¼ cup butter
1 stalk celery, sliced
1 yellow onion, chopped
1 carrot, peeled and diced
4 cloves garlic, minced
4 potatoes, peeled and cubed
4 cups chicken stock

2 tablespoons dried parsley
1 egg
1 cup all-purpose flour
2 cups diced cooked ham
4 cups milk
1 head broccoli, chopped

Steps:

  • Heat butter in a large stock pot over medium heat. Cook and stir celery, onion, carrot, and garlic until the onion is translucent. Stir in potatoes, chicken stock, cayenne, thyme, and parsley. Bring to a boil, then cover and reduce heat. Simmer until the potatoes are tender, about 15 minutes.
  • Mix egg and flour together in a bowl using a fork until the mixture resembles grains of rice.
  • Stir ham and milk into the stock pot and allow the soup to return to a simmer. Slowly sprinkle the flour mixture into the soup, stirring constantly to prevent clumps. Simmer for 10 minutes, stirring occasionally. Stir in broccoli and Cheddar cheese. Cook until the broccoli is tender and the Cheddar cheese is melted, about 5 minutes. Season with salt and pepper.

Irish Lamb Stew with Herbed Goat Cheese Dumplings image

4 pound shoulder roast of lamb
Olive oil
10 cloves of garlic
1/4 pound bacon, cut into 1-inch pieces
Salt
Freshly ground black pepper
4 cups veal stock
4 ounces unsalted butter
1/2 cup flour
1 cup onion, diced
1/2 cup celery, diced
1/2 cup carrot, diced
Fresh sprigs marjoram for garnish
2 cups flour
1 1/2 tablespoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/4 cup soft goat cheese
2 teaspoons each of chopped parsley, marjoram and thyme
Freshly ground black pepper
3 cups veal stock

Steps:

  • Preheat the oven to 325 degrees.
  • Rub the lamb roast all over with olive oil. Make 10 small slits all over the roast. Insert the bacon and garlic cloves into the slits. Season with salt and pepper. Place the roast in a roasting pan and add the stock and cover. Place in the oven and slow roast for 3 hours, or until very, very tender. Remove the lamb from the oven and cut into 2-inch pieces. Set aside.
  • In a large pot, add the butter and melt. Stir in the flour and let cook for 3 minutes. Add the onion and saute until soft, about 5 minutes. Add the carrots and the celery and saute for another 10 minutes. Slowly whisk in the stock that the lamb was cooked in. Add the reserved lamb. Bring to a simmer. Season with salt and pepper.
  • For the dumplings: In a large bowl, combine the flour, baking soda and salt and mix well. In a small bowl, beat the eggs. Add the milk to the eggs. Add the egg mixture to the dry ingredients and mix well. Stir in the goat cheese and the herbs. Season with freshly ground black pepper. Have the stock boiling in a small saucepan. Using 2 tablespoons, drop the dumpling batter into the boiling stock. Cook for about 5 minutes, or until the dumplings float to the surface. Remove the dumplings from the stock and place on a plate.
  • To finish: Place the dumplings into the stew. Check for seasoning. Garnish with fresh marjoram.

Steps:

  • boil, peel, and grate a large starchy potatoe.
  • Combine with flour, egg, and salt and pepper to taste.
  • Drop by 1/2 teaspoon into a large pot of boiling water.
  • Dumplings are done when they float.
  • Remove from pot and drain well.
  • Empty water from pot and return dumplings to it.
  • Sprinkle dumplings with dill weed then combine with cottage cheese (I prefer small curd but either works).
  • Re-warm dish to eating temperature (cottage cheese will reduce temperature) and serve.
  • Alternatively combine with boiled cabbage instead of cottage cheese (also very tasty).

