Steps:
- In a large bowl, dissolve yeast in warm water. Add cheeses, milk, sugar, butter, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a firm dough., Do not knead. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Stir dough down; transfer to 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes., Preheat oven to 375°. In a small bowl, combine egg white and water. In another bowl, combine topping ingredients. Brush loaves with egg white mixture; sprinkle with topping. Bake 25-30 minutes or until golden brown. Remove from pans to wire racks to cool.

EASY CHEESE BATTER BREAD (A PILLSBURY BAKE-OFF WINNER)
This hearty casserole bread was a prize winner in the 23rd Bake-Off contest in the early 70's. The moist and chewy bread is even better the second day! *Cooking time(passive time) includes time for bread to rise twice.

Steps:
- Generously grease 1 1/2 or 2 quart casserole dish or 9x5" loaf pan.
- Lightly spoon flour into measuring cup; level off.
- In large bowl, combine 1 1/2 cups flour, cheese, sugar,salt and yeast; blend well.
- In small saucepan, heat milk and margarine until very warm (120 to 130 degrees F.).
- Add warm liquid and eggs to flour mixture.
- Blend at low speed until moistened; beat 3 minutes at medium speed.
- By hand, stir in remaining 1 cup flour.
- Cover loosely with plastic wrap and cloth towel.
- Let rise in warm place (80 to 85 degrees F.) until light and doubled in size, about 45-60 minutes.
- Stir down dough to remove all air bubbles. Turn into prepared casserole dish.
- Cover; let rise in warm place until ight and doubled in size, 20-25 minutes.
- Heat oven to 350 degrees.
- Uncover dough.
- Bake 40-45 minutes or until deep golden brown.
- Remove from casserole dish immediately; cool on wire rack.

BEER BATTER CHEESE BREAD
This is a quick and easy bread that you can make ahead and freeze - goes great with a hot chili dish!!

- Pre-heat oven to 350-F degrees and thoroughly grease the inside (bottom and all four sides) of a single loaf pan. Reserve.
- In a large mixing bowl, sift flour and sugar together. Add grated cheddar cheese and chopped green onions. Thoroughly mix all ingredients together. Add beer and stir until the ingredients are uniformly moistened.
- Spoon bread dough mixture into a well-greased loaf pan. Bake for approximately 1 hour, or until the loaf is golden brown and emits a hollow sound when tapped. Cool on a wire rack, and store in an airtight container.
- May freeze for up to 90 days. Slice to serve.
- Tip: Prepare your own self-rising flour! For every cup of all-purpose flour, add 1 teaspoon baking powder and 1/2 teaspoon salt. Simply sift together the ingredients and store at room temperature in an air-tight container.

DILLED CHEDDAR CHEESE BATTER BREAD

Steps:
- Bring first 3 ingredients to simmer in small saucepan; cool to 120°F. Whisk in oil and eggs. Combine 1 1/2 cups flour, yeast, salt and 2 cups cheese in large bowl of electric mixer. Add warm liquid mixture and fresh dill; beat 3 minutes. Add remaining 1 1/4 cups flour; beat 2 minutes. Scrape down sides of bowl. Cover bowl with plastic wrap. Let dough rise in warm draft-free area until doubled, about 1 hour 15 minutes.
- Preheat oven to 350°F. Butter 9 x 5 x 3-inch loaf pan. Do not stir batter down. Spoon half of batter into pan; sprinkle remaining 1 1/2 cups cheese over. Cover with remaining batter; smooth top. Cover and let rise in warm draft-free area until batter reaches top of pan, about 30 minutes.
- Bake until bread is golden brown and sounds hollow when tapped, about 45 minutes. Turn out onto rack and cool.
HERBED CHEESE BATTER BREAD
My son makes this & it's wonderful! Since he's a big fan of the food network, I'm guessing he grabbed the basic recipe there & tweaked it to suit himself. No kneading required (my favorite kind of bread making). This makes 2 loaves - one for now & one to freeze for later. Prep time includes rising time.

- Lightly butter (2) 8 X 4 X 2-inch loaf pans.
- Heat butter over medium heat. Add the buttermilk and water; heat till warm to touch (105-115ºF)
- Pour into a large bowl & sprinkle the yeast on top. Let stand for 5 minutes.
- Whisk to dissolve yeast then whisk in 3 eggs & the hot sauce.
- Sift together flour, sugar, baking powder, baking soda & salt.
- Gradually stir into the liquid mixture to make a thick batter.
- Stir in Parmesan cheese, 3/4 cup shredded cheddar, garlic & herbs.
- Pour batter into prepared pans, spreading evenly.
- Cover loosely with plastic wrap & let stand in a warm place until doubled in volume, about 45 minutes.
- Preheat oven to 375ºF & place rack in the center.
- Beat the remaining egg with the 1 tablespoon water & brush tops of loaves.
- Bake for 25 minutes. Sprinkle with remaining 1/4 cup cheddar cheese & bake till golden brown, 10-15 minutes.
- Cool in pans, on rack, for 10 minutes. Turn on on rack and cool completely.
- * Can be made up to 2 days in advance, wrapped tightly & stored at room temperature. Herbs can be varied to suit your taste.

- In a large bowl, dissolve yeast in warm broth. Add the sugar, butter, salt, poultry seasoning, egg and 1 cup of flour; beat until smooth. Add 1 cup of cheese and the remaining flour; stir for 1 minute. , Cover and let rise in a warm place until doubled, about 30 minutes. Stir the batter down, about 25 strokes. Spread evenly into a greased 9x5-in. loaf pan. Cover and let rise until doubled, about 20 minutes. , Sprinkle with the remaining cheese and onion salt if desired. TOMATO CHEESE BATTER BREAD

- Cut 2 tablespoons butter unto 1/4-inch dice. Place on a piece of waxed paper and place in the freezer.
- In a large bowl, combine flour, sugar, salt, and yeast. Heat soft butter and tomatoes to 125 degrees. Add to the dry ingredients with the egg, Parmesan cheese, and parsley. Beat vigorously for 2 minutes.
- Turn dough into a well-greased, 8-inch round pan. Cover with a tightly woven towel and let rise for 1 hour. About 10 minutes before baking, preheat oven to 375 degrees. Just before baking, remove the diced butter from the freezer and sprinkle on the top of the dough. Bake for 20 minutes, or until the internal temperature of the bread reaches 190 degrees. Serve immediately.

CHEESE BATTER BREAD
This was originally just a bread machine recipe, but I wanted to give it as a gift, and my bread machine pan makes the loaf look like a tall muffin and the blade tears a hole in it, so I figured out how to do the baking part in a regular oven. You can still bake in a bread machine - simply add the ingredients as instructed above...

Steps:
- 1. Place all ingredients in bread machine. Set on dough cycle.
- 2. When dough-mixing cycle is completed, remove from machine and spread into a greased 9x5x3" loaf pan.
- 3. Heat oven to 375. While oven is heating, set loaf pan on top of stove and cover with a clean cloth. Allow to rise to desired size.
- 4. Bake for 25-30 minutes or until golden brown. Remove from pan and serve warm.
