GRILLED CHEESE with CAULIFLOWER "BREAD" -- a delicious low-carb, keto-friendly lunch or dinner idea! Use any cheese you like. Video how-tos.

1 14-ounce (400 grams) package of finely chopped cauliflower crumbs
1 lightly beaten egg
1/2 cup shredded mozzarella
1/2 teaspoon garlic powder
salt and pepper
cooking spray
4 to 6 American cheese slices
butter (optional)

Steps:

  • Preheat oven to 450 degrees F.
  • Steam the cauliflower in the bag according to package directions. (Cauliflower should be soft, not tender, so if necessary, add an additional minute of microwave time.) Let the cauliflower cool to the touch. Pour the cauliflower in the center of a dish towel or cheese cloth. Over a bowl, squeeze out as much of the liquid from the cauliflower as possible. (I got about a cup of liquid.) Discard the liquid.
  • Pour the dried out cauliflower in a bowl. Add the remaining ingredients and mix well.
  • Line a baking tray with parchment paper and spray the parchment paper with olive oil cooking spray. Shape four rectangles from the cauliflower mixture on the baking tray, about 3 1/2 by 5-inches and 1/4-inch thick. Bake for 15 minutes until gorgeously golden brown. Cool for 10 to 15 minutes on the tray.
  • To make the grilled cheese, heat butter OR cooking spray in a skillet over medium heat. Place a piece of cauliflower "bread" in the skillet. Add 2 to 3 slices of cheese, and top with another piece of "bread." Heat for several minutes per side until the cheese is melted.
  • Makes two sandwiches.

1 head cauliflower
1 egg
1/2 cup parmesan cheese
1 teaspoon garlic powder
4 -8 slices cheddar cheese

Steps:

  • Add cauliflower florets to a food processor and blend until it reaches a rice consistency.
  • Transfer cauliflower rice to a microwave safe bowl and microwave 5 minutes at a time 4 times, stirring in between. This will help to draw out the moisture. Allow the microwaved rice to cool for about 30 minutes, until cool to the touch.
  • Combine cauliflower rice with egg, parmesan and garlic powder.
  • Divide mixture into 4 portions.
  • Flatten out each portion into a ¼-1/2" square "bread" shape on a baking sheet lined with parchment.
  • Bake at 450 Fahrenheit for 15-20 minutes, until golden brown. Allow to cool for 15 minutes before removing pieces from the pan.
  • Use a spatula to remove the cauliflower bread and assemble sandwiches. Place 1-2 slices of cheese in between two slices of cauliflower bread.
  • Place in a toaster oven for 5-10 minutes on broil until the cheese is melted and bread is toasty.

1 head cauliflower
1 pinch salt
2 eggs
½ cup vegetarian parmesan cheese, grated
¼ cup fresh basil, chopped
1 teaspoon garlic powder
1 teaspoon dried oregano
½ teaspoon red pepper flakes
cheese, of your choice
additional topping, of your choice

Steps:

  • Grate a cauliflower over a large bowl.
  • Sprinkle a pinch of salt over the grated cauliflower and mix evenly. Leave to sit for 20 minutes.
  • Pour the cauliflower into a clean kitchen towel and wring the water out.
  • In a large bowl, combine the cauliflower, and remaining ingredients, (except your cheese and toppings) stir until well mixed.
  • Using a spoon transfer two hearty scoops of mixture to form each "bread slice" onto a skillet on medium-low heat for about 10 minutes, each side.
  • Add your cheese and any other toppings, allow a couple minutes for cheese to melt.

20 ounces cauliflower rice (about 6 cups)
2 eggs
1/3 cup parmesan cheese, grated
1 teaspoon kosher salt
1 teaspoon black pepper
1 1/4 cups shredded cheddar cheese

Steps:

  • Preheat an oven to 450 degrees.
  • Add the cauliflower rice to a large microwave safe. Cover with plastic wrap and microwave for 6-8 minutes. Stir every two minutes until the cauliflower is cooked through.
  • When cool enough to handle, place the cauliflower in a clean kitchen towel and wring out the excess liquid.
  • To a bowl add the cooked cauliflower rice, eggs and grated parmesan cheese. Season with salt and pepper and mix until the ingredients are thoroughly combined.
  • Lightly spray a parchment paper lined sheet tray with nonstick cooking spray.

1 small cauliflower head, cut into florets (should yield approximately three cups of cauliflower rice)
1 tablespoon olive oil, plus extra to grease
1 free-range egg, lightly beaten
1 ounce grated parmesan cheese
1 ounce grated cheddar cheese
1/4 teaspoon fine sea salt
1 tablespoon butter, room temperature
3 ounces cheddar cheese

Steps:

  • Preheat oven to 450°F.
  • Line a baking sheet with parchment paper and liberally grease it with olive oil. Set aside.
  • 3. In a food processor, rice the cauliflower florets until they are a fine crumb.
  • . Heat the olive oil in a large frying pan on a low-medium heat. Add the cauliflower rice (about three cups) and cook for 10 to 15 minutes, stirring continually or until soft. You want the water to evaporate as much as possible from the cauliflower without developing color. The cauliflower rice needs to be dry, otherwise you'll end up with mushy dough.
  • Transfer the cauliflower rice to a mixing bowl, add egg, Parmesan, comté, salt, and mix well, then spread the mixture onto the lined baking sheet and shape into four bread squares. Place the baking tray in the oven and bake for about 12 to 15 minutes, or until golden.
  • Remove and let cool for ten minutes, then gently peel them off the parchment paper.
  • . Heat a pan over medium heat. Butter one side of each slice of the cauliflower bread and place the buttered side down on the pan.
  • Cover the bread liberally with your chosen cheese, plus gherkin or jalapeño (if using) and top with the remaining slice of cauliflower bread, buttered side up.
