"This is one of my favorite ways to fix potatoes," Lois reports. Slices are coated with a cheesy sauce and topped with golden crumbs. "We often serve it with baked ham on New Year's Day," she notes.

2 cups Basic White Sauce
1-1/4 cups shredded cheddar cheese
1-1/2 teaspoons salt
1/4 teaspoon pepper
6 medium potatoes, peeled, cooked and cut into 1/4-inch slices
1/2 cup soft bread crumbs
2 tablespoons butter, melted

Steps:

  • In a saucepan, prepare a double recipe of the white sauce. Stir in cheese, salt and pepper; cook and stir until cheese is melted. Gently stir in the potatoes until coated. , Transfer to a greased 2-qt. baking dish. Toss bread crumbs and butter; sprinkle over potatoes. Cover and bake at 350° for 20 minutes. Uncover; bake 10 minutes longer or until crumb topping is golden brown.

1 box (4.7 oz) Betty Crocker™ au gratin potatoes
2 cups boiling water
1/2 cup milk
1/2 package (5.2-oz size) soft cheese with garlic and herbs
2 tablespoons butter
2/3 cup Progresso™ plain panko crispy bread crumbs
1 tablespoon chopped fresh chives, if desired

Steps:

  • Heat oven to 375°F. Spray 1 1/2-quart glass baking dish with cooking spray.
  • Make potatoes as directed on box for stove-top directions, reserving butter for topping. Stir in cheese until combined; pour mixture into baking dish.
  • In 10-inch skillet, melt butter over medium-low heat. Toast bread crumbs in butter about 5 minutes or until light golden brown. Sprinkle over potatoes.
  • Bake 10 to 12 minutes or until sauce is bubbling. Sprinkle with chives. Let stand 5 minutes before serving (sauce will thicken as it stands).

6 medium boiling or baking potatoes (2 lb)
1/4 cup butter or margarine
1 medium onion, chopped (1/2 cup)
1 tablespoon Gold Medal™ all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups milk
2 cups shredded natural sharp Cheddar cheese (8 oz)
1/4 cup Progresso™ dry bread crumbs (any flavor)
Paprika

Steps:

  • Heat oven to 375°F.
  • Scrub potatoes but do not peel. Cut into 1/8-inch slices to measure about 4 cups.
  • Melt butter in 2-quart saucepan over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.
  • Stir in milk and 1 1/2 cups of the cheese. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  • Spread potatoes in ungreased 1 1/2-quart casserole. Pour cheese sauce over potatoes.
  • Bake uncovered 1 hour. Mix remaining cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake uncovered 15 to 20 minutes longer or until top is brown and bubbly.

8 tablespoons (1 stick) butter
1/2 cup all-purpose flour
2 cups milk
1/2 cup grated yellow Cheddar
1/4 cup grated American cheese
1/4 cup grated white cheddar
1 teaspoon chicken bouillon powder
1/2 teaspoons ground nutmeg
1 teaspoon black pepper
3 pounds russet potatoes, washed and scrubbed, peeled and sliced thin
1 stick butter, melted
2 cups panko bread crumbs
2 teaspoons smoky paprika

Steps:

  • Preheat oven to 350 degrees F.
  • In a large sauce pot over medium-high heat, add butter. Stir in the flour until pasty. Add milk; stir to remove lumps and let cook for 6 minutes until it gets thick. Lower heat and add the cheese, bouillon, nutmeg and black pepper. Whisk until well combined and sauce thickens, approximately 4 minutes. Remove from heat.
  • In a bowl, combine butter, panko and smoky paprika. Stir well.
  • Place potatoes into a casserole dish. Pour cheese over potatoes and sprinkle au gratin on top. Wrap with foil and bake in oven for 35 to 45 minutes. Remove foil and cook for 10 minutes uncovered. Allow to sit for 10 minutes.
