RASPBERRY LEMONADE

4 cups fresh lemon juice
3 cups sugar
1 bag frozen raspberries
Ice cubes, for serving

Steps:

  • Squeeze the lemons and pour the juice into a pitcher. Mix together the sugar with 3 cups water and stir to dissolve to make a syrup. Add the syrup to the lemon juice and top it up with 8 cups water. Taste to make sure it's sweet enough for you, and then add the raspberries. Mix the lemonade together and let chill in the fridge. (Keep in mind that the raspberries are tart, so be sure to sweeten enough!)
  • Fill mason jars with ice cubes and top them off with the lemonade.

CHAMPAGNE RASPBERRY LEMONADE



Champagne Raspberry Lemonade image

This is based off an old pink lemonade recipe. We like to use Ariel dealcoholized champagne so all can enjoy it. But you can also make it with regular champagne, and even pink champagne or Spumanti. Sparkling apple cider would work also, but the flavor would be different. Even sparkling Perrier water would be good in this. Just be sure to use something with "bubbles."

1 cup(s) fresh raspberries
1 cup(s) fresh lemon juice, divided
1 cup(s) superfine sugar
1 bottle(s) champagne or sparkling water
- lemon slices and raspberries for serving

Steps:

  • Put raspberries and 3 tablespoons of lemon juice into a blender, and purée until smooth. Place a fine mesh strainer over a bowl, and pour the purée through the strainer to remove seeds, pushing the purée through with a spoon.
  • Combine purée, remaining lemon juice, sugar and champagne or sparkling water in a pitcher; stir until sugar is dissolved. (You can add more lemon juice or sugar to taste.) Serve over ice, lemon slices and fresh berries with fruit-stacked skewers. Refrigerate any leftovers.

3 cups filtered or sparkling water
1¼ cups fresh lemon juice (from about 5 lemons)
1 cup Raspberry Syrup (see recipe)
Lemon wheels (for serving)

Steps:

  • In a large pitcher, stir together 3 cups filtered or sparkling water, 1¼ cups fresh lemon juice, and 1 cup Raspberry Syrup. Add 2 cups ice and stir for 20 seconds to mix and chill. Garnish with lemon wheels and serve in ice-filled glasses.

1 cup Champagne or sparkling water
1/4 cup limoncello liqueur
Crushed ice
2 tablespoons fresh raspberries or frozen raspberries, thawed

Steps:

  • In a small pitcher, combine the Champagne and limoncello. Place a spoonful of crushed ice into each of 2 Champagne glasses and top with raspberries. Pour the Champagne mixture over the ice and raspberries. Serve immediately.

RASPBERRY CHAMPAGNE COCKTAIL

2 cups raspberry juice or 1-1/2 cup fresh raspberries
1 cup water
2 Tbs. superfine sugar
lemon peel twists
2 bottles Champagne

Steps:

  • If you can't purchase fresh raspberry juice, make your own by blending fresh raspberries with water and sugar and straining to remove seeds. Fill ice cube trays with raspberry juice, garnishing each with a lemon twist and freeze until solid. To serve, place one raspberry cube in a champagne flute and fill with champagne.
