With so many layers of flavor and so many delicious textures, this Chinese Chicken Salad with Cashews is a perfectly satisfying warm weather meal!

4 cups diced, cooked chicken ((grilled chicken or a store-bought rotisserie chicken work well))
2 ribs celery, chopped
1 head of romaine lettuce, chopped
2 red bell peppers, seeded and chopped
4 green onions, sliced
1 cup mandarin oranges, drained
1 cup salted cashews
1 cup Chinese chow mein noodles
¼ cup sesame oil
¼ cup olive oil or avocado oil
½ cup fresh orange juice
1 tablespoon rice vinegar
1 tablespoon Dijon mustard
4 teaspoons sugar
1 teaspoon salt
Freshly ground pepper (to taste)

Steps:

  • Add all ingredients to a jar with a tight lid and shake until completely combined. Refrigerate for up to 1 week.
  • In a large bowl, toss together chicken, celery, lettuce, bell peppers, onions, and oranges.
  • Add enough of the dressing to lightly coat. Chill, covered, for up to 2 hours (or serve immediately).
  • When ready to serve, divide evenly between four plates and garnish with cashews and chow mein noodles.

3/4 pound boneless skinless chicken breast, cubed
1/4 cup reduced-sodium teriyaki sauce
2 teaspoons canola oil
8 cups torn mixed salad greens
1 can (11 ounces) mandarin oranges, drained
1 medium carrot, shredded
1/4 cup slivered almonds, toasted
3 tablespoons thinly sliced green onions
DRESSING:
2 tablespoons white vinegar
2 tablespoons olive oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a shallow dish, combine chicken and teriyaki sauce. Cover and refrigerate 1-2 hours. , Drain and discard marinade. In a large nonstick skillet, heat oil over medium-high heat. Add chicken; cook and stir until no longer pink, 5-7 minutes. Refrigerate until chilled., In a large bowl, combine salad greens, chicken, oranges, carrot, almonds and onions. In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Drizzle over salad; toss to coat.

1 ready-roasted chicken
295g can mandarin segment in juice (not syrup)
1 red onion , thinly sliced
1 red pepper , deseeded and cut into chunks
1 fist-sized chunk red cabbage
100g toasted salted cashew
60g watercress , rocket & spinach salad
2 tbsp toasted sesame seed
1 tbsp sesame oil
4 tbsp mandarin juice from the can
2 tbsp rice wine vinegar
½ tsp xanthan gum (if you have it)

Steps:

  • Remove the skin from the chicken and discard, then shred the meat from the bones. Discard the carcass (or freeze for stock or soup another time, see right).
  • Drain the mandarin segments over a bowl to catch the juice, then whisk together with the sesame oil and vinegar. If you're using xanthan gum, put this in a bowl and, using a small sauce whisk, whisk in 1 tsp of the dressing at a time until you have a smooth, runny paste, then whisk in the remaining dressing.
  • Layer the shredded chicken, mandarin segments, red onion, pepper, cabbage, salad leaves and sesame seeds in a big salad bowl or on a platter. Pour over the dressing, toss to combine then serve.

½ cup vegetable oil
¼ cup cider vinegar
¼ cup white sugar
2 teaspoons dried parsley
1 teaspoon salt
1 pinch ground black pepper
½ cup sliced almonds
¼ cup white sugar
1 head red leaf lettuce - rinsed, dried and torn
1 red onion, chopped
1 cup chopped celery
2 (11 ounce) cans mandarin orange segments, drained

Steps:

  • In a jar with a tight fitting lid, combine the oil, vinegar, sugar, parsley, salt and pepper. Cover and shake well. Refrigerate until use.
  • In a medium saucepan over medium low heat, cook and stir the almonds and sugar until the sugar is melted and the almonds are coated. Remove from heat, cool, and break apart. Store at room temperature until ready to serve salad.
  • In a large bowl, toss together the lettuce, celery, oranges, almonds and dressing until evenly coated.

1/2 cup cider vinegar
1/2 cup molasses
1/3 cup canola oil
2 tablespoons minced fresh gingerroot
2 teaspoons reduced-sodium soy sauce
1 teaspoon salt
1/8 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (6 ounces each)
SALAD:
8 ounces fresh baby spinach (about 10 cups)
1 can (11 ounces) mandarin oranges, drained
1 cup shredded red cabbage
2 medium carrots, shredded
3 green onions, thinly sliced
2 cups chow mein noodles
3/4 cup salted cashews, toasted
2 tablespoons sesame seeds, toasted

Steps:

  • In a small bowl, whisk the first 7 ingredients until blended. Pour 3/4 cup marinade into a large shallow dish. Add chicken; turn to coat. Cover and refrigerate at least 3 hours. Cover and refrigerate remaining marinade., Preheat broiler. Drain chicken, discarding marinade in dish. Place chicken in a 15x10x1-in. baking pan. Broil 4-6 in. from heat 4-6 minutes on each side or until a thermometer reads 165°. Cut chicken into strips., Place spinach on a serving platter. Arrange chicken, oranges, cabbage, carrots and green onions on top. Sprinkle with chow mein noodles, cashews and sesame seeds. Stir reserved molasses mixture; drizzle over salad and toss to coat. 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
2 tablespoons olive oil
2 tablespoons butter
⅓ cup hoisin sauce
⅓ cup orange juice
1 (11 ounce) can mandarin oranges, drained
1 tablespoon chopped green onions
¼ cup chopped cashews

Steps:

  • Place flour in a small bowl. Dredge chicken in the flour to lightly coat.
  • Heat olive oil and butter in a medium skillet over medium heat, and saute the chicken breasts until no longer pink and juices run clear. Set aside, and keep warm.
  • Stir hoisin sauce and orange juice into the skillet, and scrape up the browned bits. Mix in mandarin oranges, green onions, and cashews, Return chicken to the skillet. Continue cooking until all ingredients are heated through.
