These are the BEST burgers I've ever had. My mother made a version of these and I changed it a little....instead of Jalapeno peppers you can add ANYTHING or just do the cream cheese...trust me...you're family and/or guests will BEG for the recipe!

2 cups seeded and chopped jalapeno pepper
2 (8 ounce) packages cream cheese, softened
2 pounds ground beef
8 hamburger buns, split

Steps:

  • Preheat a grill for medium heat. When hot, lightly oil the grate. In a medium bowl, stir together the jalapenos and cream cheese.
  • Divide the ground beef into 16 portions and pat out each one to 1/4 inch thickness. Spoon some of the cream cheese mixture onto the center of 8 of the patties. Top with the remaining patties, pressing the edges together to seal.
  • Grill for about 10 minutes per side, or until well done, taking care not to press down on the burgers as they cook. This will make the cheese ooze out. Serve on buns with your favorite toppings.

1 1/2 pounds ground chuck beef
2 tablespoons minced garlic
2 eggs, beaten
Salt and freshly ground black pepper
6 ounces crumbled blue cheese
6 ounces unsalted cold butter, cut into small cubes, divided
1/4 cup canola oil, for frying
6 large potato rolls, or rolls of choice
Iceberg lettuce
2 tomatoes, sliced
1 red onion, sliced into rings
Mustard, ketchup and mayonnaise, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large mixing bowl combine the beef, garlic, beaten eggs, and salt and pepper, to taste.
  • Divide the meat mixture into 6 round even patties. Press 1-ounce of blue cheese and 1-ounce of the cold butter into the center of the formed patty. Remold the patty so that all the cheese and butter are hidden inside the center. Continue until all the beef patties have been formed. Refrigerate for 10 to 15 minutes.
  • Pour the oil into a large skillet over medium-high. When the oil is smoking, add the beef patties and cook on both sides until golden brown. Remove to a sheet pan and roast in the preheated oven until desired doneness is reached, about 6 minutes. Cook's Note: They can be also cooked on a charcoal grill.
  • Warm the buns slightly, then put the burgers on the buns and top each with lettuce, tomato and an onion ring. Enjoy. You can, if you wish, use mayonnaise, ketchup or mustard to enhance this dish.

STUFFED ROASTED GARLIC PASTE AND BLUE CHEESE HAMBURGERS



Stuffed Roasted Garlic Paste and Blue Cheese Hamburgers image

2 pounds ground chuck
Sea salt, preferably gray sea salt, and freshly ground black pepper
Garlic Paste, recipe follows
Blue Cheese
1 loaf good crusty bread, cut into 4 sections
1/2 cup extra-virgin olive oil
1 pound peeled garlic cloves, store bought
Gray sea salt and freshly ground pepper

Steps:

  • Preheat the grill. In a bowl, mix the meat. Form 4 (3-ounce patties) by using a scoop. Push them down and make little indentations in the middle to hold the flavors. Place a teaspoon of garlic paste in the middle of each patty and add a little chunk of blue cheese tucked right on top of the garlic paste. Add a good twist of black pepper. Take another 3 ounce scoop of meat, make it flat in your hand and place right on top of the other half.
  • Take your fingers and just seal the 2 patties up and refrigerate until you are ready to grill.
  • Meanwhile: Split the pieces of bread, and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
  • Place the burger in the bread, and top with your favorite condiments.
  • Preheat the oven to 375 degrees F.
  • Heat an ovenproof saucepan on the stovetop. When it's hot, add the extra-virgin olive oil. Next, add the cloves and season with salt and pepper. Let the cloves begin to caramelize, then put the pan in the preheated oven.
  • Roast cloves in the oven for about 30 minutes or until they are nicely browned. (Starting the garlic on the stove will save at least 20 minutes of roasting time). Let cool.
  • When cool enough to handle easily, put the roasted garlic into a small bowl, mash with a fork and add oil from the pan until a paste forms. Store, tightly covered, in the refrigerator, for up to 1 week.