1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
10 garlic cloves
1/4 lb bacon, cut into 1-inch pieces
1 sprig fresh rosemary
1 sprig fresh thyme
3 cups beef broth
4 ounces unsalted butter
1/2 cup flour
2 celery ribs, chopped
14 baby carrots, chopped
2 onions, chopped
3 cups beef broth (or veal stock)
2 cups flour
2 cups Bisquick
1 cup 2% low-fat milk
4 ounces goat cheese, crumbled
2 teaspoons parsley, chopped
2 teaspoons marjoram
2 teaspoons thyme
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 300°F Place the roast in a roasting pan and season with salt and pepper then rub all over with olive oil. Make 10 small slits all over the roast (If roast is tied, leave it tied).
  • Insert the garlic cloves into the slits. Add the bacon into the pot then gently add the stock over and around the roast. Place rosemary and thyme sprigs on top of roast. Cover and slow roast for 3 hours, or until very tender.
  • Remove from oven and let cool slightly. Remove roast and wrap tightly in foil then refrigerate. To the stock, strain into a pyrex bowl, cover with plastic wrap and refrigerate overnight.
  • Remove the fat from the stock (You should yield at least 4 cups of stock). Discard fat solids and set the stock aside. Remove the veal from the foil, cut it into 2" cubes, and set aside.
  • In a large pot or dutch oven over medium heat, add the butter and melt. Stir in the flour and let cook for 3 minutes. Add the celery and carrots and sauté about 5 minutes. Add the onion and sauté for another 10 minutes.
  • Slowly whisk in the stock that the lamb was cooked inches Add the cooked lamb, reduce heat to low, cover and let simmer 20-30 minutes until carrots are tender.
  • DUMPLINGS: In a 2 qt pot, heat beef broth to a simmer. Meanwhile, in a large bowl, add remaining dumpling ingredients and mix well.
  • Drop the dumplings by tablespoonfuls (a few at a time as to not overcrowd. They will poof up) into the simmering broth. Let simmer, turning occasionally, for 10-15 minutes or until the dumplings float to the surface and are cooked through.
  • As the dumplings cook, remove them from the broth and add to the stew. When the last batch of dumplings are cooked, add them and the remaining broth to the stew.

  • In large bowl mix flour, pinch of salt and egg. Add milk a little at a time until dough is elastic. Roll out dough on floured surface and cut into three-inch circles. I think they're great in any stew or soups. These are inspired by something I saw a while ago on TV, cannot remember what exactly though sorry! This makes 12-15.

170 g plain flour
1 teaspoon baking powder
2 tablespoons butter, Cold & Chopped
1/2 cup mature cheddar cheese, grated
1 small bunch chives, chopped
1 pinch salt
1/4 cup milk

Steps:

  • Mix together flour, butter, baking powder & salt.
  • Use your hands to mix them and form large breadcrumbs.
  • Add grated cheese & the chopped chives and stir through with a fork.
  • Add the milk, little by little, mixing with a fork all the while. You might need a little less or a little more, depending on the flour. Be sure the mixture doesn't get too wet and sticky.
  • Now you need to roll the mix into a ball shape.
  • Place it in your stew & cook for 30 minutes.
  • **In general, a temperature of 150-190/320-360 or Gas Mark 4/5 should be used.

1 3/4 cups (14 ounces) pot or soft goat cheese
1/4 cup (2 ounces) cream cheese or mascarpone, softened
1/4 cup grated onion
1 teaspoon table salt or 2 teaspoons kosher salt
2 large eggs, lightly beaten
2 tablespoons unsalted butter, softened
About 3/4 cup semolina flour, farina (not quick-cooking), or matza meal

Steps:

  • 1. In a food processor or blender, or with an electric mixer, combine the cheeses, onion, and salt. Add the eggs and beat until smooth. Beat in the butter, 1 tablespoon at a time. Stir in enough of the semolina to produce a firm dough. (Getting the moisture level right so that the batter holds together in your hand is the tricky part.) Cover and refrigerate for at least 2 hours or overnight. (The semolina absorbs moisture from the batter and firms it.)
  • 2. Bring a large pot of lightly salted water to a gentle boil. Using 2 moistened soup spoons or your hands moistened with water, form the batter into 1 1/2-inch balls.
  • 3. Drop the dumplings in the water in batches and stir gently to prevent sticking. Reduce the heat and simmer, uncovered, until they expand and rise to the surface, about 15 minutes. Using a slotted spoon, transfer to a bowl. Serve warm. To keep warm or reheat, place in a 200°F oven.
  • Austrian Jam-Filled Cheese Dumplings (Gefulte Topfenknodel)
  • In the dumpling batter, omit the onion and add 3 to 5 tablespoons sugar and, if desired, 1 to 2 teaspoons grated lemon zest. Press a deep indentation into the cheese balls, fill with about 1/4 teaspoon lekvar (prune butter) or other jam (about 1/4 cup total), and press the dough around the filling to enclose. Cook as above. Serve with sweetened whipped cream, cinnamon sugar, or jam.

RICOTTA CHEESE DUMPLINGS

Cheese dumplings can be served with your favorite pasta sauce, or just tossed in brown butter. My favorite is warmed in browned butter with 4-5 sprigs fresh thyme.

