1 small onion, diced
½ red bell pepper, chopped
1 pound ground beef
1 teaspoon minced garlic
1 teaspoon chili powder
¼ teaspoon cayenne pepper

½ cup frozen corn
1 cup shredded Mexican cheese blend, divided, or more to taste
1 cup salsa
1 cup cornmeal
¾ teaspoon salt
½ teaspoon baking soda
1 cup milk
2 eggs, beaten

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat olive oil in a skillet over medium-high heat. Add onion and red bell pepper; saute until softened, 5 to 7 minutes. Add ground beef, garlic, chili powder, cayenne pepper, salt, and black pepper. Cook and stir until beef is browned and crumbly, 5 to 7 minutes.
  • Mix corn into the beef mixture and toss to defrost, about 3 minutes. Drain and discard fat. Add about 1/4 of the shredded Mexican cheese blend and mix well. Pour meat sauce into a 9x13-inch casserole dish. Cover meat with a thin layer of salsa.
  • Combine cornmeal, salt, and baking soda in a large bowl. Add milk and eggs; stir until well blended. Pour cornmeal mixture on top of salsa layer and top with remaining shredded Mexican cheese blend.
  • Bake in the preheated oven until browned on top, about 30 minutes.

  • Preheat oven to 425°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add beans, tomatoes, chili powder and Worcestershire sauce; bring to a boil. 2 to 2 2/3 cups of bread flour
3 tablespoons sugar
3 teaspoons instant minced onions
2 teaspoons dill seed
1 teaspoon salt
1/4 teaspoon soda
2 1/4 teaspoons active dry yeast in a jar
1/4 cup water
1 tablespoon real butter
8 ounces (1 cup) creamed cottage cheese, blended smooth.
1 egg

note: use only bread flour and use only active dry yeast. if you substitute, the texture will not be the same.

Steps:

  • 1. EQUIPMENT: You will need a medium size mixing bowl, a thermometer, blender, and an electric mixer.
  • 2. DRY INGREDIENTS: Measure one cup of the flour and put it into a medium size mixing bowl. (you will not use all the flour) Add sugar, onion, dill seed, salt, baking soda and yeast, stir to mix.
  • 3. WET MIXTURE: Blend the cottage cheese until smooth. In a small saucpan, add the water, cottage cheese and butter. Heat while stirring until the thermometer reads 120 degrees. Remove from heat.
  • 4. FIRST RISING: Break the egg into the dry ingredients and beat it with a fork, then add the wet mixture and mix well. Blend with the electric mixer until moist, then beat for 3 minutes at medium speed. Trade your mixer for a wooden spoon and stir in the remaining 1 to 1 2/3 cups of flour by hand to form a soft dough. Leave in the bowl you mixed it in, and cover with a tea towel and place in a warm place to rise. I use my oven with the light on. Let it rise until doubled in size. about 45 to 60 minutes.
  • 5. PREPARE YOUR CASSEROLE DISH FOR BAKING: Choose a 1 1/2 to 2 quart casserole dish and grease it or use Pam spray. Set aside. Pre-heat the oven to 350 degrees.
  • 6. SECOND RISING: After the dough has risen, uncover and punch it down to remove the air bubbles, add as little flour as necessary. Turn the dough into the greased casserole dish, and cover and let rise until doubled in size about 45 minutes, then uncover and place in the pre-heated oven (350 degrees) and bake for 35 to 45 minutes. It sounds hollow inside when tapped lightly. Remove the bread from the casserole dish, and butter the top (you may sprinkle with coarse salt if you wish) and place on a wire rack to cool before slicing. Enjoy!

4 c skim milk
2 tsp vanilla extract

Steps:

  • 1. Place the bread cubes,sausage and cranberries into a lightly greased 3-quart shallow baking dish. Toss to mix evenly.