1 tablespoon each finely chopped fresh thyme, oregano, rosemary, and flat-leaf parsley
Coarse salt and freshly ground pepper
3 large tomatoes, thickly sliced
2 large onions, thickly sliced
2 tablespoons extra-virgin olive oil
5 ounces fresh goat cheese, sliced into 6 equal portions
1 head romaine lettuce, chopped
1 head red or white endive, thinly sliced crosswise

Steps:

  • Heat grill to medium. In a large bowl, place ground chuck and herbs. Season with salt and pepper. Using your hands, mix ingredients together until combined. Form into 6 patties; set aside.
  • Brush the tomato and onion slices with oil, and season with salt and pepper. Grill the tomato and onion slices until slightly charred on both sides (onion should be tender), 4 to 6 minutes for tomatoes and 6 to 8 minutes for onions. Remove from the grill, and keep warm.
  • Grill hamburger patties, 3 to 5 minutes per side for medium-rare. When they have reached desired doneness, place cheese on top of each patty. Grill until cheese is slightly melted.
  • To serve, stack slices of onion and tomato on a serving platter with romaine and endive. Place hamburgers on top.

  • Set grill to medium heat.
  • Oil the grill grates.
  • In a bowl stir together the softened cream cheese with jalapeno pepper; mix until combined.
  • In a bowl combine the ground beef with onion soup mix and garlic, then add whatever other seasonings you desire, egg, breadcrumbs, Worcestershire sauce, etc (do not add in any extra salt to the ground beef mixture as the dry onion soup mixture already has enough salt).

½ cup crumbled blue cheese
½ cup minced onion
½ cup hot chicken wing sauce
1 tablespoon Worcestershire sauce
1 teaspoon freshly ground black pepper
1 teaspoon prepared yellow mustard

Steps:

  • In a medium bowl, mix together the ground beef, blue cheese and onion. Season with Worcestershire sauce, mustard, and pepper. Mix well, using your hands if necessary. Form into four patties, and place on a plate. Cover and refrigerate for 1 hour.
  • Preheat an outdoor grill for high heat. Remove the hamburger patties from the refrigerator, and pour enough hot wing sauce over them to cover the top surface. Allow to sit for 10 minutes.

Steps:

  • To each pound of ground beef add 1/2 cup of grated sharp Cheddar cheese, 1 tablespoon of Worcestershire sauce and 1 grated onion. Season to taste with freshly ground pepper and form into cakes. Wrap each cake with a slice of bacon and grill as with plain hamburgers . These are exceptionally fine served with sliced raw onion marinated in an olive oil and wine vinegar dressing and plenty of hot mustard.

2 pounds very lean ground beef, preferably top round
Salt to taste if desired
Freshly ground pepper to taste
1/4 pound goat cheese
2 tablespoons chopped fresh tarragon or half the amount dried, optional

Steps:

  • Preheat broiler to high.
  • Divide beef into 4 portions. Shape each into hamburger-shaped rounds, each about an inch thick. Sprinkle with salt and pepper. Place wire rack on baking dish and arrange patties over it. Put meat under broiler, inch or two from source of heat, and leave broiler door slightly ajar. Cook about 3 minutes on one side if you wish meat rare. If you prefer it more well done cook up to 6 minutes on one side, then turn and continue cooking 2 to 4 minutes.
  • Meanwhile, crumble cheese and top each portion of meat with equal portions of cheese, pressing to keep mounds of cheese intact. Return cheese-topped patties to broiler and let broil about 2 minutes until the cheese is browned on top and partly melted.
  • Sprinkle top of each patty with chopped tarragon.

1/3 cup finely crushed pretzel
3 tablespoons chopped onions
1 minced garlic clove
1 chipotle chile in adobo, minced
2 tablespoons pickle relish
1/2 teaspoon salt
2 lbs ground beef
4 slices cheddar cheese
4 hamburger buns

Steps:

  • Mix beer, pretzels, onion, garlic, chipotle, relish, and salt together and let sit a couple minutes, and mix into the ground beef. You'll want to mix until the ingredients are evenly distributed, but be careful not to overwork the ground beef.
  • Makes 4 very large patties 6 medium.
  • Grill the burgers till done, about 10-15 minutes, turning once.
  • Just before taking off place cheese on burgers let melt and remove an place on buns.