3 large eggs
1 tsp kosher salt or to taste
1/2 tsp freshly ground black pepper
pinch freshly grated nutmeg
parmesan cheese, optional

Steps:

  • 1. Add all ingredients to a food processor and blend until very smooth. You should have a stiff, sticky batter. Refrigerate for one hour.
  • 2. Bring a large pot of salted water to a boil. Have a large bowl of cold water nearby, and a skimmer or wire strainer to remove the cooked dumplings.
  • 3. Using a small spoon, scoop out a rounded teaspoon of the batter. Use a second spoon to scrap it off into the boiling water. Do batches of 8-10 dumplings. When the water comes back to a boil, and the dumplings float, cook them for 3 minutes.
  • 4. Remove to the dumplings to the bowl of cold water. Carefully drain and reserve until ready to serve. Reheat in the sauce of your choice, and serve topped with Parmesan cheese.

This is very old recipe, mostly forgotten. Today, everyone makes potato dumplings or gnocchi, but believe me, this one are much better. Even more, you can eat them as a side dish to meat and sauces, also you can eat as a full lunch and even as a dessert - you just have to put sugar and cinnamon over. You can add whatever you want, poppy seeds, and raisins, chocolate or vanilla sauce. Perfect dessert. It is also very simple with just few ingredients. Note: for vegetarians, skip lard you can use oil as well.

500 g farmer cheese (fresh)
60 g lard (must be pork, but oil can do)
3 eggs
250 g semolina
5 g salt

Steps:

  • Mix well whole eggs and lard. Drain the cheese and add into eggs. Add whole semolina, mix well and leave at least two hours in refrigerator. Longer it stays in refrigerator, better dumplings.
  • Heat large pot with water until it boils. Keep boiling.
  • Soak your hands in cold water and make balls; Golf-ball size. Put them one after another into boiling water and cook until they start to float on the surface and than 3-5 more minutes. It really depends how hard are your dumplings (that means you have to stick to the recipe).
  • To serve as a side dish to meat and sauce, fry some breadcrumbs on butter and put the dumplings into the pan, and fry with breadcrumbs just to stick it to the dumplings. Serve warm.

TINGINIO CEPELINAI (CHEESE DUMPLINGS) - LITHUANIAN



Tinginio Cepelinai (Cheese Dumplings) - Lithuanian image

Cepelinai are one of the favorite dishes of Lithuania, but are quite labor-intensive to make. You have to grate the potatoes, then squeeze out as much liquid as possible. I was intrigued by recipes of this name that I found in a number of Lithuanian blogs, which literally translates as "Lazyman's cepelinai", and inspired by them, developed this recipe. This recipe is for two adults, two dumplings a person as a main dish, but children would probably just eat one. The texture is very reminiscent of the potato cepelinai, but you can easily make these for dinner. I keep forgetting to time myself, but I'm sure this doesn't take me more than about 30 minutes.

8 ounces farmers' cheese (see Note)
6 tablespoons farina (cream of wheat)
3 tablespoons potato starch
1 egg
1/2 teaspoon salt
additional potato starch

3 -4 ounces ground meat
1 pinch thyme or 1 pinch allspice

Steps:

  • In a medium bowl, combine the cheese, farina, potato starch, egg and salt. I first stir with a spoon, but then knead it right in the bowl with my hand, to ensure that everything is thoroughly mixed. Cover and let it stand while you make the filling. (Letting it stand about 10 or 15 minutes lets the farina hydrate and I think makes the dough hold together better).
  • Saute the onion in the oil in a small saucepan until translucent.
  • Add to the remaining filling ingredients in a small bowl. Mix thoroughly.
  • Divide into four portions and form into small sausage shapes. Cover.
  • Sprinkle two or three tablespoons of potato starch onto a large plate and set aside.
  • Fill 2 or 3 quart saucepan with water, add salt, and bring to a boil while making the dumplings.
  • Divide the dough into four portions - I do this right in the bowl, just cutting through it with a knife.
  • Dampen your hands with cool water before forming each dumpling. Take one portion of the dough and flatten it on the palm of one hand into an oval.
  • Place on portion of the filling onto the dough and form the dough around it into an oval shape - it's important to make the exterior very smooth, without any cracks or seams - this will keep them dumplings from splitting as they cook.
  • Place the dumpling onto the potato-starch-sprinkled plate and roll it around to dredge in the starch.
  • Repeat with the remaining dough and filling.
  • When they are all done, carefully place each dumpling into the pot of boiling water. They should fit without crowding or overlapping. If there is any potato starch left on the plate, just scrape it right into the water, as well.
  • Let the water return to a boil and reduce it to a slow boil - more than a simmer, but not a full out boil.
  • Cook for about 10 minutes after it returns to a boil.
  • While these cook, make the sauce.
  • Chop the bacon and saute it in a small saucepan.
  • As it starts to get translucent, add the mushrooms and butter, and saute until cooked through.
  • Remove the dumplings with a slotted spoon, plate and cover with sauce.
  • Note1: "Varske" is what we call farmers' cheese in Lithuanian. Tvarog is widely available in many places and is essentially the same. You want to use one that is whole milk or made from not less than 2% milk. Leaner cheese will not hold together as well - probably you would need more potato starch.
  • Note2: The mushrooms are not traditional in the sauce, but I like them, and that way I am not using as much bacon. However, you can serve with just melted butter and sour cream, or any similar sauce that you might have in your files. To reduce calories, you can just saute some mushrooms and perhaps have a little sour cream on the side.
  • Note3: I've made this with both ground beef and ground pork. I intend to make a cheese filling also, and I think a mushroom filling would also be very good, if you want to keep this vegetarian.
  • Note on Servings: We will eat two each, with that making up our entire meal. If you serve with soup, some veggies, etc., in a more usual fashion, you can probably serve 3 or 4 people.
  • Cheese filling: Take about 4 ounces of the farmers' cheese and place in a small bowl. Add the minced green top of one scallion, a pinch of salt and about 1 tbl of cooked minced bacon (I just take from the sauce). You might need a little of the bacon grease to help mix it together. Minced mint or tarragon is traditional, but I had none. I mixed it well and divided into six sections. I then divided the dough into six sections. Cheese filled dumplings are traditionally smaller. Make then as above, but form them into round balls - again, the shape is traditional when using a cheese filling. They will take a minute or two less to cook.

