CAESAR'S PASTA SALAD

Steps:
- For the croutons: Preheat the oven to 400 degrees F.
- On a small rimmed baking sheet, toss the cubed bread with the olive oil, Parmesan and salt. Bake until golden brown and crispy, about 15 minutes.
- For the dressing: Meanwhile, in a large bowl, whisk together the Parmesan, buttermilk, yogurt, olive oil, salt, pepper and garlic. Set aside to let the flavors marry for 5 minutes.
- For the salad: Remove the cloves of garlic from the dressing and discard. To the bowl of dressing, add the lettuce, corn, pasta and croutons. Toss well to coat.
PASTA CAESAR SALAD
Steps:
- Cook the pasta to al dente in salted water according to the package instructions. Drain and rinse in cool water until pasta is cool. Drain well. Set aside.
- In a large bowl, toss the hearts of romaine with the pasta, dressing, parmesan cheese, and croutons. Add additional dressing, if desired. Add salt and generous amounts of freshly cracked black pepper to taste. Toss again and serve immediately.

This Caesar Pasta Salad is scrumptious and makes for an easy weeknight family meal. It has all the creamy goodness of a classic caesar salad, but more exciting with pasta and avocado.

- Cook pasta in salted water according to package instructions until al dente. Rinse in cold water and set aside to drain.
- Rinse, chop and spin the romaine lettuce dry using a salad spinner. If you don't have a salad spinner, pat dry with a clean towel. The dressing will coat the salad much better if the lettuce isn't wet. Transfer lettuce to a large mixing bowl. Toss in the pasta, diced avocado, and halved tomatoes.
- Add the Caesar Dressing to really boost the flavor of this salad. Toss to evenly coat the lettuce. Add the dressing to taste. Sprinkle with parmesan and croutons.

- Bring a large pot of salted water to a boil over medium heat. Add the pasta and stir gently. Boil uncovered, stirring occasionally until al dente, about 8 minutes. Remove from the heat. Drain well and rinse with cold water.
- In a large bowl, combine the Caesar dressing, lemon zest, lemon juice, parsley, Parmesan and pepper. Add the croutons, and cooked cooled pasta. Mix until all of the pasta is coated with the dressing. Transfer to a serving bowl and serve. This pasta salad can be made a day ahead, just reserve the croutons and add them 15 minutes before you are ready to serve.

Obviously you can use regular pasta and full-fat Ceasar salad dressing, but personally I LOVE it just like this!

- 1. Prepare pasta according to package directions; drain. Rinse with cold water. Place in a bowl. Set aside. Meanwhile, chop eggs, red onion, chicken and bell pepper. Grate Parmesan cheese with grater. Snip parsley. Add eggs, onion, tomato, pepper, Parmesan cheese and parsley to pasta. Pour salad dressing over pasta mixture; mix well. Stack 3-4 lettuce leaves on top of each other; cut into thin shreds. To serve, line a bowl with lettuce. Spoon pasta salad into center of bowl.
