LAYERED VEGETABLE TORTE



Layered Vegetable Torte image

Getting this vegetable torte right takes a little time. You really must grill (or pan-grill) or roast all the vegetables well - they have to become quite tender - before assembling the torte. Ultimately, you want the vegetables to almost melt together. Grilling is the technique of choice because it gives the vegetables a hint of smokiness.

1 large eggplant, cut into 1/4-inch slices
4 medium zucchini or yellow squash, cut into 1/4-inch slices
2 portobello mushrooms, cut into 1/4-inch slices
1/2 cup extra virgin olive oil, or more as needed
Salt
freshly ground black pepper
2 plum tomatoes, cut into 1/4-inch slices
2 tablespoons minced garlic
1/4 cup chopped fresh basil leaves
1/4 cup freshly grated Parmesan
1/2 cup bread crumbs, preferably fresh

Steps:

  • Heat oven to 400 degrees. Put a grill pan over medium-high heat, or prepare a grill; the heat should be medium-high, and the rack about 4 inches from flame. Brush eggplant, zucchini and mushrooms lightly with half the oil and sprinkle with salt and pepper; if roasting, grease 2 baking sheets with oil. Roast or grill vegetables on both sides until soft.
  • Coat bottom and sides of 8-inch springform pan with oil. Layer a third of the eggplant slices into bottom of the pan, then layer in half the zucchini, mushrooms, tomato, garlic and basil, sprinkling each layer with a bit of salt and pepper. Repeat layers until all vegetable are used. Press the top with a spatula or spoon to make the torte as compact as possible. Sprinkle top with Parmesan and bread crumbs, and drizzle with about 1 tablespoon oil.
  • Bake torte in oven until hot throughout and browned on top, about 30 minutes. Let sit for 5 minutes before removing outer ring of pan, then let cool for another 10 minutes before cutting into wedges.

1 1/3 c italian bread crumbs, or crushed crackers of your choice
1/4 c butter,melted
2 c shredded cheddar cheese (8 ounces)
1 small zucchini, finely chopped
5 small fresh mushrooms,sliced
1/3 c chopped sweet onion
1/4 c chopped sweet red pepper
1 Tbsp olive oil
8 oz spreadable garlic and herb cream cheese
4 eggs, beaten
2 Tbsp crumbled cooked bacon
2 Tbsp shredded parmesan cheese

Steps:

  • 1. Preheat oven to 375 degrees. Butter a spring form pan and line the outside with aluminum foil.
  • 2. In a bowl, combine bread crumbs (or crushed crackers) and the butter. Press into bottom of prepared spring form pan.
  • 3. Sprinkle cheddar cheese on top of the bread crumb crust.
  • 4. In a skillet, saute zucchini,mushrooms,onion and pepper in the olive oil until tender. Spoon over the cheddar cheese layer.
  • 5. In a separate bowl (or Kitchen Aid) beat cream cheese until smooth. Add eggs and beat until combined well. Stir in bacon pieces. Pour this over the top of the vegetable layer. Sprinkle the parmesan cheese on top.
  • 6. Place in preheated oven on a baking sheet, and bake for 30-35 minutes until the center is almost set. Cool on wire rack for 10 minutes before removing from spring form pan carefully. Enjoy!!!

4 packages (8 ounces each) cream cheese, softened
1 cup butter, softened
2 teaspoons coarsely ground pepper
1 jar (5-3/4 ounces) pimiento-stuffed olives, drained and chopped
8 cups shredded sharp cheddar cheese
3/4 cup apple cider
2-1/4 teaspoons paprika
1 cup chopped pecans, toasted
Grapes and assorted crackers

Steps:

  • In a bowl, beat the cream cheese and butter until smooth. Remove 3-1/2 cups to a small bowl; stir in pepper and set aside. Fold olives into the remaining cream cheese mixture. Spread evenly over the bottom of a 9-in. springform pan; set aside., In another large bowl, beat cheddar cheese, cider and paprika on low speed for 1 minute. Beat on high until almost smooth. Spread half over olive layer. Top with peppered cheese mixture. Top with remaining cheddar mixture. Cover with plastic wrap; refrigerate for 6 hours or until firm., Place on serving plate and remove sides of pan. Press pecans into top; garnish with additional olives or grapes if desired. Serve with crackers.

Make it ahead of time and then cut it into wedges, like a cake. The layers of roasted vegetables look so beautiful. One adaptation that I do, is put a whole layer of goat cheese in the center - its wonderful. Another thing I've done is to make a light basil vinaigrette to drizzle over each serving. Either of these things (or both) really put this dish over the top!!