This is my adaptation of a recipie that came from a barbeque book many years ago. I can't remember the book, but I make these for nearly every barbeque we have (and we have a lot)

1 lb lean beef mince
salt
pepper
1 teaspoon cayenne pepper
1 teaspoon garlic salt
4 ounces mature cheddar cheese, grated
finely chopped up onion
4 ounces blue cheese
2 ounces of finely chopped walnuts
4 ounces monterey jack cheese
2 ounces of finely chopped jalapeno peppers

Steps:

  • Mix the top five ingredients together in one bowl.
  • Mix the last two ingredients together in another bowl.
  • Form them into four balls.
  • Put a deep well into each of the four balls of meat, and place a ball of grated cheese and chopped onion into that well.
  • Carefully cover the cheese and onion with the meat,.
  • then carefully flatten the burgers, until they are about 1/2" thick.
  • Then put them in the freezer for approximately 1 hour before you cook them (this ensures they do not fall apart when you cook them).
  • Then cook them on the barbeque or in the frying pan.

GOAT CHEESE-STUFFED HAMBURGERS WITH TWO-OLIVE SPREAD



Goat Cheese-Stuffed Hamburgers with Two-Olive Spread image

2 pounds ground sirloin
1 tablespoon finely chopped fresh basil
3 ounces fresh goat cheese
6 kaiser rolls, split and lightly toasted
3/4 cup Two-Olive Spread (recipe follows)
6 leaves lettuce such as romaine or red-leaf
6 slices beefsteak tomato
20 kalamata olives, pitted, rinsed, and drained
20 green olives, pitted, rinsed, and drained
1 teaspoon Dijon mustard
1/2 peeled red bell pepper, chopped
1 tablespoon capers, rinsed, and drained
2 tablespoons finely chopped Italian parsley
1/8 teaspoon cayenne pepper
3 tablespoons olive oil
1 tablespoon lemon zest

Steps:

  • In a bowl, combine the ground sirloin and basil and mix well. Shape into 6 thick patties. Make a pocket in the center of each patty, fill each pocket with 1 tablespoon of the goat cheese, and cover with the meat. Press into patties 3/4 inch thick. Heat grill pan or saute pan over medium-high heat. Spray lightly with nonstick cooking spray, and add the burgers. Cook for 3 to 4 minutes on the first side, flip, and cook 4 to 6 minutes on the second side for medium-rare, or until desired doneness. To serve, place the burgers on the toasted bun halves and top each burger with 2 tablespoons of the olive spread. Top with lettuce and tomato and finish with the top of the bun.
  • In a food processor fitted with the metal blade, combine the olives, chopped pepper, capers, parsley, and cayenne pepper and process until coarsely chopped. Then use on-off pulses while slowly adding the olive oil until it is absorbed. Taste for seasoning. Transfer to an airtight container and refrigerate until ready to use.
  • ADVANCED PREPARATION: Can be prepared up to 1 week ahead, covered, and refrigerated.

LOGAN COUNTY HAMBURGERS (AKA: HAMBURGER GRILLED CHEESE)



Logan County Hamburgers (aka: Hamburger Grilled Cheese) image

How to make Logan County Hamburgers (aka: Hamburger Grilled Cheese)

1.25 pounds of ground beef (85% lean & organic is the best option)
1 large egg, lighlty beaten
1 medium yellow onion, chopped
¼ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
12 slices of white bread
unsalted butter
American Cheese or Velveeta (We used Velveeta so it was nice and melty)

Steps:

  • In a large mixing bowl combine your egg, minced garlic, onion powder, garlic powder, salt, pepper and hamburger. Form into thin patties.
  • Cook on the grill, george forman indoor grill, or in a NuWave Oven until the hamburger is done and place on paper towels to drain the grease. Set aside.
  • Add your chopped onion to a medium skillet along with 1 tablespoon of butter and cook until the onion is translucent and tender.
  • Butter both sides of your bread and place them in a skillet and cook one side until it turns a nice golden brown. Flip the bread over and immediately place your cheese slices on it along with the cooked onion. Once the remaining sides of bread are golden and the cheese has melted add your hamburger and assemble your sandwich.
  • If your cheese hasn't completely melted you can place your bread pieces on a baking sheet under the broiler for 2-3 minutes to completely melt your cheese if needed.
