1- ounce parmesan cheese slice (cut into 12 pieces OR)
1 ounce of your favorite hard cheese

Steps:

  • Place each piece of cheese in 1 cup of a mini silicone muffin pan.
  • Microwave on high for 1 minute. Remove any cheese chips that are crispy. Return to the microwave in 30 second intervals to crisp any chips that did not get crispy enough.

1 cup butter, softened
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 cups shredded sharp cheddar cheese
3 cups crisp rice cereal

Steps:

  • In a bowl, cream the butter until fluffy. Slowly mix in the flour, salt and cayenne pepper. Stir in cheese and cereal. Shape into 1-1/2-in. balls and place on ungreased baking sheets. Bake at 350° for 15-17 minutes or until lightly browned. Serve warm or cold.

Steps:

  • Place a square of parchment paper (do NOT use wax paper) on a microwaveable dinner plate. Place a generous tablespoon of cheese in center of plate and, with your fingers, gently spread into a circle about 3 1/2-4" in diameter and not too thick in the middle. Microwave on HIGH about 30-40 seconds or until a toasty color and they sound crisp when tapped with your fingernail. Lift it off the paper with tongs and set on paper towel to cool. You can use the same piece of parchment over and over for the current crisp-making session. These will keep quite well in an air-tight container at room temperature for several days or longer.
