Wherever I take this one-of-a-kind salad, people eat it until it's gone. I got the original recipe from my mother-in-law and adapted it to fit my tastes. My fondness for cheese and cranberries prompted my to toss them into the delicious mix.

Number Of Ingredients 7

2 large Red Delicious apples, cubed
2 large Golden Delicious apples, cubed
1/2 cup chopped pecans
1/4 cup mayonnaise
3 tablespoons sugar, divided
1/4 cup chopped fresh or frozen cranberries, thawed
1/4 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine the apples and pecans. Combine mayonnaise and 2 tablespoons sugar; add to apple mixture and mix well. Combine cranberries and remaining sugar; sprinkle over apple mixture. Top with cheese. Serve immediately.

1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons fresh lemon juice
1 teaspoon sugar
1 cup cubed smoked Cheddar cheese
4 Granny Smith apples cored, cut into 1/2 inch pieces
1 1/2 cups very thinly sliced celery
1 1/2 cups halved red seedless grapes
1 cup lightly chopped walnuts
salt and pepper to taste

Steps:

  • Whisk mayonnaise, sour cream, lemon juice, and sugar together in a large bowl. Add cheese cubes, apples, celery, grapes, and walnuts. Toss well with dressing. Season with salt and pepper, if desired. SERVING SUGGESTION Arrange washed romaine lettuce leaves on a platter or in a large salad bowl and spoon the salad over the leaves.