CHARD, ONION & GRUYèRE PANADE (BREAD CASSEROLE)



Chard, Onion & Gruyère Panade (Bread Casserole) image

This is a delicious, decadent and luscious French "bread casserole" from "The Zuni Café Cookbook" that you will want to make again and again. It's a great use for stale bread and a very forgiving recipe, you can improvise with other greens and cheeses. As with all panades, you may need a little more bread, or have some left over; same with the liquid, depending on the size and shape of your baking container. If you have more time, you can cook this at 250°F, for about 2 hours 45 minutes; the slower the bake, the more unctuous and mellow the results. If you have leftovers, the Zuni Cafe's Chef Judy Rodgers instructs: Warm about 1 tablespoon extra-virgin olive oil in a nonstick skillet over medium heat. Slide in a scoop cold panade and press gently to make an 2-inch-thick patty. Fry gently to make a golden crust, about 3 minutes, then fry the other side. It's also great rewarmed in the microwave. It is actually not difficult to make; the instructions are just very detailed. You can skip the stovetop step and still get great results. Enjoy!

1 1/2 lbs thickly sliced yellow onions, a sweet variety if possible (about 6 cups)
1/2 cup mild-tasting olive oil
6 garlic cloves, thinly sliced
salt
1 lb green swiss chard, thick ribs removed and cut into 1-inch-wide ribbons
water, as needed
10 ounces day-old chewy peasant-style bread, cut into rough 1-inch cubes (8 to 10 cups)
3 -4 cups chicken stock (or another flavourful stock) or 3 -4 cups vegetable stock (or another flavourful stock)
6 ounces gruyere (a combination works well) or 6 ounces another melting cheese, coarsely grated (a combination works well)

Steps:

  • To prepare onions: Place the onions in a deep saucepan (or Dutch oven) and drizzle and toss with oil to coat, about 1/4 cup. Set over medium-high heat and, shimmying the pan occasionally, cook until the bottom layer of onions is slightly golden around the edges, about 3 minutes. Stir and repeat. Once the second layer of onions has colored, reduce heat to low and stir in garlic and a few pinches of salt. Stew, stirring occasionally, until the onions are a pale amber and tender but not mushy, about another 20 minutes. If at any point the onions dry, cover them to trap some moisture.
  • Preheat the oven to 325°F.
  • To prepare chard: Place a few handfuls of leaves in a large saute pan or skillet with a drizzle of oil, a sprinkling of water (if you've just washed the chard, it may have enough on the leaves), and a few pinches of salt. Set the pan over medium heat until the water begins to steam, then reduce the heat and stir and fold leaves until just wilted, 3 to 4 minutes. (Leaves should be uniformly bright green, the white veins pliable.
  • To prepare bread: Toss and massage the cubed bread with a few tablespoons of olive oil, a generous 1/4 cup of the stock and a few pinches of salt, to taste.
  • To prepare panade: Use a flameproof, 3-quart souffle dish or enameled cast-iron Dutch oven. Assemble the panade in layers, starting with a generous smear of onions, followed by a loose mosaic of bread cubes, a second layer of onions, a wrinkled blanket of chard, and a handful of the cheese. Repeat, starting with bread, the onions and so on, until the dish is brimming. Aim for 2 to 3 layers of each component, then make sure the top layer displays a little of everything. Irregularity in the layers makes the final product more interesting and lovely. Drizzle with any remaining olive oil.
  • Bring the remaining 3 3/4 cups stock to a simmer and taste for salt. Add stock slowly, in doses, around the edge of the dish. For a very juicy, soft panade, best served on its own, like a soup or risotto, add stock nearly to the rim; for a firm but succulent panade, nice as a side dish, fill to about 1 inch below the rim. Wait a minute for stock to be absorbed, then add more to return to the desired depth. The panade may rise a little as the bread swells.
  • Set panade over low heat and bring to a simmer; look for bubbles around the edges (heating it here saves at least 30 minutes of oven time).
  • Cover the top of the panade with parchment paper, then very loosely wrap the top and sides with foil. Place a separate sheet of foil under the panade or on the rack below it, to catch drips.
  • Bake until the panade is piping hot and bubbly. It will rise a little, lifting the foil with it. The top should be pale golden in the center and slightly darker on the edges. This usually takes about 1 1/2 hours, but varies according to shape and material of baking dish and oven.
  • Browning and serving: Uncover panade, raise temperature to 375°F, and leave until golden brown on top, 10 to 20 minutes. Slide a knife down the side of the dish and check the consistency of the panade. Beneath the crust, it should be very satiny and it should ooze liquid as you press against it with the blade of the knife. If it seems dry, add a few tablespoons simmering stock and bake for 10 more minutes.

