15 ounces black beans, rinsed and drained
16 ounces black-eyed peas, rinsed and drained
10 ounces Rotel diced tomatoes, not drained (original or hot)
11 ounces canned white shoepeg corn, drained
3 roma tomatoes, seeded and diced
1 green bell pepper, seeded and finely chopped
3 -4 green onions, thinly sliced
3/4 cup KRAFT Zesty Italian Dressing

Steps:

  • Mix all of the ingredients except the chips.
  • Refrigerate.
  • Serve with chips.

Dressing:
2 (15 oz.) cans black-eyed peas, drained and rinsed
1/2 of a sweet bell pepper (yellow, red, or orange), finely chopped
1/2 of a purple onion, finely chopped
1/2 bunch of cilantro, finely chopped
1/4 c. white wine vinegar
1/4 c. canola oil
1/2 tsp. brown sugar
1/4 tsp. salt
1/4 tsp. pepper

Steps:

  • Combine black-eyed peas, bell pepper, onion, and cilantro in a large bowl. In a small bowl, whisk together white wine vinegar, oil, brown sugar, salt, and pepper. Pour dressing mixture over vegetable mixture and toss to coat. This may be served immediately or refrigerated to serve later. If refrigerated, it tastes best if you let it come back to room temperature for serving rather than serving chilled. Serve with tortilla chips, crackers, or baguette slices. NOTES: - I think the vegetables included can be adjusted to personal preference. I may try adding sliced olives and diced fresh tomatoes, which are both included in my former store-bought-go-to version. - If you don't like cilantro, I would think you could substitute chopped fresh parsley just fine. - I recommend sticking with the white wine vinegar rather that substituting other vinegar, as white wine vinegar just has a really nice subtle flavor. With that said, cider vinegar would probably work just fine.

2 (15 ounce) cans black-eyed peas
1/2 cup salad oil
1/4 cup red wine vinegar
1/2 cup onion, thinly sliced
1 garlic clove (more if you wish)
1/2 teaspoon salt
pepper, to taste

Steps:

  • Drain peas well and place in a bowl.
  • In another bowl, blend oil, vinegar, and remaining ingredients. Pour this oil mixture over the peas.
  • Chill for 1 day. Remove garlic and drain to serve.

OVEN-ROASTED CAROLINA BBQ CHICKEN WINGS

No one will guess that these wings are made in the oven. The baking powder in the breading helps crisp up the skin, and then they're drenched in my traditional Carolina BBQ sauce, a mustard-based sauce. The sauce is great on pork too, and you can make it ahead and keep it in the refrigerator for up to 2 weeks.

Nonstick cooking spray, for the baking sheets
1 cup yellow mustard
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
1/3 cup apple cider vinegar
1 tablespoon Worcestershire sauce
2 teaspoons hot sauce
3 pounds whole chicken wings (about 14 wings)
1 cup all-purpose flour
2 teaspoons Miss Brown's House Seasoning, recipe follows
1 teaspoon baking powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Line two rimmed baking sheets with aluminum foil and place a wire rack on top of each. Coat the racks with nonstick cooking spray.
  • Make the Carolina BBQ sauce: Whisk together the mustard, brown sugar, granulated sugar, vinegar, Worcestershire sauce and hot sauce in a medium saucepan over medium heat. Simmer, stirring frequently, until the sauce thickens and the sugars dissolve, about 10 minutes. Set aside half of the sauce for the final basting and for serving.
  • Make the oven-roasted chicken wings: Pat the chicken wings dry with paper towels. Stir together the flour, House Seasoning and baking powder in a bowl. Dredge the chicken wings in the flour mixture and arrange on the wire racks in a single layer. Bake for 30 minutes. Turn, then baste with the Carolina BBQ sauce and bake until the chicken wings are browned and crispy and a thermometer registers 165 degrees F, 15 to 20 minutes longer.
  • Brush the roasted chicken wings with the reserved sauce before serving.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

A co-worker brought this dish to a work potluck, and everyone was absolutely raving! I couldn't get enough of it, so I knew I had to get the recipe :) It is great with tortilla chips as a dip, or over some lettuce for a salad. As a bonus, it's so simple and quick to put together!
