Time 1h25m

Yield 8 servings

Number Of Ingredients 24

Unsalted butter, for the ring mold
1/4 cup breadcrumbs
4 cups low-sodium chicken broth
1 1/2 teaspoons kosher salt
3 cups arborio rice
1/2 pound smoked mozzarella, grated or diced
1/2 pound Taleggio cheese, torn into small pieces
2 cups freshly grated Parmesan
2 cloves garlic, chopped
3/4 cup heavy cream
1 teaspoon freshly ground black pepper
2 bunches scallions, chopped
2 tablespoons freshly squeezed lemon juice (from 1 lemon)
One 24.5-ounce bottle tomato puree, such as Mutti
1/2 cup mascarpone
3/4 teaspoon kosher salt
3 sprigs fresh basil
One 2-inch Parmesan rind
2 tablespoons olive oil
1 shallot, chopped
One 10-ounce bag frozen peas
1/2 teaspoon kosher salt
1/3 pound thinly sliced prosciutto cotto
Italian parsley sprigs, optional

Steps:

  • For the rice: Preheat the oven to 425 degrees F.
  • Butter the inside of a 10-inch nonstick ring mold very well all the way to the top. Coat the inside with the breadcrumbs, tapping out the excess, and set aside.
  • Add the chicken broth to a medium saucepan along with the salt and 1 cup water. Bring to a boil over high heat. Add the rice and cook, stirring often, until the liquid is absorbed, the rice is just under al dente and the mixture is creamy, about 10 minutes.
  • Place the mozzarella, Taleggio, Parmesan and garlic in a large bowl. Add the hot rice to the cheese mixture. Using a rubber spatula, stir well to combine until the cheeses are melted. Add the cream to moisten. Fold in the black pepper, scallions and lemon juice. Spoon the rice mixture into the prepared ring mold and press down to pack it in tightly. Place on a rimmed baking sheet and bake until lightly browned on top and bubbly, about 25 minutes.
  • For the sauce: Meanwhile, combine the tomato puree, mascarpone, salt, basil and Parmesan rind in a medium skillet and bring to a simmer over medium heat. Simmer, stirring often, for about 15 minutes. Keep warm to serve.
  • For the peas: Heat a medium skillet over medium-high heat. Add the oil and shallots to the skillet and cook until fragrant and beginning to soften, about 3 minutes. Add the peas and salt and cook until bright green and warmed through, another 5 minutes. Keep warm.
  • To finish: Let the rice mold cool slightly for 10 to 15 minutes. Place a large, flat plate over the top of the mold and, using a kitchen towel as hot pads, carefully invert the rice onto the plate. Cover the entire rice ring with the slices of prosciutto cotto, leaving the hole open in the center. Spoon some of the peas into the center and decorate with Italian parsley sprigs, if using. To serve, use a serrated knife to cut slices. Serve with the peas and sauce.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 10

1 1/4 cups sushi rice
2 teaspoons matcha (green tea powder)
Kosher salt
10 sheets roasted seaweed snacks (one 0.18-ounce package)
1 tablespoon rice vinegar
1/2 teaspoon sugar
3 tablespoons chopped pickled ginger
2 scallions, thinly sliced (white and green parts separated)
1 tablespoon toasted sesame oil
1 tablespoon toasted sesame seeds

Steps:

  • Put the rice in a fine-mesh sieve and rinse under cold water, stirring with your hand, until the water runs clear. Shake well to remove as much water as possible. Set the sieve over a bowl to continue draining, 5 minutes.
  • Transfer the rice to a medium saucepan and whisk in 1 3/4 cups water, the matcha and 1 teaspoon salt. Bring to a boil, then immediately reduce the heat to low. Cover and cook until the water is absorbed and the rice is tender, about 20 minutes. Remove from the heat and let sit, covered, 10 minutes.
  • Meanwhile, cut the seaweed snacks into matchsticks with kitchen shears. Mix the vinegar and sugar in a small bowl until dissolved.
  • Fluff the rice and gently fold in the vinegar-sugar mixture, pickled ginger, scallion whites, sesame oil, 2 teaspoons sesame seeds and salt to taste. Divide among bowls and top with the seaweed snacks, scallion greens and remaining 1 teaspoon sesame seeds.

1 cup Magic Mineral Broth (page 54)
1/2 teaspoon sea salt

  • Preheat the oven to 375°F.
  • Drain the rice in a fine-mesh sieve and rinse well under running cold water. Put the rice in a 2-quart casserole dish or other baking dish with a fitted lid. Pour the tea and broth over the rice, add the salt, and carefully stir. Cover and bake for 40 to 60 minutes, until the rice is tender and has absorbed all of the moisture. Fluff with a fork, then add the scallions and fluff again.
  • variation
  • If you'd rather cook this dish on the stovetop, here's how: Bring the tea and broth to a boil in a saucepan, then stir in the rice and salt. Lower the heat, cover, and simmer for 25 minutes. Check the rice, and if there are steam holes in the top, it's ready; if not, cook for about 5 minutes more. Remove from the heat, fluff with a fork, then add the scallions and fluff again. This recipe also works well in a rice cooker; just add all of the ingredients and press the cook button.

  • WHO KNEW? Copper Calamaties
  • When a well runs dry, it only makes sense to dig a new well if you're looking for life-sustaining water. Similarly, cancer tricks the body into constantly growing new blood vessels so it can have a continuous supply of energy. This process, called angiogenesis, is driven by enzymes that have one nutrient in common: copper. Drive copper levels down, says Dr. Jeanne Wallace, who specializes in cancer and nutrition, and you may slow cancer growth. Her advice? "You don't want to be cooking your food in copper kettles, wearing copper jewelry, taking supplements high in copper, or eating the foods that are elevated in copper, such as organ meats and shellfish." Don't worry about copper pennies; if they were made after 1982, they're really 97.5 percent zinc.