Steps:

  • In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking it into crumbles; drain. In a greased 13x9-in. baking dish, combine bread and sausage., In a large bowl, whisk eggs, milk, cream, vanilla, cinnamon and nutmeg until blended; pour over bread. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. In a small bowl, beat topping ingredients until blended. Drop by tablespoonfuls over casserole., Bake, uncovered, 35-45 minutes or until golden brown and a knife inserted in center comes out clean. Let stand 5-10 minutes before serving.

2 tablespoons sugar
2 packages (1/4 ounce each) quick-rise yeast
1-1/2 teaspoons salt
1/2 teaspoon pepper
5-1/2 cups all-purpose flour
2 cups water
2 tablespoons butter, cubed
3/4 cup plus 2 tablespoons shredded cheddar cheese, divided
1/4 cup finely chopped onion

Steps:

  • In a large bowl, mix sugar, yeast, salt, pepper and 2-1/2 cups flour. In a small saucepan, heat water and butter to 120°-130°; stir into dry ingredients. Stir in 3/4 cup cheese, onion and remaining flour, forming a soft dough. Cover with plastic wrap and let rest 10 minutes., Shape dough into a ball; place in a greased 2-qt. round baking dish. Cover with a kitchen towel; let rise in a warm place until doubled, about 20 minutes. Preheat oven to 350°., Bake 40-45 minutes or until golden brown. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Cool in baking dish 5 minutes before removing to a wire rack to cool., Freeze option: Securely wrap and freeze cooled loaf in heavy-duty foil. 1 package active dry yeast
1 package outdated dry yeast (for flavor) (optional)
1/4 cup warm water (110-115 degrees F)
1 cup large-curd cottage cheese
2 tablespoons sugar
2 -3 tablespoons finely minced onions
2 1/2 cups sifted flour
1 tablespoon butter, melted
1 teaspoon salt
2 -3 teaspoons dill seeds or 2 -3 teaspoons dried dill weed (or a combination)
1/2 teaspoon baking soda
1 egg

Steps:

  • Sprinkle sugar and active and outdated yeast over warm water, and stir to dissolve.
  • Let proof for 10 minutes, until foamy.
  • Heat cottage cheese until lukewarm.
  • Combine in mixing bowl with onion, butter, dill weed and/or seeds, salt, baking soda, egg and yeast mixture.
  • Add flour, a little at a time, to make a stiff batter, beating well after each addition.
  • You will have to use your hands to mix it all together toward the end.
  • Cover, and let rise in a warm place until doubled, 50-60 minutes.
  • Stir down with 25 vigorous strokes.
  • Turn into well-greased 1-1/2 quart round casserole.
  • Cover, and let rise in warm place until doubled in bulk, 30-40 minutes.
  • Bake in a preheated moderate (350 degree F) oven for 40-50 minutes.
  • Cover with foil for the last 15 minutes, if necessary, to prevent excessive browning.
  • Turn out onto a wire rack to cool completely before wrapping.

