6 large celery stalks, ends trimmed off and cut into 4 pieces, see note 1
4 ounces cream cheese, about ½ cup (120 grams)
½ small red onion, (about ¼ cup chopped)
¼ cup pecans (25 grams)
⅓ cup pecorino cheese powder (35 grams), see note 2
paprika, for sprinkling
black pepper, for sprinkling

Steps:

  • In a food processor, process cream cheese, onion, pecans and pecorino.
  • With a spoon, fill each celery cavity with a cream cheese mixture.
  • Sprinkle with paprika and black pepper and serve!

3 tablespoons milk
1/4 cup prepared horseradish
1/2 teaspoon kosher salt (or more)
1 bunch celery, cut into 3-inch sticks
walnuts, chopped very fine
black pepper, for garnishing

Steps:

  • With an electric mixer on medium, beat the cream cheese, milk, horseradish, and salt for 3 minutes. (You can be refrigerated for up to 24 hrs).
  • Mix the spread with chopped walnuts and then spread mixture on the celery sticks.
  • Sprinkle with black pepper.

My grandma always made stuffed celery at Thanksgiving and Christmas. As kids, we were always so hungry before the holiday meal we would sneak and get a piece of celery to curb our appetite. It was nearly all gone by meal time and we always got fussed at with hint of a grin from Grandma. Now I never have holiday meals without it!

1 bunch celery - large stalks washed, trimmed, and cut into 3 sections
2 (8 ounce) packages cream cheese at room temperature
¾ cup chopped pimento-stuffed green olives
2 cloves garlic, finely minced
1 pinch salt and freshly cracked black pepper to taste

Steps:

  • Thoroughly dry each piece of celery with paper towels. Mix the cream cheese, olives, garlic, salt, and black pepper in a bowl. Using a knife, spread a generous amount of cream cheese filling down the center indentation of each celery piece. Serve immediately or refrigerate.

1 bunch celery (2 1/2 pounds)
One 8-ounce package cream cheese, room temperature
2 tablespoons prepared horseradish, or more to taste
5 drops Tabasco or favorite hot sauce, or more to taste
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Separate the celery stalks. Rinse them free of grit, and peel to remove strings if desired. Cut the stalks into 3- to 4-inch pieces, leaving the tender inner stalks whole. Wrap celery sticks in a damp cloth, and chill for 1 hour before serving.
  • In a small bowl, combine the cream cheese, horseradish, and Tabasco. Season with the salt and pepper. Serve the cream cheese mixture with celery.

Cayenne pepper

Steps:

  • In a small bowl, mix 2 ounces each of blue cheese and cream cheese until smooth. With a small spoon or knife, stuff 6 large celery stalks, rinsed and dried, with cheese mixture.
  • Crumble another 2 ounces blue cheese on top, and sprinkle lightly with cayenne pepper. Cut stalks in half, if desired.
