A stunningly fragrant one-pot meal, this chicken and rice dish came to The Times from Yotam Ottolenghi and Sami Tamimi's smash hit "Jerusalem: A Cookbook." Spiced with cinnamon, cardamom and whole cloves, its aromatic earthiness is balanced by plenty of herbs - dill, parsley and cilantro - for freshness and tang. And caramelized onions and dried barberries (or currants) contribute a gentle sweetness. This is dinner party food that is at once elegant and supremely comforting.

Number Of Ingredients 15

3 tablespoons sugar (40 grams)
2 1/2 tablespoons barberries, or use currants (25 grams)
4 tablespoons olive oil
2 medium onions, thinly sliced (2 cups, or 250 grams)
2 1/4 pounds skin-on, bone-in chicken thighs (1 kilogram), or 1 whole chicken, quartered
Salt and freshly ground black pepper
10 cardamom pods
Rounded 1/4 teaspoon whole cloves
2 long cinnamon sticks, broken in two
1 2/3 cups basmati rice (300 grams)
2 1/4 cups boiling water (550 milliliters)
1 1/2 tablespoons flat-leaf parsley leaves (5 grams), chopped
1/2 cup dill leaves (5 grams), chopped
1/4 cup cilantro leaves (5 grams), chopped
1/3 cup Greek yogurt (100 grams), mixed with 2 tablespoons olive oil (optional)

Steps:

  • Put the sugar and scant 3 tablespoons water in a small saucepan and heat until the sugar dissolves. Remove from the heat, add the barberries, and set aside to soak. If using currants, you do not need to soak them in this way.
  • Meanwhile, heat half the olive oil in a large sauté pan for which you have a lid over medium heat. Add the onion, and cook for 10 to 15 minutes, stirring occasionally, until the onion has turned a deep golden brown. Transfer the onion to a small bowl and wipe the pan clean.
  • Place the chicken in a large mixing bowl and season with 1½ teaspoons each salt and black pepper. Add the remaining olive oil, cardamom, cloves and cinnamon and use your hands to mix everything together well. Heat the frying pan again and place the chicken and spices in it. Sear chicken for 5 minutes on each side and remove from the pan (this is important as it part-cooks the chicken). The spices can stay in the pan, but don't worry if they stick to the chicken. Remove most of the remaining oil as well, leaving just a thin film at the bottom. Add the rice, caramelized onion, 1 teaspoon salt and plenty of black pepper. Drain the barberries and add them as well. Stir well and return the seared chicken to the pan, pushing it into the rice.
  • Pour the boiling water over the rice and chicken, cover the pan, and cook over very low heat for 30 minutes. Take the pan off the heat, remove the lid, quickly place a clean tea towel over the pan, and seal again with the lid. Leave the dish undisturbed for another 10 minutes. Finally, add the herbs and use a fork to stir them in and fluff up the rice. Taste and add more salt and pepper if needed. Serve hot or warm with yogurt mixture if you like.

Simple, comforting, one-pot chicken and rice recipe with chopped veggies, chickpeas, and warm Middle Eastern spices. Ready in just over 30 minutes.

2 tsp ground allspice (more for later)
1 tsp black pepper
3/4 tsp ground green cardamom (more for later)
1/4 tsp ground turmeric (more for later)
6 boneless skinless chicken thighs
Kosher salt
Extra virgin olive oil
1 cup chopped yellow onions, (about 1/2 large onion)
2 carrots, (chopped)
1 cup frozen peas
1 cup cooked chickpeas (or from canned chickpeas, drained and rinsed)
2 cups Basmati rice,
2 cinnamon sticks
1 dry bay leaf
2 cups low-sodium chicken broth, (boiling)

Steps:

  • In a small bowl, mix the spices to make the spice mixture. Set aside for now.
  • Pat chicken thighs dry and cut them into large pieces (I simply cut each in half). Season well with salt, then season with the spice mixture. Work the chicken with clean hands to make sure all the pieces are well-coated with the spice mixture. Set at room temperature for 20 minutes or so (if you have the time).
  • In a large and deep cooking skillet with a lid, heat 3 tbsp extra virgin olive oil over medium-high until shimmering but not smoking. Brown the chicken briefly on both sides. Remove from the skillet and set aside for now.
  • To the same skillet, now add onions, carrots, and frozen peas. Cook for 4 minutes or so, tossing regularly, until tender. Add the chickpeas and rice. Season with salt, 1/2 tsp allspice and 1/4 tsp ground cardamom. Stir to combine.
  • Add the chicken back to the skillet (nestle the pieces in the rice). Add the cinnamon sticks, bay leaf, and chicken broth. Bring to a boil.
  • Turn the heat to low. Cover and cook for 20 minutes or until fully cooked.
  • Remove from the heat, garnish with parsley.

