This is fairly quick, very easy and tasty! Bacon bits and cheese in a creamy sauce. Delicious in pancakes, crepes and over pasta, and even on a slice of toast!

1 (3 ounce) can bacon bits
2 tablespoons butter
2 tablespoons all-purpose flour
3 cups milk
salt and pepper to taste
ΒΌ teaspoon mustard powder
1 cup shredded Cheddar cheese

Steps:

  • Fry the bacon in a large skillet over medium high heat for 10 minutes, or to desired crispiness. Drain excess fat, crumble bacon and set aside.
  • Melt the butter or margarine in a large saucepan over medium heat. Add the flour, stirring constantly, to form a roux.
  • Slowly add the milk, stirring often to avoid lumps. Then stir in the salt and pepper to taste, mustard powder and the cheese.
  • Let simmer for 1 minute, allowing cheese to melt some, remove from heat, add the bacon and stir well.

Avocado, Blue Cheese and Bacon Filling/Sauce image

Before I was veggie/vegan I loved this. Now I just make it veggie with veggie bacon. My husband loves this too. Put it in sandwiches with pasta or on potatoes. It's a bit addictive and not for those on a diet. Adding a bit of rocket to this tastes nice and it means you have included a vegetable with your fat for the day (that makes it healthy)!

4 slices bacon
50 g blue cheese
1/2 lemon, juice of
1 avocado, sliced
salt and pepper

Steps:

  • Cut your avocado in half; remove stone and slice.
  • Squeeze lemon juice over avocado.
  • Dry fry bacon in frying pan until crisp, snip into slices approx 1 cm wide.
  • Cut up and crumble the danish blue.
  • Mix all of the above together and season with salt and pepper.
  • Mix with hot or cold pasta,, roughly tumble onto a sandwich or put in a potato.
