Fresh ginger adds intrigue to these sweet-and-savory caramelized onions. They're the ideal garnish for Martha's Beef Biryani.

Number Of Ingredients 4

1/4 cup vegetable oil, such as safflower
3 large onions, sliced 1/4 inch thick (about 4 cups)
1 tablespoon peeled and chopped fresh ginger
Kosher salt

Steps:

  • Heat oil in a medium skillet over medium-high. Add onions and cook, stirring occasionally, until onions begin to brown on the edges and soften, about 5 minutes.
  • Reduce heat to low and add ginger to skillet. Continue cooking until onions are very soft and caramelized, 5 to 6 minutes more.
  • Remove from heat and season with salt.

2 teaspoons olive oil
1/4 teaspoon salt
4 cups onions, thinly sliced
1 teaspoon cider vinegar
2 teaspoons fresh gingerroot, slivered pared

Steps:

  • Place medium skillet over medium heat 30 seconds; heat oil 30 seconds more.
  • Add onions and 1/4 cup water; cook, stirring frequently, until just beginning to color, about 12 minutes.
  • Add ginger, salt and 1/4 cup water.
  • Continue cooking, stirring frequently, until onions are sweet and deep brown, about 30 minutes.
  • Just before using, stir in vinegar.
  • SERVING (3 TABLESPOONS) PROVIDES: 1/2 Fat, 2 Vegetables.

4 tablespoons butter
2 tablespoons olive oil
3 large yellow onions
3 large red onions
Kosher salt and freshly ground black pepper
4 sprigs fresh thyme, leaves only

Steps:

  • Heat the butter and olive oil in a heavy-bottomed pot or pan set over medium-high heat. Peel and slice the onions into rounds while the butter is melting and add them to the pot. Toss to coat the onions and season with salt and pepper, to taste. Turn the heat down to medium and do not cover the pot. You want these babies to get brown! Stir occasionally, for about 10 to 15 minutes, then turn the heat to medium-low. Keep stirring (switch to a spatula or wooden spoon to scrape up the browned bits) until the onions are browned and soft. Add the thyme leaves, toss and remove from the heat. These will keep for 5 days in a covered bowl in the refrigerator. Use the leftovers with eggs, on top of a salad, or straight from the bowl with a fork.

1 ½ teaspoons ground black pepper
½ teaspoon paprika
¼ teaspoon cayenne pepper
1 teaspoon minced garlic
1 tablespoon Dijon mustard
1 tablespoon brown sugar
½ teaspoon onion powder
¼ teaspoon salt
1 tablespoon olive oil
2 (6 ounce) salmon fillets
2 tablespoons olive oil
1 ½ tablespoons minced onion

Steps:

  • Combine the black pepper, paprika, cayenne pepper, minced garlic, Dijon mustard, brown sugar, onion powder, and salt in a small bowl. Stir in 1 tablespoon of olive oil to make a paste. Spread the paste all over the salmon fillets, and set aside to marinate at room temperature 30 minutes.
  • Heat the remaining 2 tablespoons of olive oil in a small pan over medium heat. Stir in the onion, and cook until tender and golden brown, about 10 minutes. Heat a separate non-stick skillet over medium-high heat. Cook the salmon fillets in the hot skillet until golden brown on each side, and no longer translucent in the center, about 4 minutes per side. Pour the browned onions and olive oil over the salmon fillets to serve.