This dish is my ultimate comfort food. It's commonly eaten in winter and during the month of Ramadan for the pre-dawn breakfast, but for me it's a regular at least 2 or 3 times a month. Its always served with doggos (Saudi salsa). (Note: in Saudi the thigh and drumstick is not disjointed and is served as one portion).

1 1/4 kg chicken, with skin on, disjointed and washed
4 cups water
7 green cardamoms (peel the skin slightly so seeds can fall out)
2 teaspoons salt (to taste)
3/4 cup basmati rice
2 cups milk
3 tablespoons ghee
2 pieces gum arabic (mastikah Do not leave it out)

Steps:

  • Boil chicken in the water with cardamoms and salt, until soft and tender (1 hour).
  • Remove chicken to an oven tray.
  • Strain chicken broth into a big bowl and pour back into the cooking pot.
  • Add rice to the broth, taste for salt.
  • Cook rice till extremely soft and mushy.
  • Add milk and simmer for 10 minutes, stirring continually on low heat.
  • Heat ghee and mastikah in a saucepan on the stove till mastikah melts (it would not work in the microwave).
  • Add melted mastikah to the rice and mix well. Switch heat off close pot and rest for 10 minutes.
  • Pop chicken under the grill to redden.
  • Place rice onto serving plate arrange chicken over the rice.
  • Serve with doggos (recipe #110095) and Arabic salad (recipe #90140).

4 tablespoons honey
2 tablespoons sherry wine
1 teaspoon cardamom seed, ground
1 teaspoon peppercorn, ground
6 chicken breasts or 1 whole chicken, cut into parts
2 tablespoons olive oil
1 lemon, thinly sliced
salt and pepper

Steps:

  • If a recipe calls for ground cardamom, it is best to start with whole pods. Break open the pods to release the tiny brown and black cardamom seeds. Use a spice grinder or mortar and pestle to grind the seeds.
  • Preheat oven to 390°F Warm the honey, stir in the sherry, cardamom and peppercorns. Place marinade and chicken in a large bowl, coat chicken with marinade. Cover with plastic wrap and let sit at room temperature for 30 minutes.
  • Heat olive oil in a large frying pan at medium high heat. Sear the chicken, skin side down, until golden.
  • Place lemon slices in a roasting pan. Lay the chicken pieces on top. Brush with the marinade. Season generously with salt and pepper. Place in the oven and bake until done, approximately 15 minutes for breasts, 20 minutes for thighs, wings, and drumsticks. Remove from oven and let rest for 10 minutes before serving. Pour out drippings from the pan into a gravy boat for gravy.

She shared this recipe from her mother, Farida Ayubi, for this fragrant and comforting pot of rice in their cookbook "Parwana: Recipes and Stories From an Afghan Kitchen." In this preparation, the rice is first parboiled and then steamed and scented with cardamom pods and cumin seeds. 2 cups white basmati rice, soaked in cold water for 1 hour
Salt
1 teaspoon green cardamom pods
1 teaspoon cumin seeds
1/2 cup sunflower or grapeseed oil

Steps:

  • In a large pot with a lid, bring 8 1/2 cups water to a boil over high heat. Meanwhile, drain the rice in a large fine-mesh sieve or colander and rinse under cold water until the water runs clear. Add the rice and 1 tablespoon kosher salt (or 1 1/2 teaspoons coarse kosher salt or fine salt) to the boiling water. Boil uncovered, until the grains seem to have doubled in length, 5 to 6 minutes.
  • Meanwhile, in a small saucepan or kettle, bring 1 1/2 cups of water to a boil and keep at a simmer. Place the cardamom pods on a cutting board and lightly crack them with the side of a large knife.
  • Drain the parboiled rice in the sieve or colander and return the rice to the pot. Add the cracked cardamom pods and any seeds that may have popped out, the cumin seeds and 1 tablespoon kosher salt (or 1 1/2 teaspoons coarse kosher salt or fine salt). Mix gently to combine, taking care to not break the rice grains. Drizzle with the oil and the just-boiled water from the saucepan, and stir gently to coat the rice.
  • Cover the pot and cook over high heat until steam escapes from beneath the lid, 3 to 6 minutes. This is a critical step in preparing the rice to avoid overcooking it. Once you see the steam, reduce the heat to low and cook until the rice is tender and all the water is gone, another 20 minutes. Serve immediately.

