Steps:

  • Preheat oven to 350°F (175°C).
  • In a large bowl, whisk the eggs until light and fluffy.
  • Add in the Greek yogurt and whisk again until the mixture is smooth and fluffy.
  • Pour in the maple syrup, milk, and vanilla extract. Beat the mixture again until smooth.

MUFFINS
1/2 c plus 1 tbsp all purpose flour
3 Tbsp sugar
1/4 tsp baking powder
1/8 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon, ground
3 Tbsp semisweet chocolate chips, chopped
2 Tbsp vegetable oil
2 Tbsp egg, well beaten
3 Tbsp pineapple, crushed, canned, very well drained
1/2 tsp vanilla
1/3 c carrots, grated
3 Tbsp walnuts, chopped
2-3 Tbsp raisins, or to taste
CREAM CHEESE GLAZE
1 oz cream cheese, room temp
1/2 c confectioner's sugar, sifted
2 tsp pineapple juice (reserved from drained pineapple)

Steps:

  • 1. Preheat oven to 350 degrees. Line 3 cups of jumbo muffin pan (3/4 cup capacity) with paper liners or lightly butter the bottoms of the cups and then rub a little bit of butter around the rim of each cup to help the muffins form a nice rounded top. Set aside. (or 4 to 5 regular size muffin cups)
  • 2. Place flour, sugar, baking powder, baking soda, salt and cinnamon in a bowl and blend to mix the ingredients thoroughly. Sprinkle the chocolate chips over the mixture and blend. Transfer this mixture to a bowl and make a well in the center of the mixture.
  • 3. Place the oil, egg and vanilla in a bow and blend. Mix in the carrots, pineapple, walnuts and raisins. Pour this mixture into the center of the flour mixture and stir just until the dry ingredients are moistened. Don't over mix, please!
  • 4. Spoon the batter into the prepared muffin cups, dividing it evenly. Fill the empty muffin cups with water halfway, which prevents scorching. Bake the muffins approximately 25 minutes or until toothpick inserted in center comes out clean.
  • 5. Cool 5 minutes, carefully remove muffins and water from tin. Cool muffins completely. Drizzle tops with cream cheese glaze, if desired, but they are great without the glaze!
  • 6. For cream cheese glaze, just mix cream cheese, confectioner's sugar and pineapple juice to desired consistency, smooth and creamy.

3 eggs, beaten lightly
1 1/2 cups self raising flour
3/4 cup caster sugar

2 cups firmly packed grated carrots
3/4 cup drained crushed pineapple
50 g butter
1/2 cup cream cheese
2 1/2 cups powdered sugar icing
6 dried apricot halves (and 1 18cm green snake or green coloured icing mix above)

Steps:

  • preheat oven to 170-180 degrees depending on how hot your oven is.
  • grease 6 hole texas muffin pan or a normal 12 muffin pan.
  • mix oil, eggs, flour,sugar, cinnamon in bowl with spoon.
  • stir in carrots and pineapple.
  • pour mixture into muffin pan holes.
  • bake in oven about 30-35 minutes.
  • stand cakes 5 min before turning out onto wire rack.
  • turn cakes so tops are up to cool.
  • make cream cheese icing and mini carrots.
  • spread with icing and place carrots on cake.
  • cream cheese icing.
  • beat butter and cream cheese til light and fluffy.
  • beat in icing sugar gradually.
  • mini carrots.
  • put apricots in a cup of boiling water to cover stand 10 minute.
  • drain apricots dry with paper.
  • cut snake into six 3 cm lengths.
  • place one snake piece at the top of apricot half roll apricot around snake allowing to stick out of the top of the apricot and make several think cuts to look like a leaf.
  • or use green coloured cream cheese icing mix and place at top of apricot on muffin to look like leaf.

Yummy muffins that taste like carrot cake and are filled with pineapple and coconut. The glaze is tangy and goes great with these muffins! Recipe given by a friend. Next time I make them, I will try cutting down the sugar and using applesauce instead of the oil. Please let me know if you try them!

2 teaspoons ground cinnamon

1 cup brown sugar
2/3 cup white sugar
1 cup flaked coconut
2 eggs
1/2 cup vegetable oil
1/2 cup buttermilk
3 carrots, grated
1 (8 ounce) can crushed pineapple in juice
1 tablespoon vanilla extract
1 cup sifted confectioners' sugar
1 teaspoon ground cinnamon
2 tablespoons buttermilk

Steps:

  • Preheat oven to 350°F Lightly grease 2 muffin pans, or use paper liners.
  • In a large bowl, mix together flour, baking powder, 2 teaspoons cinnamon, 1/4 teaspoon nutmeg, allspice and salt. Mix in brown sugar, white sugar and coconut.
  • In a separate bowl, combine eggs, oil, 1/2 cup buttermilk, carrots, pineapple, and vanilla. Make a well in the middle of the flour mixture and add the egg/buttermilk mixture. Mix until batter is moistened.
  • Fill muffin cups 3/4 full.
  • Bake in preheated oven for 20 to 25 minutes, or until the tops spring back when lightly tapped. Allow to cool.
  • In a small bowl, combine confectioners' sugar, 1 teaspoon cinnamon and 2 to 3 tablespoons buttermilk. Mix until smooth, then refrigerate until thickened. Drizzle over cooled muffins.

1/2 cup buttermilk
1/4 cup vegetable oil
2 tablespoons cream cheese, softened
2 eggs
1 cup grated carrots
Dash of nutmeg
2 tablespoons blueberry liquid (reserved from can of blueberries)
Grated peel of 1 lemon
1 cup powdered sugar
1/2 teaspoon vanilla
1 teaspoon heavy whipping cream

Steps:

  • Heat oven to 350° F. Place paper baking cup in each of 15 regular-size muffin cups, or grease with shortening.
  • Drain blueberries from muffin mix in strainer set over bowl, reserving 2 tablespoons liquid for glaze.
  • In large bowl, mix muffin mix, buttermilk, oil, cream cheese and eggs until just combined (batter will be lumpy). Fold in carrots, nutmeg and drained blueberries. Divide batter among muffin cups, filling each three-fourths full.
  • Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from muffin cups.
  • In small bowl, beat Glaze ingredients with whisk until smooth. Drizzle over muffins.

These muffins make a yummy little snack, that are slightly healthy. I use all organic ingredients, to make them that much better for me and my kids. They are really nice topped with cream cheese icing.

2 cups carrots, chopped (or baby carrots)
1/2-3/4 cup applesauce
2 eggs, lightly beaten
1/4 cup oil (I use melted coconut oil, but any vegetable based oil works)
1 1/2 cups whole wheat flour (or any whole grain flour, I use a spelt, kamut, and whole wheat mix)
1/2 cup sugar (or evaporated cane juice)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
1 cup raisins (optional)
1 cup pecans (optional)

Steps:

  • Preheat oven to 350°F.
  • Put carrots and apple sauce in to food processor, mix until it has the consistency of baby food. Set aside.
  • Sift all dry ingredients together.
  • Stir oil, eggs, and carrot mixture together until well blended.
  • Add wet ingredients to dry ingredients, fold gently until blended.
  • Add raisins and nuts mix gently. (Be careful not to over mix, or the muffins will be rubbery).
  • Pour into well greased muffin tins, bake 20-25 minutes or until toothpick come out clean.
  • Cool completely then top with icing if desired.
