POOR MAN'S CAVIAR: EGGPLANT SPREAD



Poor Man's Caviar: Eggplant Spread image

1 medium, firm eggplant
1 clove garlic, cracked away from the skin
2 pinches ground allspice
Coarse salt and black pepper
1 handful flat-leaf parsley tops
A drizzle extra-virgin olive oil
1 whole grain baguette or other long crusty bread, sliced at bread counter

Steps:

  • Preheat oven to highest setting, at least 500 degrees F.
  • Cut 2 or 3 slits into whole eggplant. Place eggplant directly on the oven rack in the middle of the oven and roast the eggplant until it is tender, about 20 minutes. Keep the slits facing up so that the eggplant does not loose liquids as it roasts.
  • The roasted eggplant will look like a flat tire when you remove it from the oven. Using a sharp utility knife, carefully peel skin away from eggplant flesh. Add cooked eggplant flesh and juice to food processor and combine with garlic, allspice, salt, and pepper and parsley. Pulse grind the eggplant into a paste, add a drizzle of olive oil. Transfer to a serving dish. The seeds of the eggplant will make the spread resemble caviar eggs, and so the name: poor man's caviar.
  • To serve, surround a bowlful of spread with crusty bread rounds.
  • Tidbit: Mixed olives and selections of Italian sheep's milk cheeses are suggested accompaniments to this menu to round out your buffet. They require no recipe or preparation and add something to the offering overall. Place them on the buffet near the eggplant caviar and bread.

1 potato
8 slices white sandwich bread
2 cups milk
½ cup carp roe
1 small onion, chopped
¼ cup fresh lemon juice
½ cup olive oil, or more if needed
2 Greek olives

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Prick the potato in several places with a fork and place on a baking sheet.
  • Bake the potato in the preheated oven easily pierced with a fork, 50 minutes to 1 hour. Cool completely in refrigerator. Peel and chop.
  • Place the bread slices in a shallow dish; pour the milk over the bread to cover completely. Allow to soak a few minutes before squeezing as much moisture as possible from the bread, discarding the milk.
  • Blend the bread, potato, carp roe, onion, lemon juice, and olive oil together in a food processor until fluffy, about 1 minute. Add more olive oil if needed to reach a desired consistency; chill. Garnish with the Greek olives to serve.

1 (250 g) package cream cheese, softened
1 tablespoon lemon juice
1 -2 teaspoon grated onion
1 teaspoon prepared horseradish
2 tablespoons red caviar (lumpfish)

  • Flake salmon, discarding skin and bones.
  • Combine cream cheese, lemon juice,onion and horseradish.
  • Add salmon and half the caviar.
  • Mix well, spoon into serving dish and top with remaining caviar.

1/2 cup sour cream
2 ounces red caviar

  • Mix first six ingredients together with a fork just until mixture holds together.

3 hard-boiled eggs
Salt and pepper
1 medium cucumber
Two 4-ounce jars caviar
One 8-ounce package cream cheese
1 small bunch green onions, finely sliced
3/4 cup mayonnaise
Green onions, chopped, for garnish

Steps:

  • Finely chop the eggs; season with salt and pepper to taste. Peel, seed and chop the cucumber. Blot with paper towels to remove excess moisture. Reserve 1/2 cup of caviar for the garnish.
  • In an 8-inch round serving dish, layer the ingredients in the following order: cream cheese, caviar, eggs, sliced green onions, cucumber, and mayonnaise. Garnish with chopped green onions and the reserved caviar; you can make a pretty pattern with the caviar. Serve with crackers.

This eggplant caviar spread (ikra) recipe is loaded with roasted eggplants, bell peppers, and other sauteed vegetables. It makes a great side or appetizer!

6 eggplants
7 red bell peppers
1/2 cup olive oil
1 onion (chopped)
4 to matoes
3 garlic cloves (minced)
4 tsp salt

Steps:

  • Place the eggplants and red bell peppers onto a baking sheet lined with foil. Puncture the eggplant with a fork a few times to avoid it from popping and making a huge mess in your oven.
  • Bake at 360 Fahrenheit for 50 minutes.
  • Once the eggplant and bell peppers have cooled down a little, remove the skin from both the vegetables. Then remove the seeds form the bell peppers.
  • Place both pealed vegetables into a food processor and blend until no more chunks appear.
  • Heat olive oil in a large pan over medium high heat and add in the chopped onion. Keep stirring until the onion becomes golden in color.
  • Add in the chopped tomatoes and stir for about 5 minutes.
  • Add in the processed vegetables and minced garlic, then season with salt. You may want to add more salt depending on your liking. Stir the vegetable mixture for another 5 minutes over low heat to let the flavors blend together.
  • Remove from heat and let it cool down to room temperature before storing the spread into jars.
