This hearty casserole has become one of my family's favorites. It's easy to make and a delicious way to use sausage. I make it for brunch and often take it to potlucks.

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup whole milk
1/4 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups thinly sliced peeled potatoes (about 1-1/4 pounds)
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. In a large bowl, combine the soup, milk, onion, salt and pepper. , In an ungreased 11x7-in. baking dish, layer half the potatoes, soup mixture and sausage; repeat layers. , Cover and bake at 350° for 1-1/2 hours or until potatoes are tender. Uncover and sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

1 pound bulk pork sausage

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

1 lb smoked sausage, (sliced into ¼ inch thick slices)
⅓ cup water
3 lbs red potatoes, (peeled, dice into bite-size chunks)
1 large onion, (chopped)
3 cloves garlic, (minced)
1 cups sharp cheddar cheese, (shredded)
1 cup monterey Jack cheese, (shredded)
1 cup mozzarella cheese, (shredded)
1 tsp Slap Ya Mama seasoning
1 tsp salt
1 tsp black pepper
¼ tsp cayenne pepper
¼ tsp red pepper flakes
10.5 oz can cheddar cheese soup
10.5 oz can cream of celery soup
14.5 oz can beef broth

Steps:

  • Preheat oven to 350° and spray a 3 quart baking dish or 13 x 9 baking dish with non stick spray right before filling.
  • Add diced potatoes to large saucepan, cover with water, and boil for 15-20 minutes. Drain and return potatoes to pan.
  • In a large frying pan, add ⅓ cup of water, smoked sausage and onions. Cook until sausage has browned on both sides. Add more water, if needed.
  • Stir minced garlic into sausage and onions and continue cooking for an additional minute. Remove from heat and place on a plate lined with paper towels, set aside.
  • Mix soups, broth, all three cheeses and seasonings into potatoes. Stir.
  • Add in sausage and onion mixture. Stir until combined.
  • Pour into prepared baking dish and bake for 40 minutes uncovered. Carefully remove from oven, let sit for 10 minutes before serving.
  • Optional: top with sour cream, green onions, cilantro

½ pound thick-cut bacon slices (diced)
1 pound Irish sausages bangers (or any other high-quality pork sausage)
2 large onions (sliced)
2 cloves garlic (minced)
1 cup stout beer (optional)
2 pounds Yukon Gold potatoes (peeled and quartered)
4 cups chicken broth
Freshly ground black pepper (to taste)
⅓ cup chopped parsley
Kosher salt (to taste)

Steps:

  • Preheat oven to 300ºF.
  • Place a large Dutch Oven on the stove, over medium-high heat, and add the diced bacon. Cook until golden brown, about 5 minutes. Using a slotted spoon, remove into a paper towel-lined plate, to soak up the excess grease. Reserve.
  • Add the sausages and brown on all sides, about 2 minutes per side. Remove and reserve.
  • Discard most of the fat rendered in the pot, leaving just a couple tablespoons. Add the onions and sauté until beginning to brown, 3-4 minutes. You can add a little vegetable oil, if needed. Then, add the garlic and sauté until fragrant, 1-2 minutes.
  • Optional: Pour the beer to deglaze the pot, cooking and scraping all the browned bits from the bottom, until almost all evaporated. Remove the onions and reserve.
  • Remove the Dutch Oven from the heat.
  • Add half the potatoes to the bottom of the pot. Season with black pepper and sprinkle some chopped parsley. Then, add half the onions and top with half the cooked bacon. Repeat with another potato layer seasoned with pepper and parsley, followed by onions and bacon. Finish by layering the sausages, whole or cut into chunks.
  • Pour the chicken broth. Bring the pot back to the stove and bring to a boil, over medium-high heat.
  • Cover and transfer the pot to the oven. Cook for at least 2 hours (and up to 4 hours), checking every now and then to see if more liquid needs to be added. There should be at least 1 inch of liquid at the bottom of the pot at all times, to prevent burning.
  • Taste and season with salt and pepper, if needed.
  • Garnish with more parsley and serve!

Hadn't given my boys a full Sunday breakfast in a while, this was their treat...growing up so fast but still my babies. NOTE:DO NOT SALT, THE SAUSAGE AND CHEESE ADD PLENTY. SALT POTATOES only if sitting over night and make sure to rinse well and drain off the excess water. I actually dried mine in the salad spinner.

6 medium russet potatoes, well, scrubbed, shredded
1 large yellow onions, minced
1 medium green bell pepper
2 cup(s) half and half
3 1/2 cup(s) cheddar cheese, sharp
1/3 cup(s) flour
- butter
3 link - hillshire farm, smoked sausage
2 - eggs

Steps:

  • Use mandolin or grater for potatoes sliced thin, or shredded fine, set aside in cold salted water.
  • In food processor, dice onions and bell pepper. Brown sausage in a skillet, set aside until cool enough to handle. Then slice, cube or coarsely grind in food processor.
  • In a mixing bowl pour the half and half, the eggs, and flour, mixing well. Mix potatoes, onions, bell pepper and sausage together and spoon into the dish.
  • Pour milk and egg mixture over the hash brown mixture, letting it soak thru. Cover with foil and bake at 350 for 1 hour.
  • Remove from oven, top with cheese and return to oven, under broiler until cheese is browned and bubbly. Serve warm.

1 ½ pounds potatoes, peeled
cooking spray
1 (16 ounce) package pork breakfast sausage
1 sweet onion, chopped
7 eggs
1 (8 ounce) package Cheddar cheese, grated, divided
½ cup milk
salt and ground black pepper to taste

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Spray a casserole dish or 9x13-inch pan with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes. Transfer onion to the bowl with the cooked sausage.
  • Mix eggs, half the Cheddar cheese, milk, salt, and pepper into the bowl with the sausage mixture.
  • Grate potatoes and add to the bowl of sausage mixture. Pour mixture into the prepared dish; place remaining Cheddar cheese on top.
  • Bake in the preheated oven until casserole is heated through and cheese is melted and bubbly, about 35 minutes.

A family favorite combination of sausage, potatoes and cheese that is my most requested recipe.

3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
  • Bake at 375 degrees F (190 degrees) for 1 hour.
