When you need a warming bowl of soup, this slimming friendly Cauliflower and Broccoli Soup is just the ticket - perfect if you're calorie counting or following a plan like Weight Watchers.

½ head cauliflower (cut into florettes)
½ head broccoli (cut into florettes)
2 vegetable stock cubes (or chicken if you prefer)
1 litre water
½ onion (chopped roughly)
35 g danish blue (optional)
sea salt
freshly ground black pepper
low calorie cooking spray

Steps:

  • Spray a pan with low calorie cooking spray, then sauté the onion until it starts to soften.
  • Chop up the cauliflower and broccoli into florets, then add these to the pan.
  • Pour in the water, then add the stock cubes.
  • Bring to the boil, stir, then cover and simmer for 25-30 minutes.
  • Remove from the heat, then blitz until smooth using a stick blender.
  • Check the seasoning and add a little salt and pepper if necessary. Serve on its own, or sprinkled with a little Danish Blue or Stilton.

Delicious soup to use leftover broccoli or cauliflower. I have used both - alone and together. It's easy and 0 point if you are following the Weight Watchers plan!

6 cups water
5 cups cauliflower or 5 cups broccoli
2 cups carrots
1/2 cup onion
1 teaspoon dried oregano
1 teaspoon dried basil
4 chicken bouillon cubes or 4 tablespoons chicken bouillon powder
salt & pepper

Steps:

  • Dice cauliflower and/or broccoli.
  • Slice 2 cups carrots, chop 1/2 cup onion.
  • In a 5 quart saucepan, add all ingredients except salt and pepper.
  • Cover and simmer until vegetables are tender (about 20 minutes).
  • Strain off and reserve most of the liquid. Place vegetables in a food processor and puree. {OR mash vegetables, still in pan with potato masher til of desired consistency}.
  • Add pureed vegetables and reserved liquid (if you wish for a more liquid soup) back into the pot.
  • Add salt and pepper and re-heat.

2 carrots, chopped
2 celery ribs, chopped
1 onion, chopped
1 garlic clove, minced
4 cups vegetable broth
1 (28 ounce) can tomatoes, diced
2 bay leaves
1 tablespoon basil, dried
1 teaspoon oregano, dried
1/2 teaspoon red pepper flakes, crushed

Steps:

  • Place all ingredients in the crockpot and cook on high for 5 hours or on low for 8-10 hours. Remove bay leaves.

My boss brought this soup to the office one fine day and I was hooked on it from the first taste. It is a snap to make and the flavors are mild, yet very distinct. My kids loved it the first time I made it at home and it instantly became known as 'Tim Perry's Soup.' You might like a stronger curry flavour or a creamier soup, so adjust the seasonings to your taste. It's ready within the hour, but the longer it simmers the better the flavor. Serve with crusty bread and butter.

1 quart chicken broth
1 onion, finely chopped
1 head cauliflower, finely chopped
½ head broccoli, finely chopped
1 teaspoon curry powder
1 tablespoon chicken bouillon granules
salt and pepper to taste
¼ cup all-purpose flour
½ cup milk
2 cups shredded Cheddar cheese

Steps:

  • In a stockpot, combine chicken broth, onion, cauliflower, and broccoli. Bring to a boil and reduce heat to low. Continue to simmer until vegetables are tender. Season with curry powder, chicken bouillon, salt, and pepper.
  • In a bowl, combine flour and 1/2 cup of the milk. Whisk briskly until there are no lumps. Add mixture to soup, stirring continuously as soup thickens. Stir in Cheddar cheese until completely melted.

2 garlic cloves, minced
1 onion, diced
2 carrots, peeled and diced
1 red bell pepper, diced
2 zucchini, diced
2 cups cabbage, shredded
2 cups swiss chard, chopped
2 cups broccoli, cut into florets
2 teaspoons thyme, chopped (or 1/2 teaspoon dried thyme)
6 cups vegetable broth
2 tablespoons parsley, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons lemon juice (optional)

Steps:

  • Put first 12 ingredients (garlic - broth) in a large pot. Cover and bring to a boil over high heat; reduce heat to a simmer and simmer partly covered for 10 minutes or until vegetables are tender. Leave veggies whole or I use an immersion blender and puree a bit -- leaving some veggie chunks.
  • Stir in parsley and season with salt, pepper and lemon juice.
