1/4 cup butter, softened or 1/4 cup regular margarine
1 teaspoon rum flavoring
3/4 cup brown sugar, Firmly Packed
1/4 cup unbleached flour
3 large eggs
1 cup walnuts, Coarsely Chopped
12 ounces chocolate chips, Melt & Cool
1 9" unbaked pie shell
2 teaspoons instant coffee powder
walnut halves

Steps:

  • Cream the butter and brown sugar together in a bowl until light and fluffy, using an electric mixer at medium speed.
  • Add the eggs, one at a time, beating well after each addition.
  • Add the cooled chocolate, coffee powder, and rum flavoring, blending well.
  • Stir in the flour and the chopped walnuts and turn into the unbaked pie shell.
  • Arrange the walnut halves in a circle around the edge of the pie.
  • Bake in a preheated 350 degree F. oven for 20-25 minutes or until set around the edge.
  • Cool on a wire rack.

¼ cup butter
¾ cup packed brown sugar
3 eggs
2 cups semi-sweet chocolate chips
2 teaspoons instant coffee granules
1 teaspoon rum flavored extract
¼ cup all-purpose flour
1 cup chopped walnuts
½ cup walnut halves
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). In a microwave-safe bowl, microwave chocolate chips until melted. Stir occasionally until chocolate is smooth.
  • Cream butter or margarine with sugar. Beat in eggs, one at a time. Add melted chocolate, instant coffee, and rum extract. Stir in flour and broken walnuts. Turn filling into pie shell. Top with walnut halves in decorative pattern.
  • Bake at 375 degrees F (190 degrees C) for 25 minutes. Cool.

1/4 c butter
3 eggs
1 (12 oz.) pkg semi-sweet chocolate chips, melted
2 tsp instant coffee
1 c walnuts, broken
1/4 c flour
1/2 c waknuts ( for decoration)
1 ( 9 inch pie shell, unbaked
3/4 c brown sugar
1 tsp rum extract

Steps:

  • 1. Cream butter with sugar; beat in eggs one at a time.
  • 2. Add melted chocolate chips, instant coffee, brown sugar and rum extract.
  • 3. Stir in flour and walnuts; turn into pie shell. Top with the remaining 1/2 cup walnuts and bake at 375 degrees for 25 minutes.