2/3 cup Greek yogurt
1/2 teaspoon cornstarch
4 chicken breasts, skinless and boneless
1 1/2 teaspoons green cardamom pods
1 tablespoon sunflower oil
1 ounce butter
1/2 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
2/3 cup chicken broth
1 1/2 tablespoons fresh ginger, grated (about 1 1/2 in piece)
2 tablespoons lemon juice
2/3 cup heavy cream
3 ounces ground almonds
salt and pepper
cilantro, sprigs, to garnish

Steps:

  • Mix the yogurt with the cornstarch and set to one side. Cut each of the chicken breasts into 3 or 4 chunky pieces.
  • Lightly crush the cardamom pods so that the green husks split open, then remove the little brownish-black seeds from inside. Grind these into a fine powder with a pestle and mortar.
  • Heat the oil and butter in a flameproof casserole dish, add the chicken and cook over a medium heat until lightly browned all over. Add the turmeric, cinnamon, coriander and ground cardamom seeds and cook for a further minute.
  • Remove the pan from the heat and stir in the broth, grated ginger, lemon juice and the yogurt mixture. Return the pan to the heat, bring to a simmer and leave to cook gently for 15 minutes until the chicken is tender. (You can now set the dish aside until later if you wish).
  • Mix the cream with the ground almonds, stir into the chicken and simmer for 2-3 minutes. Season to taste and serve, garnished with sprigs of cilantro.

2 tablespoons oil, divided
4 boneless skinless chicken breasts or 4 chicken thighs
1 tablespoon butter
1 cup thinly sliced yellow onion
1 clove garlic, crushed
1 -2 teaspoon ground cardamom, to taste
2 tablespoons ground coriander
1 teaspoon ground black pepper
1/4 cup sliced unskinned blanched almond
1 1/2 cups plain yogurt or 1 1/2 cups sour cream

Steps:

  • Preheat oven to 350 degrees.
  • Heat 1 tablespoon of the oil in a sauté pan over medium heat; add the chicken breasts or thighs and brown for about 3 minutes per side until the chicken turns opaque.
  • Remove and place the chicken in an ovenproof casserole dish or Dutch oven.
  • Add the remaining oil, butter, and onion to the sauté pan; sauté until onion is wilted, about 5 minutes.
  • Add the garlic, cardamom, coriander, black pepper and blanched sliced almonds; cook until the nuts are pale gold, about 3 minutes.
  • Transfer the onion mixture to a blender (or food processor, but a blender will work a little better); add the yogurt or sour cream and puree until smooth.
  • Season the sauce with salt to taste and pour over the chicken pieces in the casserole dish.
  • Bake at 350 degrees for 50 minutes, or until the chicken is tender and juices run clear.
  • Garnish with toasted almonds and serve with the sauce and rice.
  • Note: if you've not made this dish before, I recommend starting with 1 teaspoon of cardamom; taste it when you season to taste with salt before pouring over the chicken to bake, and add more cardamom if you like.

4 pieces chicken (breasts are my favourite)
250 ml plain yogurt
2 tablespoons water
2 teaspoons salt
1 inch gingerroot, chopped
3 garlic cloves, chopped
1 teaspoon black peppercorns
6 cardamom pods, the seeds of
1 teaspoon cumin seed
3 teaspoons coriander
1 cinnamon stick
1 teaspoon cayenne pepper
2 tablespoons white wine vinegar
1/4 cup mint leaf

Steps:

  • Put the whole peppercorns, cardamom seeds and cumin in a spice mill and grind them into a fine powder. You can also do this with a mortar and pestle.
  • Put the water in a blender along with the salt, ginger, garlic, cayenne, vinegar and ground spices.
  • Blend to a smooth paste.
  • Put the yogurt in a bowl large enough to hold the chicken.
  • Stir in the spice paste.
  • Add the chicken and make sure all pieces are covered in the marinade.
  • Break the cinnamon stick in two and tuck it in with the chicken.
  • Cover and marinate for at least two hours and as much as overnight.
  • Set the oven to 220 C or 425°F.
  • Bake the chicken in a shallow dish for 30 minutes or until cooked through.
  • The yogurt should have formed a dark brown crust.
  • Sprinkle with mint leaves.
