MOM'S SPINACH CHEESE SQUARES



Mom's Spinach Cheese Squares image

Ready in just 45 minutes, our spinach cheese squares are welcome additions to Sunday brunch or holiday potlucks.

2 tablespoons butter, melted
3 eggs
1 cup milk
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
4 cups shredded Cheddar cheese (16 oz)
2 packages (10 oz each) frozen chopped spinach, thawed, squeezed to drain
1 tablespoon finely chopped onion

Steps:

  • Preheat oven to 350°F. Place melted butter in 13 x 9-inch baking dish; set aside.
  • In large bowl, beat eggs, stir in milk. Stir in flour and baking powder until well blended. Stir in cheese, spinach and onion. Spoon egg mixture into baking dish.
  • Bake 35 minutes or until center is set. Cool 30 minutes; cut into 6 rows by 4 rows. Serve immediately.

3 eggs
1 cup all-purpose flour
1 cup milk
1 teaspoon baking powder
1 pound shredded Cheddar cheese
2 (10 ounce) packages frozen chopped spinach

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.
  • In large mixing bowl, beat eggs well. Mix in flour, milk and baking powder. When the dough is well combined, mix in cheese, spinach, and onion. Spoon mixture into the baking dish with melted butter.
  • Bake for 35 minutes. Let cool 45 minutes then cut into bite-size squares.

1-1/2 cups sugar, divided

1/4 cup butter, melted

  • Unroll one tube of dough and place in a lightly greased 13-in. x 9-in. baking pan. Seal seams and perforations; set aside. In a large bowl, beat the cream cheese, 1 cup of sugar and vanilla until smooth. Spread over dough. , Unroll remaining tube of dough and place over cream cheese mixture, stretching to fit. 1/4 cup confectioners' sugar
8 tablespoons unsalted butter, room temperature, cut into 8 pieces
1 egg white, for glazing
10 ounces cream cheese, room temperature
1/2 cup sugar, plus
1 tablespoon sugar
2 teaspoons grated lemon zest
1/4 cup sour cream, plus
1 tablespoon sour cream, room temperature
6 tablespoons fresh lemon juice
2 large eggs, room temperature
1 teaspoon vanilla

Steps:

  • Preheat oven to 350*F. Lightly grease an 8" square baking pan with butter.
  • For the base:.
  • Process the flour and confectoner's sugar in a food processor for several seconds. Add the butter and process until the dough comes together, 20 to 30 seconds.
  • Pat the dough gently over the bottom of prepared pan and about 1" up the sides. Glaze it with the egg white: Pour the egg white on the dough and tip the pan from side to side so the white spreads over the surface. Pour off the excess.
  • Bake the base on the center oven rack until golden, about 25 minutes. Place the base in the refrigerator for about 15 minutes to cool completely. Keep on the oven.
  • Meanwhile prepare the topping:.
  • Using an electric mixer on medium high speed, cream the cream cheese, sugar, and lemon zest together in a medium bowl till light and fluffy, 2 to 3 minutes. Stop the mixer once or twice to scrape the bowl with a rubber spatula.
  • Add the sour cream and lemon juice and beat the mixture on medium high speed until smooth, about 1 minute. Scrape the bowl.
  • Add the eggs and vanilla and beat on medium high speed until smooth and creamy,about 10 seconds. Spread the topping evenly over the base.
  • Bake the bars on the center oven rack until the top is slightly golden and a toothpick inserted in the center comes out dry, about 1 hour. If the topping bubbles up during baking, prick the bubbles with a toothpick or a thin knife.
  • Allow the bars to cool completely on a rack. Cut them with the point of a thin sharp knife that is dipped in hot water and wiped dry before each cut.