2 cups all-purpose flour plus additional for dusting
1/2 teaspoon salt
1 large egg
1 tablespoon vegetable oil
1/2 cup lukewarm water
For filling
15 oz farmer cheese (1 1/2 cups)
1 cup sour cream (10 oz)
2 large eggs, separated
1/2 teaspoon salt
3 tablespoons fine fresh bread crumbs
1/2 stick (1/4 cup) unsalted butter, melted
2 tablespoons chopped fresh flat-leaf parsley
Special Equipment
a table at least 30 inches long and 24 inches wide; a 36-inch-square smooth cotton or linen tablecloth or sheet (preferably with a pattern); 2 (27- by 18-inch) pieces fine-weave cheesecloth (sometimes called heavy-duty); kitchen string

Steps:

  • Make dough:
  • Stir together flour and salt in a bowl. Make a well in flour mixture and add egg, oil, and water, then gently beat with a fork, gradually incorporating shallow scrapings from inside flour wall to form a dough. Knead on a lightly floured surface, adding just enough flour to prevent dough from sticking, until dough is smooth and elastic, 6 to 8 minutes.
  • Rinse a 2-quart bowl with hot water and dry it, then invert over dough. Let dough stand, covered, 30 to 60 minutes.
  • Make cheese filling:
  • Stir together farmer cheese, sour cream, egg yolks, salt, and 1 tablespoon bread crumbs in a bowl. Beat egg whites in another bowl with an electric mixer at medium speed until they just hold stiff peaks. Fold whites into cheese mixture gently but thoroughly.
  • Roll and fill dough:
  • Bring an 8- to 10-quart pot of salted water (see Tips, page 141) to a boil.
  • Meanwhile, cover table with tablecloth, allowing cloth to hang over edges, and dust cloth lightly with flour (it isn't necessary to dust overhang). Lightly flour dough and roll out on cloth with rolling pin, as evenly as possible, into a 24- by 20-inch rectangle, so that a long side of rectangle is nearest you. Dough should be thin enough for you to see any pattern on tablecloth.
  • Gently brush dough with 2 tablespoons butter and sprinkle with parsley and remaining 2 tablespoons bread crumbs. Divide cheese filling into 2 mounds on dough on left and right sides. Spread filling into 2 side-by-side 18- by 10-inch rectangles (with a short side of each cheese rectangle nearest you), leaving a 2-inch space between rectangles and a 1-inch border around outer edges.
  • Holding tablecloth edge nearest you tautly, lift up cloth to make dough roll over on itself (away from you). Continue rolling, lifting tablecloth and pulling it toward you until dough is completely rolled (there is no need to use your hands to roll the dough). Cut into 2 rolls through 2-inch space between fillings.
  • Carefully transfer 1 roll using a metal spatula onto center of 1 piece of cheesecloth. Fold cheesecloth over roll to cover top and wrap roll, then twist ends of cheesecloth and tie with kitchen string about 1 inch from each end. (Excess cloth on ends helps in lifting roll when boiled.) Wrap second roll in same manner.
  • Cook rolls in boiling water (rolls will float), partially covered, 15 minutes. Transfer with a large slotted spoon or skimmer to a shallow baking pan and cool 3 minutes. Cut off kitchen string and unwrap cheesecloth, then transfer rolls to a platter with a metal spatula. Trim off and discard ends of rolls, then drizzle rolls with remaining 2 tablespoons butter. Cut into 1 1/2-inch-thick slices.

