ANITA'S CHEATER BEANS

4 strips bacon, cut into 1/4-inch slices
1/4 medium onion, finely diced
Two 27-ounce cans pinto beans
2 serrano peppers, scored
1 medium tomato, finely diced
2 cloves garlic, minced
Salt and pepper
Salt and pepper
1/4 bunch fresh cilantro (don't use the stems and don't chop, just snip or pinch off the leaves)

Steps:

  • In a large saucepan, fry the bacon over medium heat for 3 to 4 minutes. Then add the onions and cook until the bacon is cooked but not crisp and the onions are translucent, another couple of minutes. Do not drain the bacon grease because it gives the beans a good taste. Add the beans, peppers, tomatoes, garlic and 1 1/2 cups water, and cook for 10 to 15 minutes. Add some salt and pepper and the cilantro and remove from the heat.

These are just delicious,and since you start with canned beans I call them cheater beans. Must be the molasses and brown sugar and bacon, because this is one of my favorite sides. I even eat these as a snack with brad and butter.

28 oz can baked beans, drain the juice floating on the top.( i buy the store brand here)
1/2 c onion, finely chopped
1/4 c catsup
1/2 tsp dry mustard
1/4 c brown sugar
1 1/2 Tbsp molasses
1/4 tsp each salt and pepper, or to taste
3 slice bacon

Steps:

  • 1. Drain the juice that is floating on top of beans, unless you like them soupy.
  • 2. Spray a large casserole with non stick spray
  • 3. In a large bowl combine everything except bacon.
  • 4. Pour bean mixture in prepared casserole, cover with bacon strips.
  • 5. Bake in a preheated 350 degree oven for 1 hour, or until bubbly and bacon is crispy.

1 pound bacon
1 large sweet onion, such as Vidalia, finely chopped
Four 14-ounce cans pork and beans
1/2 cup dark molasses
1/4 cup light brown sugar, packed
2 tablespoons prepared yellow mustard

Steps:

  • Preheat the oven to 350 degrees F.
  • Fry the bacon in a large skillet over medium-high heat until crisp. Remove the bacon from the pan, leaving the drippings, and drain it on paper towels. Crumble and set aside.
  • Add the onion to the pan with the bacon drippings and saute until softened, a couple minutes. Stir in the beans, molasses, brown sugar, mustard and crumbled bacon, and mix well.
  • Pour the beans into a 3-quart casserole and bake, uncovered, for about 45 minutes.

1 (28 ounce) can baked beans (I use Bush's)
1 medium onion, diced
1 medium bell pepper, diced
6 slices bacon, fried and crumbled (you can use more if you like)
2 tablespoons chili powder
3 tablespoons Worcestershire sauce
4 tablespoons vinegar
1/2 cup packed brown sugar
1/2 cup ketchup
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
salt

Steps:

  • Preheat the oven to 350°F (175°C).
  • In a large Dutch oven, combine the baked beans, onion, bell pepper, and the bacon. Season with chili powder, Worcestershire, vinegar, brown sugar, ketchup, garlic powder and salt. Add cayenne if using.
  • Cover and bake for one hour in the oven.
  • You can uncover the second 1/2 hour if you like your beans on the thick side.
  • I have also made these in the crock pot on high for 2-3 hours depending on how thick you like them.
