HEALTHY TURKEY LETTUCE WRAPS



Healthy Turkey Lettuce Wraps image

Number Of Ingredients 12

1¼ lb. fat-free lean ground turkey
1 Tbsp olive oil
1 clove garlic, minced
1/8 tsp. ground ginger
4 green onions, thinly sliced
1 (8 oz) can sliced water chestnuts, drained and coarsely chopped
3 Tbsp hoisin sauce
2 Tbsp lower-sodium soy sauce (green top)
1 Tbsp rice vinegar
2 tsp. roasted red chili paste
Pinch of salt
12 Boston lettuce leaves

Steps:

  • Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add turkey, garlic and ginger to the pan and cook for about 6 minutes or until turkey is browned. Stir to crumble.
  • Combine turkey mixture, onions and chopped water chestnuts in a large bowl, stirring well, and set aside.
  • Meanwhile in a small bowl, whisk together hoisin, soy sauce, rice vinegar and roasted red chili paste and drizzle over the turkey mixture. Toss to coat completely.
  • Add about ¼ cup turkey mixture to each lettuce leaf, serve and enjoy!

I'm not a huge participant in the low-no carb dieting. However, I am always concerned with my calorie intake. I find the easiest way to cut calories, is to cut out unneccessary carbs. One day, I decided to throw out the tortilla and try wrapping my meal in a lettuce leaf. You get the great taste and nutrition of a regular turkey sandwich or wrap, without the extra 200+ calories or added carbs. It's fast, easy, health and tasty!

2 slices of oven roasted turkey breast
2 slices tomatoes
1/2 teaspoon diced red onion
1/4 teaspoon mustard
1/4 teaspoon mayonnaise
salt and pepper

  • Lay the lettuce leaf flat.
  • place turkey slices on first.
  • add red onions.
  • evenly distrbute mayo and mustard.
  • lay tomatoes on top.
  • season with salt and pepper, to taste.
  • tightly roll up the lettuce leaf.

1 head iceberg lettuce (4 outer leaves only)
1/4 pound sliced turkey (no sugar added)
1/4 pound precooked bacon strips (8 slices)
1 tomato, thinly sliced to make 8 slices
1/4 pound sliced Swiss cheese

Steps:

  • Spread about a teaspoon of mayonnaise on the inside of a large single outer leaf of iceberg lettuce. Place leaf on the counter and top with 2 slices of turkey breast, 2 bacon slices, 2 slices of cheese, and 1 to 2 tomato slices. Roll up like a burrito. Close with toothpicks and cut into pinwheels. Repeat to make 4 roll-ups.

1/4 red bell pepper, sliced thinly
1 tablespoon pesto sauce

Steps:

  • Lay the lettuce leaf flat on a plate.
  • Place one slice of turkey.
  • Spread with pesto.
  • Top with 1/2 of the red pepper slices.
  • Roll up.
  • Repeat with second piece of lettuce and turkey.

3 tablespoons hoisin sauce
1 1/2 tablespoons sweet chili sauce
2 teaspoons sesame oil
1 tablespoon sherry wine
2 tablespoons rice vinegar
1/2 lime, juice of
3 tablespoons oyster sauce
1/2-1 lb ground turkey, very lean or 1/2-1 lb veggie crumbles
2 garlic cloves, minced
1/2 tablespoon fresh ginger, finely chopped
12 fresh shiitake mushrooms, chopped
1 red bell pepper, finely diced
1 (8 ounce) can sliced water chestnuts, drained and chopped
3 scallions, sliced
1 head butter lettuce or 1 head bibb lettuce, washed, leaves separated
cilantro (optional)
basil (optional)
lime wedge (optional)

Steps:

  • Mix sauce ingredients together and set aside.
  • Cook meat until done. Add garlic and ginger and saute for about a minute.
  • Add mushrooms, bell pepper, water chestnuts and scallions and continue to stir fry another minute or two.
  • Add sauce to meat and vegetables and toss to coat.
  • Serve meat on a platter, along with lettuce leaves, and optional herbs and lime wedges for squeezing. Enjoy!

It can be made with ground turkey, ground chicken or ground beef. We liked it so much that we've had it a couple nights in a row before. There are never any leftovers!

1 lb ground turkey
2 teaspoons vegetable oil
10 ounces mushrooms, chopped (I don't care for mushrooms) (optional)
4 green onions, chopped
3 garlic cloves, minced
6 ounces water chestnuts, chopped (I don't care for these, either) (optional)
3/4 cup bean sprouts (optional)
1/4 cup soy sauce, plus
1 tablespoon soy sauce
4 teaspoons brown sugar
4 teaspoons rice wine vinegar
4 tablespoons soy sauce
2 1/2 tablespoons rice wine vinegar
4 teaspoons honey
4 teaspoons Dijon mustard or 4 teaspoons spicy mustard
3/4 teaspoon sesame oil
1/4 cup water
1 tablespoon cornstarch (optional)
8 large romaine leaves or 8 large iceberg lettuce leaves, cleaned and dried
3/4 cup carrot, shredded
3/4 cup fresh cilantro, chopped

Steps:

  • Filling:.
  • Brown the turkey in the oil in a large saute pan over medium heat until the turkey is no longer pink. Drain oil off the meat. Return the meat to the pan and add the mushrooms, green onions, garlic, water chestnuts, and bean sprouts, and cook until the mushrooms soften, or 3 to 4 minutes.
  • In a small bowl, mix the soy sauce, brown sugar and vinegar, stirring until the brown sugar is dissolved. Pour into the turkey mixture and cook an additional 1 minute.
  • Drizzling Sauce:.
  • In a small bowl, thoroughly mix the ingredients. This is a very runny sauce. You can either leave it runny or add cornstarch and heat to thicken. Either way, thick or runny, you can add it to the turkey mixture at the end of cooking, or serve with the wraps to be added by individuals being served.
  • Serve:.
  • Place the turkey meat, sauce and vegetables in the center of the lettuce leaf, roll up and eat.

1/2 lb lean ground turkey
1 zucchini
1 (8 ounce) can sliced water chestnuts
1/4 cp. soy sauce
2 tablespoons parmesan cheese
1 head butter lettuce
1/4 cp. salsa
olive oil or grapeseed oil

Steps:

  • finely chop your zucchini and water chestnuts & set aside.
  • wash butter lettuce.
  • combine turkey, parmesan cheese, & salsa in a bowl.
  • once combined, brown turkey slightly.
  • add zucchini and chestnuts, also soy sauce.
  • {it's important to have the salsa and soy sauce in the turkey, not just for flavor but because lean turkey tends to get really dry when cooked}.
  • once meat is cooked thoroughly and veggies are tender remove from heat and let cool just for a few minutes {the hot meat tends to really wilt the lettuce}.
  • And -- that's it! Easy, quick, healthy & yummy! I top mine off with a little more salsa {Los Pastores is my favorite!}.
