I can't believe in all the Snickerdoodle recipes listed here this one isn't among them. This is the best. Every time I take these somewhere, people declare these are the best snickerdoodles they have ever had! I think the trick is to not over bake...bake until just starting to crack on top!

Number Of Ingredients 10

3 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1 cup butter, softened
2 cups sugar
2 large eggs
1/4 cup milk
1 teaspoon vanilla
cinnamon-sugar mixture

Steps:

  • Preheat oven to 375°.
  • Stir together flour, soda, cream of tartar and salt.
  • Beat butter for 30 seconds.
  • Add the 2 cups sugar and beat until fluffy.
  • Add eggs, milk and vanilla; beat well.
  • Add dry ingredients to beaten mixture, beating until well blended.
  • Form dough into 1-inch (or larger) balls - dough will be sticky.
  • Roll in mixture of cinnamon and sugar.
  • Place 2-inches apart on greased cooked sheet.
  • Flatten slightly with bottom of a glass.
  • Bake at 375° for 8-10 minutes until light golden and just beginning to crack on top.

1 large egg, room temperature

Steps:

  • Preheat oven to 375°. Cream butter and 1 cup sugar until light and fluffy; beat in egg and vanilla. 200g unsalted butter, softened
150g caster sugar
50g light brown soft sugar
2 tsp vanilla bean paste
300g plain flour
1½ tsp cream of tartar
1 tsp bicarbonate of soda
3 tbsp milk
3 tbsp caster sugar
1 tbsp ground cinnamon

Steps:

  • Heat the oven to 200C/180C fan/gas 6, and line a baking tray with baking parchment. Beat the butter and both sugars in a large bowl using an electric whisk for 2 mins until smooth and fluffy.
  • Add the vanilla and beat until combined, scraping down the sides once. Add the flour, cream of tartar, bicarbonate of soda and ¼ tsp salt, and mix until just combined. Stir in the milk to loosen the mixture.
  • For the topping, combine the sugar and cinnamon in a shallow bowl. Roll 40g of the dough into a ball. Roll the dough ball in the cinnamon-sugar mixture, then place it on the prepared tray and press it down lightly. Repeat with the remaining dough and topping, spacing the balls about 5cm apart.
  • Bake for 10-12 mins until golden and puffed up. Leave to cool on the tray for 5 mins, then transfer to a wire rack and leave to cool completely. Will keep in an airtight tin for up to four days.

2 cups packed brown sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
3 teaspoons ground cinnamon
2 cans (13.4 ounces each) dulce de leche
12 ounces white baking chocolate, chopped
1/3 cup heavy whipping cream
1 tablespoon light corn syrup

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend over sides by 1 in., In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Spread onto bottom of prepared pan., In a small bowl, mix sugar and cinnamon; sprinkle 2 tablespoons mixture over batter. Bake until edges are light brown, 25-30 minutes. Cool completely in pan on a wire rack., Spread dulce de leche over crust. In a small saucepan, combine white baking chocolate, cream and corn syrup; cook and stir over low heat until smooth. Cool slightly. Spread over dulce de leche. Sprinkle with remaining cinnamon sugar. Refrigerate, covered, at least 1 hour., Lifting with parchment, remove from pan. Cut into bars. Refrigerate leftovers.