2 zucchini, cut into 1/4 inch slices
1 red onion, cut in half lengthwise and sliced
1 garlic, minced
olive oil
kosher salt
fresh ground pepper
2 red bell peppers, halved, cored, and seeded
2 yellow bell peppers, halved, cored, and seeded
1 eggplant, unpeeled, cut into 1/4 -inch slices (1 1/2 pounds)
1/2 cup freshly grated parmesan cheese

Steps:

  • Preheat the oven to 400 degrees.
  • Cook the zucchini, onions, garlic, and 2 tablespoons olive oil in a large sauté pan over medium heat for 10 minutes until the zucchini is tender. Season with salt and pepper.
  • Brush the red and yellow peppers and eggplant with olive oil, season with salt and pepper, and roast on a baking sheet for 30 to 40 minutes, until soft but not browned.
  • In a 6-inch round cake pan, place each vegetable in a single, overlapping layer, sprinkling Parmesan cheese and salt and pepper to taste between each of the layers of vegetables.
  • Begin with half of the eggplant, then layer half of the zucchini and onions, then all of the red peppers, then all of the yellow peppers, then the rest of the zucchini and onions, and finally the rest of the eggplant.
  • Cover the top of the vegetables with a 6-inch round of parchment paper or waxed paper. Place a 6-inch flat disk (another cake pan or the bottom of a false-bottom tart pan) on top and weight it with a heavy jar. Place on a plate or baking sheet (it will leak) and chill completely.
  • Drain the liquids, place on a platter, and serve at room temperature.

Crackers 1 ⅓ cups
Butter ¼ cup
Cheddar cheese 2 cups
Zucchini 1
Mushrooms ½ cup
Red onion ⅓ cup
Yellow bell pepper ¼ cup
Olive oil 1 tbsp
Cream Cheese 1 (8-oz) tub
Large eggs 4
Bacon 2 tbsp
Parmesan cheese 2 tbsp

Steps:

  • Combine 1 ⅓ cups of cracker crumbs and butter in a small bowl. Press the mixture onto the bottom of a greased 9-inch springform pan.
  • Sprinkle the base with 2 cups of shredded Cheddar cheese.
  • Saute 1 small finely chopped zucchini, ½ a cup of sliced fresh mushrooms, ⅓ cup of finely chopped red onion, ¼ cup of finely chopped sweet yellow pepper in a skillet with 1 tablespoon of olive oil until tender. Spoon the mixture over the cheese.
  • Beat 1 tub of cream cheese in a bowl until smooth. Add 4 eggs and beat on low speed just until combined. Stir in 2 tablespoons of crumbled bacon and pour over vegetable mixture. Sprinkle with Parmesan cheese.
  • Place the pan on a baking sheet. Bake at 375 °F for 30-35 minutes until the center is almost set.
  • Remove from the oven and cool on a wire rack.
  • Carefully slide a knife around the edge of the pan to loosen the quiche and remove sides of the pan.
  • Serve warm or cold.

1 can (15 oz) Progresso™ cannellini beans, drained, rinsed and mashed
1/3 cup Italian dressing
1 1/2 cups diced cooked ham
1 box (9 oz) frozen cut broccoli, thawed, drained
1 cup shredded Cheddar cheese (4 oz)
1 cup milk
2 tablespoons Original Bisquick™ mix
3 eggs, slightly beaten

Steps:

  • Heat oven to 375°F. In small bowl, stir together 1 1/3 cups Bisquick mix, the beans and dressing. Spread in bottom and 2 inches up side of ungreased 9x3-inch springform pan. Bake 10 to 12 minutes or until set.
  • Layer ham, broccoli and cheese over crust. In small bowl, stir milk, 2 tablespoons Bisquick mix and the eggs until blended; pour over cheese.
  • Bake 55 to 60 minutes or until golden brown and knife inserted near center comes out clean. Let stand 10 minutes. Loosen edge of torta from side of pan; remove side of pan.

1 (12-ounce) package sharp cheddar cheese, grated
1 cup pecans, chopped
1 medium onion
2 (8-ounce) packages cream cheese, softened
1/2 mango chutney (or any jam like mango spread)
1/2 cup frozen spinach, thawed
1/2 teaspoon garlic salt
1/2 teaspoon oregano
1 tablespoon beef granules
1/2 teaspoon basil
1 dash each of black pepper, celery seed, cumin, and nutmeg

Steps:

  • Combine cheddar cheese with pecans and onion. Place half of the mixture in an 8-inch round souffle dish. Combine (8-ounce) package cream cheese with the chutney blend thoroughly. Spread over cheddar cheese mixture. Drain spinach completely, squeeze (really squeeze) out all excess moisture. Add seasonings and remaining 1 (8-ounce) package of cream cheese. Blend thoroughly. Top with remaining cheddar cheese mixture. refrigerate until serving time. To serve invert on a plate and serve with crackers.
