Caution: This recipe includes Almonds; anyone with a nut intolerance should eliminate this product entirely from the recipe. Farm-raised catfish is reported to be naturally low in overall fat and high in protein. Suggested serving with a plain green salad, (olive oil and balsamic vinegar dressing); steamed corn on the cob. A lovely, thick-meat fish, enjoyed frequently by our household. A recipe brochure by DELTA PRIDE, picked up at the supermarket, added to my files and referenced frequently for quick cooking meals.

4 catfish fillets
2 tablespoons low-fat margarine
1/4 cup green pepper, chopped
4 tablespoons onions, chopped
1/4 cup chopped almonds (optional)
1/2 cup fresh breadcrumb
1/4 teaspoon oregano
4 tablespoons fresh lime juice
1 tablespoon coriander or 1 tablespoon parsley (chopped)
1/4 teaspoon salt
2 cups water
2 cloves garlic, crushed
1 bay leaf
1 teaspoon red pepper flakes
lime peel

Steps:

  • Preheat oven to 400 degrees F.
  • Melt margarine in skillet.
  • Add green pepper and 2 tbsp onion.
  • Saute until onion is transparent.
  • Add almonds, (OPTIONAL) bread crumbs, oregano, one tbsp lime juice, coriander (or parsley), and salt.
  • Mix well.
  • Spoon filling down centre of each catfish fillet.
  • Roll up and secure with toothpicks.
  • In shallow baking pan, combine remaining 2 tbsp onion, water, garlic, bay leaf, red pepper and remaining 3 tbsp lime juice.
  • Place catfish in pan.
  • Bake in pre-heated oven for 30-35 minutes, basting occasionally until catfish flakes easily.
  • Remove catfish to serving platter.
  • Granish platter with strips of lime peel.

This is another recipe featured on our local television noon news show. U.S. Farm-Raised Catfish is raised in Alabama, Arkansas, Louisiana, and Mississippi. Although "born" in the South, it's truly the all-American fish and is available nationwide all year long. Its firm texture keeps it from flaking or falling apart, making it ideal for the grill. And the mild, slightly sweet flavor of the American-grown product quickly absorbs the flavors of marinades, spices and Salsas. U.S. Farm-Raised Catfish is delicious, safe, and easy to cook. 2 tablespoons fresh lime juice
1 tablespoon honey
1 cup mango, diced
1 cup papaya, diced
1 tablespoon green onion, minced
1 tablespoon jalapeno pepper, minced
1 teaspoon garlic, finely minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground red pepper (cayenne, to taste)
24 ounces catfish fillets, u.s. farm-raised preferred for this recipe (approx size)
2 teaspoons olive oil

Steps:

  • Salsa:.
  • To make the salsa, stir together the lime juice and honey in a medium bowl. Add the remaining ingredients and stir gently until combined. Set aside.
  • Catfish:.
  • When you are ready to cook the fish, position the rack about 4 inches from the heat source and preheat the grill or broiler. Stir together the garlic, salt, pepper, and red pepper.
  • Brush each fish fillet with olive oil and sprinkle with about 1/2 teaspoon of the spice mixture. Grill or broil the fish for about 6 minutes. Turn and cook for 4 to 6 minutes longer or until the fish is cooked through.
  • Top each serving with about 1/2 cup of the fruit salsa.
