Italian-style sausage made with ground pork shoulder, white wine, fennel, fennel pollen, and other spices.

Number Of Ingredients 11

2000 g pork shoulder (about 4.4 lbs)
26 g kosher salt (about 1.5 Tbsp)
4 g black pepper (about 2 tsp, coarsely ground)
4 g sugar (about 1 tsp)
6 g fennel seed (about 4 tsp, coarsely crushed in a mortar)
2 g caraway (about 1 tsp, coarsely crushed in a mortar)
2 g coriander (about 1 tsp, coarsely crushed in a mortar)
1 g fennel pollen (about 1/2 tsp; omit if you don't have it)
1 g oregano (about 1.5 tsp)
1.5 g basil (about 1 heaping tsp)
118 g dry white wine (1/2 cup; cold; or cold drinking water)

Steps:

  • Grind the meat through ⅜" (10 mm) plate.
  • Add the spices, wine or water, and mix well, until the mixture becomes sticky.
  • Stuff into 28 - 36 mm hog casings and tie into 5" (12 cm) links.
  • If not cooking immediately, refrigerate, or vacuum seal and freeze for up to 3 months.
  • Cook before serving. Best pan-fried, grilled or air-fried.

3 pounds pork shoulder or butt, put through medium or coarse grinder
1 tablespoon caraway seeds
3/4 cup dry red wine, like a cabernet sauvignon
1 tablespoon chopped parsley
Salt and coarsely ground black pepper to taste
3 large cloves garlic, minced

Steps:

  • Combine all ingredients, and using sausage stuffer, stuff into casing, twisting and tying at 3- or 4-inch intervals. Prick with fork.
  • Place in boiling water; reduce heat and blanch for 5 minutes after water returns to a boil.
  • To serve, broil or grill. Serve with coarse-grained mustard.

Caraway seeds add a sweetly aromatic note to the onion cream sauce in this German-inspired sausage and mash dinner

1 tsp vegetable oil
8 good-quality, large pork sausages , or Bratwurst
1 tbsp butter
2 onions , halved then thinly sliced
2 tsp caraway seeds
½ firm, round cabbage , cut through the core into 4 wedges
300ml good-quality chicken stock
3 tbsp crème fraîche
mashed potato , to serve
medium-hot mustard , to serve

Steps:

  • Heat the oil in a large frying pan. Add the sausages and fry them over a medium-high heat for 10 mins, turning as they take on colour. Remove from the pan, then wipe out the pan with kitchen paper.
  • Melt the butter in the pan and tip in the onions. Season, cover and cook for 10 mins, stirring a few times during cooking, until the onions are softening and dark golden here and there.
  • Sprinkle the caraway seeds into the onions, fry for 2 mins more, then nestle the cabbage wedges into the pan. Pour in the stock, pop on the lid and simmer for 5 mins. Add the sausages to the pan and cook for 10 mins more until the cabbage is tender but still holding some of its green colour, and the sausages are cooked through. Spoon in the crème fraîche and shake the pan a few times to help it mix into the rich onion sauce below. Serve in wide bowls with mashed potatoes and mustard.

Garlicky Pork Sausage With Red Wine, Prunes and Rosemary image

1/4 cup diced prunes
2 tablespoons dry red wine
1 pound ground pork
2 garlic cloves, minced
1 tablespoon finely chopped shallot
1 1/2 teaspoons kosher salt
1 teaspoon finely ground pepper
1 teaspoon minced fresh rosemary
Finely grated zest of 1 lemon
Olive oil for cooking

Steps:

  • In a large bowl, mash together the prunes and red wine. Add remaining ingredients and mix until well combined. Form sausage mixture into desired shape; small patties are nice for these. Chill for up to 5 days, freeze for up to 3 months or use immediately.
  • Brush sausages with oil and grill or broil them until browned and cooked through. Or fry them in a little oil until well browned all over.