DILL AND ONION BREAD (AKA DILLY CASSEROLE BREAD)

This is a very old recipe given to me in 1970 by a lady I called "Aunt Verabelle," not related. She was a treasure and I think of her every time I bake this bread. When I bought a bread machine, this was the first recipe I re-formulated to use in the machine vs traditional kneading process, so this is BREAD MACHINE specific....

1/4 c water
1 egg, slightly beaten
1 c cottage cheese, small curd (don't use fatfree)
1 Tbsp butter, melted
2-1/2 c all-purpose flour
2 Tbsp sugar
1 Tbsp dry minced onion
1 Tbsp dill weed
1 tsp dill seed
1 tsp salt
1/4 tsp baking soda
1 pkg dry yeast

Steps:

  • 1. In a large bowl, combine dry ingredients (flour, sugar, onion, dill weed, dill seed, salt, bake soda and yeast). Lightly stir to mix. Set aside.
  • 2. Pour the first four ingredients, (water, egg, cottage cheese and butter), into the bread machine mixing well.
  • 3. ADD the dry ingredients in the large mixing bowl on top of the wet ingredients in the bread machine.
  • 4. Set bread machine for a one-pound loaf, dark crust, Basic White dough. NOTE: If you want a chewier texture to the crust, set French Bread setting instead of Basic White. Push START.
  • 5. When the last alarm rings on the machine to indicate you can stop and remove the mixing paddle, do so at this time. NOTE: At this point, you can choose to turn out the dough, roll/fold into a ball and set inside a medium-sized greased casserole dish for its last rise. SLICE the top of the dough down the center about a one-inch deep. Brush melted butter on top. SPRINKLE with coarse salt and dill weed for added flavor (optional). Cover and let rise in a warm place for about an hour to 90-minutes until at least doubled in size. IF YOU DON'T WANT TO TURN IT OUT, simply remove the paddle and return the dough to the center of the machine and it will finish rising and baking according to your machine settings, IF baking in the machine, when you return the dough to the well center, slice top of dough, brush with melted butter and sprinkle top with coarse salt and dill weed for added flavor (optional).
  • 6. IF baking in oven, bake at 350-degrees for 35-45 minutes. Bread is done when golden brown on top and when bread sounds hollow when touching the top.
  • 7. When baking is complete, turn finished bread out and allow to cool for 15 minutes before serving with softened butter. Store in bread box or lightly cover with plastic wrap. NOTE: some bakers like to brush melted butter on top when the bread comes out of the oven and that's an option. I don't do that because I feel it speeds up the aging process of day old bread.
  • 8. NOTE: This bread doesn't keep well for more than two days. If you have leftovers, you should consider cutting into cubes and toasting to make croutons or running through a mill grinder to make savory bread crumbs for stuffing, meatloaf mix, coating on pork chops or other foods as your imagination takes you.

1 loaf cinnamon-swirl bread
1 (8 ounce) package cream cheese, cut in cubes
1 dozen egg, beaten
3 cups milk
1/3-1/2 cup maple syrup
cinnamon, for dusting

Steps:

  • Preheat oven to 375 degrees.
  • Cube the bread and mix that with the cubed cream cheese.
  • Layer half of this into a 13x9 inch baking dish or 2 quart casserole dish.
  • Mix together the milk and syrup with the eggs and pour half of this mixture over the bread and cheese.
  • Add remaining bread and cheese and pour remaining egg mixture over the top.
  • Dust with cinnamon.
  • Bake for 45 minutes.
  • Serve with extra syrup.

2 cloves garlic, minced
1 ½ cups salsa

1 ¼ cups milk
1 cup polenta
½ cup butter, softened
½ cup corn flour
3 tablespoons egg whites
1 teaspoon baking soda
2 cups shredded Mexican-style Cheddar cheese blend, divided
2 cups salsa

Steps:

  • Heat a large skillet over medium-high heat. Add turkey, onion, and garlic. Cook and stir in the hot skillet until turkey is no longer pink, about 5 minutes. Add 1 1/2 cups salsa, cumin, salt, black pepper, and chili powder. Stir together.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Whisk milk, polenta, butter, corn flour, egg whites, and baking soda together in a bowl. Pour mixture into a 9x13-inch baking pan. Pour cooked ground turkey mixture over corn bread layer.
  • Bake casserole in the preheated oven for 10 minutes. Sprinkle 1 1/2 cups shredded Mexican-style Cheddar cheese blend on top. Continue baking until top is bubbling, 5 minutes more. Let cool for 10 minutes.

