2 medium onions
2 tablespoons tomato paste
1/3 cup cashew nuts
1 1/2 teaspoons garam masala
1 teaspoon garlic, pulp
1 teaspoon chili powder
2 tablespoons lemon juice
1/4 teaspoon ground turmeric
1 teaspoon salt
1 tablespoon low-fat plain yogurt
2 tablespoons oil
2 tablespoons fresh coriander
1 tablespoon sultana
1 lb boneless skinless chicken, cubed
2 1/2 cups button mushrooms
1 1/4 cups water

Steps:

  • Cut the onions into quarters, place in a food processor or blender and process for about 1 minute.
  • Add the tomato puree, cashew nuts, garam masala, garlic, chili powder, lemon juice, turmeric, salt and yogurt to the processed onions.
  • Process all the spice ingredients in the food processor for a further 1-1 1/5 minutes.
  • In a heavy-based saucepan, heat the oil, lower the heat to medium and pour in the spice mixture from the food processor. Fry for 2 minutes lowering the heat if necessary.
  • When the spice mixture is lightly cooked, add half the chopped fresh coriander, the sultanas and the chicken cubes and continue to stir fry for a further 1 minute.
  • Add the mushrooms, pour in the water and bring to a simmer. Cover the saucepan and cook over a low heat for about 10 minutes.
  • After this time, check that the chicken is cooked through and the sauce is thick. Cook for a little longer if necessary and serve garnished with the remaining fresh coriander.

25g butter
1 onion , halved and finely sliced
4 skinless chicken breasts , cut into chunks
2 tbsp garam masala
3 garlic cloves , crushed
1 tbsp finely grated ginger
500g passata
2 tbsp cashew nut butter
50ml double cream
handful coriander , chopped
cooked rice , to serve
wilted spinach , to serve

Steps:

  • Heat the butter in a large pan and fry the onion over a medium heat for 5 mins until soft. Add the chicken and continue to fry until turning golden brown. Add the garam masala, garlic, ginger and passata. Leave to simmer, uncovered, for 20 mins.
  • Just before serving, stir in the cashew nut butter and cream, season to taste and serve scattered with coriander, and with the cooked rice and wilted spinach on the side.

100g cashew nut butter
2 tbsp low-sodium soy sauce
2 wholewheat egg noodles nests
1 tbsp vegetable oil
2 garlic cloves , finely chopped
1 red chilli , finely chopped (deseeded if you don't like it too hot)
2 chicken breasts , cut into 1cm-thick strips
120g thin-stemmed broccoli , halved
1 carrot , cut into matchsticks
20g unsalted cashew nuts , roughly chopped
4 spring onions , sliced on the diagonal

Steps:

  • In a small bowl, mix together the cashew butter with the soy sauce and 100ml water. Set aside.
  • Cook the noodles following pack instructions for just cooked, then drain and refresh in a bowl of cold water until needed.
  • Heat the oil in a wok or large frying pan over a medium-high heat. Add the garlic and chilli, and fry for 2 mins until softened and aromatic.
  • Add the chicken and broccoli to the wok. Fry, stirring frequently, for 5-6 mins until both are tender. Drain the noodles and add them to the wok along with the carrot. Toss everything together well with a pair of tongs so that the noodles are heated through. Take the pan off the heat and stir through the cashew sauce.
  • Serve immediately, topped with the cashew nuts and spring onions.

60 g ghee or 60 g butter
2 cloves garlic, crushed
2 onions, minced
1 tablespoon tandoori curry paste
1 tablespoon ground coriander
1/2 teaspoon ground nutmeg
750 g boneless chicken, cut into 2 cm cubes
60 g cashews, slightly crushed
1 1/4 cups thickened cream
2 tablespoons coconut milk

Steps:

  • Melt ghee or butter, in a large pan over medium heat.
  • Add garlic& onions and cook, stirring, for 3 mins, or until onions are golden.
  • Stir in curry paste, coriander, and nutmeg.
  • Cook for 2 min, or until fragrant.
  • Add chicken and cook for 5 mins, or until chicken is browned.
  • Add cashwes, cream, and coconut milk.
  • Bring to the boil.
  • Reduce heat.
  • Simmer, stirring occasionally, for 40 mins, or until chicken is tender.
  • Serve with rice.
