This crispy crunchy salad captures the flavor of seven-layer salad with a few less layers and fuss. This is one of my family's most-requested recipes.

Number Of Ingredients 7

1 head iceberg lettuce, torn
1 small head cauliflower, broken into florets
3/4 pound sliced bacon, cooked and crumbled
1/4 cup finely chopped red onion
1/4 cup sugar
1/4 cup grated Parmesan cheese
1 cup mayonnaise

Steps:

  • In a large bowl, layer lettuce, cauliflower, bacon, onion, sugar and cheese. Spread mayonnaise over the top; do not toss. Cover and chill for 2 hours or overnight. Toss just before serving.

1 lb bacon, cooked,cooled and crumbled
1 head romaine lettuce, torn into bite size pieces
1 small onion, chopped (can use spring onions or red onion)
1 head cauliflower, uncooked,tear cauliflower into bite size pieces
2 cups Miracle Whip
1/2 cup sugar
1/2 cup parmesan cheese

Steps:

  • To crumble the bacon put it into a small ziplock bag and put in fridge after 10 minutes take it out and crush it still in bag, works well.
  • Put lettuce onion and cauliflower into large salad bowl put bacon on top.
  • Mix three ingredients for dressing.
  • Pour over salad when ready to eat.

There are many combinations for Cauliflower Salads, this particular version is the favorite in our area. A delicious make ahead, perfect for potlucks and family gatherings. Great salad to add to the holiday table. For those special occasions I serve this in a cut glass bowl ... making it look as good as it tastes. I have been known to add slivered almonds to make for extra crunch! This salad requires at least eight hours mellowing time ... best made the night before ... that is a big plus when you are cooking for a crowd!

1 cup mayonnaise (I use Hellmans)
3 tablespoons parmesan cheese (grated)
2 tablespoons sugar
1 medium head cauliflower
1 medium head lettuce
1 medium red onion
1/2 cup bacon bits (best you can find)

Steps:

  • In a small bowl: mix the mayonnaise, grated Parmesan cheese and sugar to make the dressing and set aside.
  • In large bowl: break cauliflower into florets, tear lettuce into bite size pieces, red onion thinly sliced, add the bacon bits.
  • Pour dressing over the salad, cover and refrigerate.
  • Toss before serving.

I've had this recipe for many years. It was given to me by two Amish sisters who lived in the tiny community where I grew up.

1 lettuce head
1 cauliflower head
1 medium sweet onion
2 c mayonnaise
1/4 c sugar
1 Tbsp vinegar
1 lb bacon -cooked and crumbled
1/2 c parmesan cheese
salt and pepper to taste

Steps:

  • 1. Tear up lettuce and put in the bottom of a large bowl. Break up cauliflower into bite size peices and add on top of lettuce, onion on cauliflower and bacon on onion. In a small bowl, mix mayo, sugar, vinegar, salt and pepper to taste. Stir until sugar is disolved. Spread on top of bacon then sprinkle parmesan cheese on top. DO NOT MIX until ready to serve.