  • Divide the dough into balls. Take one ball, flatten and place a cube of fontina cheese in the center, wrap the dough around the cheese. Dust with flour and set aside. Repeat with remaining dough balls.
  • Cook the bread dumplings in boiling water. They are ready when they float to the surface. Remove with a slotted spoon and set aside.
  • Heat olive oil in a large pan over medium high heat. Add the bread dumplings and cook until golden brown on all sides.
  • Add butter and sage, toss to coat. Plate the bread dumplings. In the same pan with butter and sage, carefully add the balsamic vinegar and remove from heat.
  • Spoon the balsamic butter sage sauce over the bread dumplings.
  • Garnish with shredded parmesan and enjoy!

3 tablespoons unsalted butter
1 large onion, chopped
1 fennel bulb, trimmed, chopped

2 garlic cloves, minced
1 1/2 teaspoons dried oregano
1/2 cup dry white wine
7 1/2 cups (or more) chicken stock or canned low-salt chicken broth
1/2 cup whipping cream
Dumplings
1 tablespoon olive oil
3 shallots, chopped
1/2 cup (packed) soft fresh goat cheese (such as Montrachet), crumbled
1/2 cup chopped seeded plum tomatoes
1/4 cup chopped fresh basil
20 wonton wrappers

Steps:

  • For soup:
  • Preheat oven to 375°F. Place eggplant cut side down on oiled rimmed baking sheet. Bake until very tender, about 1 hour. Cool.
  • Melt butter in heavy large pot over medium heat. Add onion, fennel, potato, leek, garlic and oregano; sauté 10 minutes. Add wine; cook 2 minutes. Add 7 1/2 cups stock; simmer until vegetables are tender, 15 minutes. Scoop out eggplant flesh; discard skins. Add eggplant to soup. Simmer 10 minutes. Working in batches, puree soup in blender. Return soup to pot. Mix in cream. Season with salt and pepper. (Can be made 1 day ahead; cool slightly. Cover; chill.)
  • For dumplings:
  • Heat oil in small skillet over medium heat. Add shallots; sauté 4 minutes. Cool. Mix in cheese, tomatoes and basil. Season filling with salt and pepper. Place wrappers on work surface. Place 2 teaspoons filling in center. Brush edges with water. Fold wrappers diagonally in half; press edges to seal. (Can be made 4 hours ahead. Place in single layer on floured baking sheet. Cover; chill.)
  • Bring soup to simmer, thinning with more stock if necessary. Cook dumplings in pot of boiling salted water until tender, about 1 minute. Ladle soup into bowls. Using slotted spoon, place 2 dumplings atop soup in each bowl.

16 slices Kraft Singles American cheese
32 slices (about 1 1/2 loaves) white sandwich bread, edges cut off
2 cups milk
2 quarts vegetable oil

  • Fill molds of an ice cube tray with soup (do not add water or milk). You should have enough soup to fill 8 molds. Freeze for at least 6 hours or overnight. Cut each cube into 4 pieces. Wrap each piece in half a slice of cheese. Wrap a slice of bread around the cheese and drizzle 1 tablespoon of milk on the bread to get it moist enough to bind into a ball. Make sure there are no open seams. Heat oil to 325℉ in a deep fryer or a deep, heavy-bottomed pot fitted with an oil thermometer. Fry dumplings in batches until golden brown, 5-6 minutes. Drain on paper towels. Eat with caution, not only because they're hot, but because someone's going to fight you for that last one.

1 tablespoon sugar
1 teaspoon seasoning salt
1/8 teaspoon pepper (to taste)
2 cups biscuit mix
1 cup cheddar cheese, grated
3/4 cup milk
1 tablespoon parsley, chopped

Steps:

  • Drain juice from tomatoes into 10-inch skillet.
  • Put tomatoes in bowl and mash until broken up.
  • Add to skillet with next 3 ingredients and 1/3 cup water.
  • Bring to boil.
  • Mix next 3 ingredients with fork and drop by spoonfuls into boiling tomatoes.
  • Cover and simmer 15 minutes.
  • Sprinkle parsley over dumplings.
  • Makes 6 servings.
