Number Of Ingredients 9

Ingredients:
1 cup of canola or other light tasting oil
1 cup of flour
6 eggs
1/8 tsp salt
Icing
1 c confectioner's sugar
2 Tbsp milk (or as needed)
1 tsp vanilla

Steps:

  • Directions: Mix the oil, flour and salt together well. Beat in 1 egg at a time well for a total of 20 minutes. Grease muffin tins. Pour and fill 1/2-3/4 full. Makes 12- 15. Bake in preheated oven 450 until they fully rise. Reduce heat to 400 and bake until golden (approx 20 minutes more) Icing: In a small bowl make the icing by combining the confectionery sugar with milk and vanilla. It should be smooth with the consistency of thick whipped cream. When the cavacas are done, remove them from the tins after cooling slightly. Drizzle the topping over while they are still warm.

9 large eggs, room temperature
1/2 cup milk
7 ounces vegetable oil
2 cups all-purpose flour
vegetable oil, for baking dishes
10 tablespoons icing sugar, sifted
3 tablespoons hot water

Steps:

  • Preheat oven to 350F and grease 24 muffin tins.
  • Beat the eggs thoroughly, then mix in the milk and oil. Once mixed, add the flour and blend until well combined.
  • Place 1 teaspoon of oil in each tin, then pour 1 tablespoon of the batter in each tin.
  • Bake for 35 - 40 minutes. Let cool slightly, then brush the cavacas with the icing. Let the icing harden before serving.
  • Icing: Mix the 10 tablespoons of icing sugar and the water to a thick consistency. Add more sugar or water as needed.

CAVACAS BATTER
- 2 cups of flour
- 1 cup of oil
- ½ cup of milk
- 8 large eggs at room temp
SUGAR GLAZE:
- 2 cups of confectioner's sugar
- zest of one lemon
- 2 tablespoons of milk (more or less depending on the thickness you like)

Steps:

  • Preheat oven to 350 degrees and grease regular size muffin tins or popover tins.
  • Using an electric mixer beat all ingredients for 20 minutes without stopping, I recommend using a stand mixer set on level 6.
  • Once the ingredients have been mixed for 20 minutes fill the muffin or popover tins half full (no more than that).
  • Bake on the middle rack for about 45 minutes; if you want the CAVACAS to be on the dry side bake for 1 hour. They will turn a golden color and "popover" the pans. There are many Cavacas recipes that come from the 9 islands that make up the Azores island group just off the west coast of Portugal. Most families have their own favorite recipe, some light and airy and some with a more robust flavor. This is an easy (and delicious) recipe to start with. You can change the icing flavor if you wish, and use extracts in place of the lemon zest and lemon juice. Cherry and vanilla are good. But the lemon icing is great, too.

POPOVERS
2 cup(s) all-purpose flour
1 cup(s) oil
1/2 cup(s) milk
8 large eggs, room temperature
1/2 teaspoon(s) vanilla extract
SUGAR GLAZE
2 cup(s) confectioner's sugar
1 tablespoon(s) lemon juice
1 medium lemon, zested
2 tablespoon(s) milk (approximate)

Steps:

  • Preheat oven to 350°F. Thoroughly grease regular size muffin tins (any sticking can ruin the entire popover); set aside.
  • Using an electric mixer, beat the flour, oil, milk, eggs and vanilla on medium-high for at least 20-25 minutes without stopping. Fill 24 greased muffin cups about half way.
  • Place muffin pan on the middle rack in preheated oven, and bake for 45-50 minutes without opening the oven door during baking (or they will collapse). Cool slightly in pan. When cool enough to handle, gently remove popovers from the muffin pan.
  • Stir together the confectioner's sugar, lemon zest and milk until smooth. Spread or drizzle the glaze on the top of each popover while they're still slightly warm.

  • Preheat the oven to 350 degrees F.
  • Using an electric mixer, whip together the eggs and oil until they are very well blended. Sift the salt into flour and gradually add to the egg batter. Continue with the electric mixer and beat on medium speed for about 15 minutes.
  • Generously oil the popover or muffin tins. Pour the batter in so that it fills each cup about ½ full.
  • Place the pans into the oven and bake the cavacas for about 45 minutes without opening the door during the entire baking process otherwise the muffins may collapse.
  • In a small bowl make the icing by combining the confectionary sugar with ?milk and vanilla. It should be smooth with the consistency of thick whipped cream.
  • When the cavacas are done, remove them from the tins after cooling slightly. Drizzle the topping over while they are still warm.

  • Bake for 20 minutes. Let cool slightly, then drizzle the cavacas with the icing sugar. Let the icing harden before serving.
