There's just enough fresh garlic to add a pop of flavor but not be overpowering. 8 large, thick chicken breasts (boneless/skinless)
chopped garlic, to taste
1 c shredded mozzarella cheese
1 c shredded Parmesan cheese
2 c Italian seasoned bread crumbs
1/2 c butter, melted (I like to use salted butter)
toothpicks or short skewers
sweet basil, to taste (I added this for a little extra flavor)

Steps:

  • 1. Butterfly fillet the chicken breasts and lay flat in order to stuff them. (http://www.youtube.com/watch?v=PBSAEHnFaO4)
  • 2. Stuff inside with both cheese's on the breast.
  • 3. Then add garlic.
  • 4. Sprinkle with sweet basil before closing up and securing with toothpicks or short skewers. (Make sure you have secured the opening because the next step is to roll in butter and bread crumbs.)
  • 5. Melt the butter in a flat dish with sides so you can still roll the chicken in it.
  • 6. Then roll in bread crumbs.
  • 7. Place them in a baking dish or pan.
  • 8. Pour remaining butter, or melt a little more, over the chicken.
  • 9. Bake at 350 degrees for about an hour.
  • 10. Make sure to pull out all the toothpicks or skewers before serving. (I like to use the short skewers because they don't get in the way and they are easier to take out once the chicken is ready.)

2 tablespoons dried chives
1 clove garlic, minced
4 skinless, boneless chicken breast halves, butterflied
4 slices turkey bacon
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix the cream cheese, chives, and garlic. Divide the mixture into 4 balls.
  • Place 1 cream cheese ball in the center of each butterflied chicken breast half. Fold the chicken over the cream cheese, wrap with a slice of turkey bacon, and secure with toothpicks. Arrange the chicken in a baking dish. Pour the butter over the chicken.
  • Bake 30 minutes in the preheated oven, or until the bacon is crisp and the chicken is no longer pink and juices run clear.

8 tablespoons butter, room temperature
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
4 boneless, skinless chicken breasts
1 cup flour
3 eggs, beaten
2 cups panko breadcrumbs
oil, for frying
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 375°F (190°C).
  • In a bowl, add the butter, garlic, and parsley and mix until fully combined.
  • Shape butter into a log and wrap in plastic wrap. Freeze for 15 minutes.
  • On a cutting board, slice the chicken breasts in half horizontally.
  • Wrap in plastic wrap and pound until the chicken is ⅛-inch (3 mm) thick.
  • Divide the butter into fourths.
  • Season with salt and pepper. Place a portion of butter on the flattened chicken breast and roll it up, creating a log.
  • Coat the rolled chicken in flour followed, by eggs and bread crumbs. Repeat once more.
  • Cover the chicken in plastic wrap and chill for 15 minutes while the oil is heating.

4 chicken breasts
4 cloves garlic (sliced)
½ cup grated mozzarella cheese
½ cup grated parmesan cheese (divided)
4 tablespoons unsalted butter (room temperature)
2 teaspoons Italian seasoning (divided)
1 cup all-purpose flour
3 eggs (beaten)
2 cups Panko breadcrumbs
Salt and pepper (to taste)

Steps:

  • Preheat the oven to 375°F.
  • In a small bowl, stir together the garlic, mozzarella, ¼ cup parmesan, butter, and 1 teaspoon Italian seasoning until well mixed.
  • Cut about a 3-inch wide pocket into the thick side of each chicken breast (almost to the other side, but do not cut all the way through).
  • Stuff ¼ of the cheese filling into each chicken breast and secure it with toothpicks. Set aside.

3/4 cup Roasted Garlic
Coarse salt and ground pepper
1 whole chicken (3 1/2 to 4 pounds)
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 425. In a small bowl, roughly mash 3/4 cup Roasted Garlic with a fork. Season with salt and pepper.
  • Rinse chicken inside and out and pat dry. Gently slip your fingers between skin and meat of breast, thighs, and legs to loosen skin. Evenly spread mashed garlic under skin, starting with leg and thigh area and working your way back toward neck. Generously season chicken inside and out with salt and pepper. Tuck wing tips underneath chicken and tie legs together with kitchen twine.
  • Heat a 12-inch cast-iron skillet or roasting pan on high. Add oil, swirl to coat skillet, then add chicken. Cook 1 minute, then transfer skillet to oven. Roast chicken until skin is deep golden brown and juices run clear when pierced between breast and leg (an instant-read thermometer should read 160 degrees when inserted in thickest part of a thigh, avoiding bone), 40 to 45 minutes. Let sit 10 minutes before carving.

3 clove(s) garlic minced
3 tablespoon(s) parsley chopped
1/2 cup(s) ricotta cheese full fat
4 tablespoon(s) parmigiano-reggiano shredded
3 tablespoon(s) bread crumbs
salt and pepper
lemon slices
8 large chicken drumsticks

Steps:

  • Melt the butter in a small saucepan. Add the garlic and cook for 1 minute. Remove from heat and stir in the parsley, cheeses, and bread crumbs. Mix well.
  • Spray a baking pan. Preheat oven 375 degrees. Carefully pull the skin back on each side of drumsticks and carefully with a small spoon stuff some cheese filling on both sides and place in the baking pan.
  • Continue until all the drumsticks are stuffed. Season with salt and pepper. Place a lemon slice on each piece. Bake for about 45 minutes.

8 boneless, skinless chicken breast halves
1 (8 ounce) package cream cheese, cut into 1/2 inch slices
1 (8 ounce) package Cheddar cheese, cut into 1/2 inch slices
1 cup milk
1 ½ cups Italian seasoned bread crumbs
½ cup grated Romano cheese
1 tablespoon minced garlic
¾ cup butter, melted
2 tablespoons lemon juice
½ teaspoon garlic salt, or to taste
½ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly coat a large, shallow baking dish with oil.
  • Butterfly each breast by slicing in half horizontally through the center, cutting almost but not completely through. Place one slice each of Cheddar and cream cheese in the center of each breast. Close again as if placing between the pages of a book. Set aside.
  • Pour milk into a shallow bowl. In a separate bowl, combine breadcrumbs and Romano cheese. Carefully dip each breast first in milk, then in breadcrumb mixture, patting lightly to firmly coat. Place breasts side by side in a single layer in pre-oiled baking dish, tucking edges under to seal.
