BASIC BANANA OAT BABY COOKIES

Basic Banana baby cookies, an easy baby led weaning recipe, healthy baking, breakfast or snack, a soft finger food for babies

1 tablespoon chia seeds
2 tablespoon water
350g banana (approx 2.5 medium bananas)
1/2 tsp vanilla
1 1/4 cup oats
1/2 cup plain flour

Steps:

  • Pop the chia seeds into the water and leave to stand for 10-15 minutes (they should begin to gel in this time)
  • In a medium bowl mash the banana
  • Stir through the soaked chia seeds and vanilla
  • Add the oats, and flour, mix well. This should form a cookie dough with a quite a moist sticky texture.
  • Use a tablespoon to scoop the mixture, place dollops onto a baking paper lined tray. The mix will be quite sticky so forming perfect shapes will be tricky. I find damp hands is a good idea with this mix, (I get 20 tablespoons from this recipe), place the balls on a lined baking tray
  • Bake at 180 degrees Celsius (approx 360 F) for 25-30 mins, allow to cool
  • The cookies should have a soft texture
  • Store in an airtight container for 2-3 days, or freeze for up to 3 months and thaw as needed

3 ingredients are all you need to make these soft and delicious vegan banana oatmeal cookies. They are the perfect breakfast or snack for babies!

1 cup (100g) rolled oats total - 1/2 cup (50g) ground into flour, and 1/2 cup (50g) stir in to the batter
1 cup (240g) ripe banana, about 2 medium banana
1/2 teaspoon cinnamon
1/4 cup smooth peanut butter, natural-style
1/2 cup (48g) grated carrots
1 tablespoons finely chopped walnuts
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Prepare a cookie sheet by either lining with parchment paper or lightly greasing it. Set aside.
  • Add 1/2 cup of rolled oats to a food processor or blender and blend into a flour. You can also use oat flour if you have it.
  • In a large bowl, combine all the ingredients.
  • Scoop the batter using a large spoon and transfer to prepared cookie sheet. They won't change shape during cooking so be sure to form into the shape you want them. You'll end up with 8-9 cookies.
  • Bake for 10-12 minutes. Remove from oven and cool on a wire rack.

2 tablespoons shortening
1/2 cup sugar
1 egg
1 tablespoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons vanilla
1 teaspoon water
1 1/2 cups infant cereal

Steps:

  • Preheat oven to 300 degrees.
  • Cream together shortening and sugar.
  • Add eggs, baking powder, salt, vanilla, and water.
  • Mix until well blended.
  • Gradually stir in cereal.
  • Knead until smooth.
  • Shape into 12 cookies or bars with your hands.
  • Place on an ungreased sheet.
  • Bake 20-30 miuntes or until dry.
  • Store uncovered overnight.
