5 cups water
1 package (16 ounces) frozen broccoli cuts
2 packages (3 ounces each) chicken ramen noodles
1/4 teaspoon garlic powder
3 slices process American cheese, cut into strips

Steps:

  • In a large saucepan, bring water to a boil. Add broccoli; return to a boil. Reduce heat; cover and simmer for 3 minutes. Return to a boil. Break noodles into small pieces; add to water. Cook 3 minutes longer, stirring occasionally. , Remove from the heat. Add the garlic powder, cheese and contents of seasoning packets from the noodles; stir until cheese is melted. Serve immediately.

  • Whisk 1/2 cup vegetable oil, 1/3 cup rice vinegar, 3 tablespoons sugar, 2 tablespoons soy sauce and 2 teaspoons toasted sesame oil in a large bowl. Break two 3-ounce packages ramen noodles into bite-size pieces (discard the seasoning packets). Add the uncooked ramen to the vinaigrette along with one 16-ounce bag broccoli slaw mix, 1 cup julienned snow peas, 3/4 cup toasted slivered almonds and 4 chopped scallions. Season with salt and pepper and toss. Let sit 1 to 2 hours before serving.

1/3 cup water, plus 3 quarts for blanching the broccoli
1 pound broccoli, florets broken into bite-sized pieces and stems peeled and chopped
Kosher salt
2 3/4 cups mushrooms, sliced
1 tablespoon unsalted butter
1 (3-ounce) package chicken- or vegetable-flavored ramen noodles
1/2 cup mayonnaise
1/2 cup plain whole-milk yogurt, not Greek-style
4 ounces sharp cheddar cheese, grated
1/3 cup blue cheese dressing
2 large eggs, lightly beaten
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Heat oven to 350ºF. Spray an 8-inch square glass baking dish with nonstick spray.
  • Bring 3 quarts water to a boil in an 8-quart pot over high heat and add several heavy pinches of salt. Prepare an ice bath in a bowl large enough to hold the broccoli. When the water boils, add the broccoli and cook for 1 minute. Drain the broccoli in a colander and immediately place in the ice bath to shock. Swirl around to cool completely, drain, and set aside.
  • Heat water in an 11-inch straight-sided saute pan over high heat for 30 to 45 seconds, then add the mushrooms. Cook, stirring occasionally, until the mushrooms collapse, 2 to 4 minutes, then add the butter. Cook, stirring occasionally, until browned, 7 to 10 minutes. Add the broccoli and ramen noodles and toss to combine.
  • Turn off the heat. Add the mayonnaise, yogurt, half of the cheese, the blue cheese dressing, eggs, 1/2 teaspoon salt, and the ramen noodle seasoning pack and toss to combine well. Transfer the mixture to the prepared baking dish and smash down with a spatula to compact the casserole. Sprinkle the top with the pepper and remaining cheese.
  • Cover with heavy-duty aluminum foil and bake on the middle rack of the oven for 45 minutes. Remove the foil and bake for an additional 15 minutes. Cool 30 minutes before serving.

1 bunch green onions, chopped
1 cup unsalted peanuts
1 cup sunflower seeds
½ cup white sugar
¼ cup vegetable oil
⅓ cup cider vinegar

Steps:

  • In a large salad bowl, combine the slaw, broken noodles and green onions.
  • Whisk together the sugar, oil, vinegar and ramen seasoning packets. Pour over salad and toss to evenly coat. Refrigerate until chilled; top with peanuts and sunflower seeds before serving.

1⁄2 head of broccoli, broken into florets
1 tbsp sesame oil
1 tbsp sesame seeds, plus extra to serve
2 eggs
200g ramen or dried egg noodles
2 spring onions, sliced
2 radishes, thinly sliced
crispy chilli oil, to serve (optional)
3 tbsp sesame oil
1 tbsp brown miso
pinch of chilli flakes
2 tsp brown sugar
1-2 limes, juiced (to taste)
1 small garlic clove, crushed

Steps:

  • Heat the oven to 220C/200C fan/gas 8. Toss the broccoli with the sesame oil, sesame seeds and some salt, then spread out on a baking tray. Roast for about 15-20 mins until charred and tender.
  • Meanwhile, bring a pan of water to the boil. Add the eggs and cook for 6 mins 30 seconds. Remove using a slotted spoon and lower into ice water to cool for 3 mins before peeling the shells. Mix all the dressing ingredients in a bowl.
  • Cook the noodles following pack instructions, then drain and toss with the dressing.
  • Divide between two serving bowls and top each with a halved egg, the spring onions, radishes and charred broccoli. Finish with extra sesame seeds and crispy chilli oil, if you like.

1 large egg
1/2 teaspoon butter
2 slices American cheese
1/4 teaspoon toasted sesame seeds
1/2 scallion, green part only, thinly sliced on the bias, optional

Steps:

  • Bring 2 1/2 cups of water to a boil in a small saucepan. Add the noodles and cook for 2 minutes. Add the flavor packet, stir, and continue to cook for another 30 seconds.
  • Remove the pan from the heat and carefully add the egg. Do not stir; pull the noodles over the egg and let sit for one minute to poach.
  • Carefully transfer everything to a serving bowl, add the butter, cheese and sesame seeds and mix. Garnish with the scallions if desired.
