HONEY-DIJON ARCTIC CHAR RECIPE

Arctic char is a wonderful fish that benefits from a good seasoning paste. The honey-Dijon mixture coats the fish adding a nice depth of flavor.

4 arctic char fillets, 1 1/2 inches thick
1/4 cup/120 mL Dijon mustard
1/4 cup/120 mL honey
2 tablespoons/30 mL olive oil
3 cloves garlic, minced
2 teaspoons/10 mL fresh thyme
1 teaspoon/5 mL sea salt
1/2 teaspoon/2.55 mL white pepper
Juice of 1 small lemon

Steps:

  • Gather ingredients.
  • Rinse fish off in cold water and pat dry with paper towels. Place into a deep glass baking dish.
  • Combine mustard, honey, oil, garlic, thyme, lemon juice, salt, and pepper in a small bowl.
  • Using a spoon, coat fillets with mixture. Cover dish with plastic wrap and place into refrigerator for 30 to 40 minutes.
  • Preheat grill for medium-high heat. Right before placing the fish onto the grill, oil grill grates. This can be done by using a large pair of tongs, folded paper towels, and a high smoke point oil like grapeseed or avocado oils.
  • Place fish onto grill, skin side down, and cook for 5 minutes. Discard any extra marinade. Carefully, turn fish and cook for an additional 3 to 5 minutes. It is sometimes easier to use 2 heat-resistant spatulas to turn the fish. One to get underneath and the other to assist with turning.
  • When the flesh of the fish no longer appears shiny, flakes easily and reaches an internal temperature of 145 F, it is done. Carefully remove from grill, plate and serve.

2 lb. Swiss chard, rinsed
1/4 cup water
1/4 cup KRAFT Zesty Italian Dressing
1/2 cup chopped onions
1/4 cup GREY POUPON Dijon Mustard
12 cherry tomatoes, halved

Steps:

  • Chop chard stalks into 1-inch pieces; shred chard leaves. Microwave stalks and water in covered microwaveable dish on HIGH 3 min. Add shredded leaves; microwave 2 min.
  • Heat dressing in medium saucepan on medium-high heat. Add onions and mustard; cook and stir 3 min. Stir in tomatoes; cook 5 min., stirring frequently.
  • Add chard to saucepan; stir gently until blended.

1 1/4 pounds smoked kielbasa (Polish sausage)
Good olive oil
1/2 cup good mayonnaise, such as Hellmann's
2 tablespoons Dijon mustard
1 teaspoon whole-grain mustard
1 teaspoon prepared horseradish
Kosher salt and freshly ground black pepper

Steps:

  • Slice the kielbasa crosswise 1/2 inch thick diagonally. Heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan, add the kielbasa, and cook over medium-high heat for 5 to 6 minutes, turning occasionally, until the kielbasa is nicely browned on both sides.
  • Meanwhile, in a medium bowl, whisk together the mayonnaise, Dijon mustard, whole-grain mustard, horseradish, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Serve the kielbasa hot from the pan with small wooden skewers and a dish of the mustard sauce on the side for dipping.

2 1/2 tablespoons olive oil
2 small bunch scallions, chopped
2 small garlic cloves, finely chopped
1/2 lb mushroom, sliced
1 lb fresh chard leaves, finely shredded
1 tablespoon Dijon mustard

Steps:

  • Heat oil in a large skillet or wok.
  • Sauté the scallions and garlic for 2 minutes until softened and tender.
  • Add mushrooms and cook 4-5 minutes more.
  • Add chard, cover and cook over low heat for about 5 minutes or until chard is tender, but still crisp.
  • Mix in mustard and heat 1-2 minutes more. Serve.

Mom would prepare this for us often when fresh chard from Dad's garden was plentiful. When I finally wrote down the recipe, Mom couldn't give me exact measurements, as all good cooks are guilty of. I think this recipe is based on traditional Mennonite/Pennsylania Dutch fare, since my Dad was from that region. A blast from the past!

1 lb chard leaves, chopped coarsely (can substitute kale, spinach or other greens such as mustard or turnip)
2 -3 slices bacon
1/4 cup white vinegar
1 tablespoon white sugar

Steps:

  • Rinse and drain well the chard to remove grit. Cut away stems and discard.
  • Fry up bacon slices until crisp. Transfer to paper towel and drain. Let cool, then crumble. Set aside. Reserve bacon fat.
  • On medium-high heat in frying pan, add the vinegar and sugar to the bacon fat and bring to boil. Boil for about 30 seconds. Make sure not to burn; reducing heat if necessary.
  • Reduce heat to medium, add the chopped chard and sautè 2-3 minutes until slightly wilted but not slimy.
  • Add the crumbled bacon. Stir well to coat with the bacon dressing. Transfer to platter and serve warm.