This is a wonderful baked appetizer blending the tastes of Cheddar cheese and jalapeno peppers. The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

  • For crust:
  • Preheat oven to 425°F. Mix flour, baking powder, and salt in medium bowl to blend. Make well in center of dry ingredients. 6 ounces bakers semisweet chocolate
1 cup coconut (optional)
1 1/2 cups graham cracker crumbs
1/2 cup chopped unsalted peanuts (optional)
2 (8 ounce) packages cream cheese
1 cup sugar
1 teaspoon vanilla

Steps:

  • microwave 3/4 cup of margarine and 2 oz. chocolate squares until melted. Stir together.
  • Stir in graham cracker crumbs, coconut and peanuts (I don't use the coconut because my husband doesn't like it). Press mixture onto bottom of 13x9 inch backing pan. Chill 30 minutes.
  • Mix cream cheese, sugar, vanilla until well blended. Spread over graham cracker crust. Chill 30 minutes.
  • Microwave reamaining margarine and chocolate squares until melted. Mix well, and then spread over the cream cheese layer. Chill until chocolate is hardened.
  • cut into squares and serve. Hint: Warm a knife with warm water to cut without cracking the chocolate topping.
  • The review reminded me that I do double my chocolate topping. It just makes it that much better!

¼ pound sliced salami
¼ pound Swiss cheese
¼ pound provolone cheese
3 eggs, beaten
1 (8 ounce) package refrigerated crescent rolls

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Press 1 package crescent rolls into the prepared baking dish, pushing seams together.
  • Layer ham, pepperoni, salami, Swiss cheese, and provolone cheese atop crescent rolls.
  • Pour beaten eggs over meat and cheese layers, reserving about 1 tablespoon egg.
  • Layer the second package of crescent rolls atop meat and cheese filling; brush with reserved egg.
  • Bake in the preheated oven until cheese is melted and crescent rolls are browned, about 30 minutes.
  • Cut into squares and serve.

Broccoli Cheese Squares image

So incredibly good you will not believe how easy they are to make. A family secret recipe that leaves lots of room for interpretation. We eat these a lot in the summer for dinner with a salad and a loaf of good bread. YUM! But be sure that if adding cooked ingredients, allow them to cool a bit before adding milk and eggs so they don't start to scramble. Eat lukewarm for best flavor or warm.

¼ cup butter
2 (10 ounce) packages frozen broccoli florets, thawed and drained
1 pound shredded sharp Cheddar cheese
1 cup milk
1 cup all-purpose flour
3 eggs
1 teaspoon baking powder
1 teaspoon salt
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place butter in a 9x13-inch casserole dish; place the casserole dish in the preheating oven until butter melts.

Apricot-and-Cream Cheese Squares image

A new take on an old favorite, this modern riff on the apricot-cheese Danish skips the complicated layered dough of the original for a simple focaccia dough. And rather than forming individual pastries, it's baked in a 9-by-13-inch pan and cut into squares. Another thing that makes this recipe easy on the cook, we use canned or jarred apricots rather than fresh.

1 1/4 teaspoons active dry yeast (from 1 package)
2 tablespoons plus 1 teaspoon and a pinch sugar
6 tablespoons extra-virgin olive oil, plus more for drizzling
1 teaspoon kosher salt
2 cups unbleached all-purpose flour
4 ounces cream cheese, room temperature
1 can (15 ounces) apricot halves in heavy syrup, drained
1/4 cup honey

Steps:

  • In the bowl of a mixer fitted with the dough-hook attachment, combine yeast, 3/4 cup warm water (110 degrees), and pinch of sugar. Let stand until foamy, about 5 minutes. Beat on low speed while adding 2 tablespoons oil, salt, and 1 teaspoon sugar. Slowly add flour while beating until mixture just comes together. Increase speed to medium-high; beat until dough is soft and elastic, 3 minutes.
  • Coat a 9-by-13-inch metal baking pan with 3 tablespoons oil. Transfer dough to pan; press to edges with your hands (being careful not to tear). Cover with plastic wrap and let rise in a warm place until doubled in bulk, about 1 hour.
  • Preheat oven to 425 degrees with a rack in lower third. Press dimple-like indentations all over dough with your fingers. Stir together cream cheese and remaining 2 tablespoons sugar; dot all over dough. Arrange 12 apricot halves on top in a 3-by-4 grid formation. Drizzle with remaining 1 tablespoon oil. Cover with plastic wrap and let rise in a warm place until puffed, 30 minutes.
  • Bake until golden brown on top, 23 to 25 minutes. Let cool in pan 10 minutes, then transfer with two large spatulas to a wire rack. Drizzle with honey and oil; let cool completely. Cut into squares and serve.
