boston lettuce leaves or iceberg lettuce slices
Cheese Sauce (optional)

Steps:

  • 1. Set up the grill for direct grilling and preheat to high.
  • 2. Place the chuck and sirloin in a large mixing bowl and mix with a wooden spoon, or mix the meat in a stand mixer fitted with a dough hook. If possible, avoid mixing the meat with your hands so your fingers don't warm it.
  • 3. Wet your hands with cold water and divide the meat into 8 equal portions. Working quickly and with a light touch, pat each portion into a 1/2-inch-thick squarish patty. Generously season each patty on both sides with salt and pepper. Press an onion wedge into one side of each patty so that it's flush with the meat.
  • 4. Lightly brush the bread slices with the butter, if using. Arrange the tomatoes and lettuce leaves on an attractive serving platter.
  • 5. When ready to cook, brush and oil the grill grate. Place the burgers on the hot grate, onion side down. Grill the burgers until cooked to taste, 3 to 4 minutes per side for medium-rare. To test for doneness, insert an instant-read meat thermometer through the side of a burger into the center. The internal temperature should be about 145°F for medium-rare or, if using commercial ground beef, cook it to at least medium, 160°F.
  • 6. Meanwhile, place the bread slices on the hot grate and grill until lightly toasted, 1 to 2 minutes per side.
  • 7. To serve, place a lettuce leaf on top of a slice of toast. Top with a burger, tomato slice, and Cheese Sauce , if using. Slap a piece of toast on top and serve at once.