This has become a family favorite after a few hits and misses..trying to make something new with ground beef and a few pantry ingredients. This turned out so good;I have served it to company..and have been asked for the recipe many times...so there you have it- your family will love it!

1 lb lean ground beef
1/2 c chopped onion
1 Tbsp worcestershire sauce
1 Tbsp ketchup or chili sauce
6 large eggs
10 oz can condensed french onion soup
2 c milk
1 c shredded swiss cheese
2 tsp dried thyme, crushed between fingers
6 oz pkg. of stove top savory herbs stuffing mix, use dry

Steps:

  • 1. In a large skillet add 1 Tablespoon cooking oil and when pan is hot over medium heat add the ground beef and cook until it begins to brown; add in the 1/2 cup onion, worcestershire sauce and ketchup. Cook until meat and onions are cooked. Remove skillet from heat.
  • 2. Heat oven to 350^. Spray a 9x13- inch casserole dish or 2 quart casserole with cooking spray; set aside.
  • 3. Beat the eggs, soup, milk, 1/2 cup of the cheese and 1 teaspoon of the thyme in a large bowl with a fork. Add the dry stuffing mix and the ground beef mixture.
  • 4. Stir and press the dry stuffing into the milk mixture to coat. Pour the meat/stuffing mixture into the baking dish. Sprinkle with the remaining cheese and thyme.(You can add more cheese ,if desired).Let stand for 15 minutes. Bake for 45 minutes or until a knife inserted in center comes out clean. --- Not 1/2 cup of cooked vegetables can be added to the ground beef mixture,if desired.

SARDINIAN BREAD AND TOMATO CASSEROLE

Number Of Ingredients 7

1 can italian plum tomatoes, preferably san marzano, with their juice, 28 oz
sea salt (i used kosher)
1 pound day old loaf of dry crusty italian bread, cut into 3/4 inch thick slices, about 16
4 tbsp. extra virgin olive oil
1 large yellow onion, sliced, about 2 cups
1/4 cup chopped fresh oregano
2 cups frehly grated pecornio roman cheese

Steps:

  • 1. Chop the tomatoes in a food processor, using on and off pulses. Don't over process or you'll incorporate too much air and the tomatoes will turn pink. Stir in 1 tsp. salt
  • 2. In small pan, bring 2 cups salted water to a boil. Lower bread slices one by one into the boiling water for a second or two, just long enough to wet them. (I found it easier to either spray the bread slices or sprinkle them with water) Place them on a kitchen towel on the counter to drain. Press the moistened bread lightly to remove excess water.
  • 3. In large skillet, heat 3 Tbsp. of the oil over medium heat. Add onion and cook,stirring til golden,a bout 8 minutes. Pour in the tomatoes and bring to a boil.Reduce heat so sauce is simmering and cook til slightly thickened, about 20 minutes. Stir in oregano and cook for 5 minutes more.
  • 4. Preheat oven to 375. Oil an 11 inch oval baking dish or an equivalent baking dish, with remaining 1 Tbsp. oil. Spoon enough of the tomato sauce to coat the bottom and arrange half of the bread slices over the sauce, tearing them and wedging them as needed to make an even layer. Spoon half of the remaining sauce over the bread and sprinkle 1 cup of the cheese over the sauce. Make another layer of the remaining bread slices, tomato sauce and cheese. Bake til casserole is heated through and the cheese is browned, about 25 minutes. Serve hot.
