Carrot Cake (Cake Mix) image

this is delicious, I started making it with a Duncan Hines carrot cake mix in the 1980's and had to switch to Betty Crocker when Duncan stopped making it. I actually made it for Miss Picky's first birthday and she will be 25 in June. The pineapple and raisins really make it moist and the the chopped pecans add a different texture. Try it with cream cheese frosting.

1 (18 1/2 ounce) package carrot cake mix, betty crocker
1/4 cup water, i usually substitute milk
1/2 cup vegetable oil
4 eggs
1 (8 ounce) can crushed pineapple with juice, undrained
1/2 cup chopped nuts, i always use chopped pecans
1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a bundt pan.
  • I use Bakers Joy spray.
  • Beat cake mix, water (milk), oil, eggs and pineapple on low speed 3 minutes.
  • Stir in nuts and raisins.
  • Pour into prepared pan.
  • Bake for 50-55 minutes or until toothpick comes out clean.
  • Cool in pan 15 minutes.
  • Remove from pan and cool on wire rack.
  • Cool at least 1 hour before frosting.

2 large eggs, lightly beaten
1 (8 ounce) can crushed pineapple (undrained)
1 (8 1/4 ounce) package yellow cake mix (do not use the "pudding added" cake mix for this)
1/3 cup mayonnaise or 1/3 cup salad dressing
1 1/2 teaspoons cinnamon
1 pinch nutmeg
1 cup shedded carrot
1 cup chopped walnuts or 1 cup pecans
cream cheese frosting

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • In a large bowl whisk eggs, then add in all remaining ingredients except the cream cheese frosting; mix to combine well.
  • Transfer to prepared baking pan.
  • Bake for about 30-35 minutes or until cake tests done.
  • Cool completely then frost with cream cheese frosting.

1 (18 ounce) betty crocker carrot cake mix
3 large eggs (or according to cake mix directions)
1/2 cup vegetable oil (or according to cake mix directions)
1 (8 ounce) can crushed pineapple, juice drained and reserved
1 tablespoon reserved pineapple juice
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°.
  • In large mixing bowl place cake mix, eggs, oil and 1 tablespoon reserved pineapple juice, stir well to combine, add drained crushed pineapple and pecans, stir to blend. Batter will be thick and smooth, if it's too stiff, add a little bit more pineapple juice.
  • Place paper muffin liners in muffin tin, divide batter equally between muffin liners.
  • Bake for 25 - 30 minutes, test with a toothpick for doneness.
  • Cool on wire rack.

2/3 cup water
1/2 cup butter, softened
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons gluten-free vanilla extract
3 eggs
1 cup finely shredded carrots or 2 medium carrots
1/4 cup finely chopped pecans or 1/4 cup walnuts
4 ounces cream cheese, softened
2 tablespoons butter
1/2 teaspoon gluten-free vanilla extract
2 cups powdered sugar
1 -3 teaspoon milk
1/4 cup coconut, if desired

Steps:

  • Heat oven to 350°F Grease bottom only of 8- or 9-inch square pan with shortening, or spray with cooking spray.
  • In large bowl, beat cake mix, water, 1/2 cup butter, cinnamon, nutmeg, 2 teaspoons vanilla and eggs on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. With spoon, stir in carrots and pecans. Spread in pan.
  • Bake 36 to 41 minutes for 8-inch pan or 33 to 38 minutes for 9-inch pan or until toothpick comes out clean. Cool completely, about 1 hour.
  • In large bowl, beat cream cheese, 2 tablespoons butter, 1/2 teaspoon vanilla and 1 teaspoon milk with electric mixer on low speed until smooth. A friend of mine wanted carrot cake cookies make with everything I would put in the cake. So I started with a spice cake mix and went from there.

1 box(es) spice cake mix, i use duncan hines
1 can(s) 8 ounce crushed pineapple well drained
1/2 cup(s) raisins
1/2 cup(s) angel flake coconut
1 cup(s) carrots, grated
6 tablespoon(s) butter, melted
2 - eggs
CREAM CHEESE ICING
4 ounce(s) cream cheese
4 tablespoon(s) butter, room temperature
1 tablespoon(s) meringue powder (optional)
2 cup(s) sifted powdered sugar
- cream or milk to thin if needed

Steps:

  • Preheat oven to 350.
  • Combine cake mix, butter and eggs and mix together by hand. Add pineapple, raisins, coconut and carrots mix till combined, Be careful not to over mix the batter. You can also add 1/2 cup chopped pecans the the batter if desired.
  • Drop by spoonful onto parchment lined cookie sheet and bake for 10 to 12 minutes or until light golden brown. Let cool on cooling rack than ice with cream cheese icing.
  • For icing, cream together cream cheese and butter. Add powdered sugar and meringue powder and mix well, add a small amount of cream or milk to thin till spreadable. I beat my icing for 10 minutes with a flat paddle for a light and fluffy icing. I use meringue powder as it gives the icing a light crust making them easier to store.

1 box spice cake mix
1 box white cake mix
Follow box instructions, substituting orange juice for half of the water.
1 teaspoon cinnamon
3/4 c. shredded coconut
2 1/4-2 1/2 cups carrots, grated fine
4 oz. crushed, drained pineapple. (We buy an 8 oz can of crushed pineapple and use about half) put in a strainer to let the excess juice drain out
1 cup chopped pecans.

Steps:

  • Preheat the oven to 325 degrees and prepare three 8 inch cake pans with shortening and a dusting of flour. Line pans with parchment or wax paper. Mix cake mixes together according to box instructions. Then add remaining ingredients. Bake at 325 degrees until cakes spring back when touched in the center. This makes a lot of cake batter. You can bake up and freeze any extra layers, tightly wrapped, or you can half the recipe. If you half the recipe, I would use the spice cake mix rather than the white.
